Instant Pot Pork Chops

(2lbs) bone-in well-marbled pork loin center chops ((1.25” inch thick recommended))

unsalted butter

- 12 (253 grams) cremini mushrooms (, sliced)

¾ cup (188 milliliters) unsalted chicken stock

(30 milliliters) regular soy sauce

(215 grams) medium onion (, sliced)

(16 grams) garlic cloves (, minced)

½ teaspoon (0.7 grams) dried thyme

rosemary

Kosher salt

black pepper

(20 grams) all purpose flour

½ cup (125 milliliters) heavy cream

Tenderize Pork Chops: Use back-end of a heavy knife or meat tenderizer to pound both sides of pork chops (make criss-cross patterns as shown in photo). Pat dry pork chops with paper towels. Season one side of pork chops with salt &amp; black pepper just before you place them in Instant Pot.

Brown Pork Chops in Instant Pot: Press &quot;Saute&quot; button to heat up your Instant Pot using &quot;Sauté Normal&quot; function. Wait until it says &quot;HOT&quot; (~8 mins). *Pro Tip: Ensure Instant Pot is as hot as it can be in order to induce a Maillard reaction. Add 2 tbsp unsalted butter (28g) in Instant Pot. Ensure the whole bottom is coated with butter. Place 2 pork chops in Instant Pot with seasoned side facing down. Brown for roughly 2 minutes per side. Lightly season the other side with salt &amp; black pepper. Set aside the browned pork chops, then repeat browning step for the other 2 pork chops.

Optional Flavor-Enhancing Step - Saute Mushrooms: Add in sliced mushrooms, saute until all mushrooms’ moisture have evaporated (~8 mins). *Pro Tip: The mushrooms’ edges should be slightly crisped &amp; browned.

Saute Garlic and Onion: Add in one more tablespoon of unsalted butter if necessary. Add in sliced onions, minced garlic, ½ tsp (0.7g) dried thyme, and ½ tsp (0.9g) dried rosemary. If you’ve skipped the optional mushroom step, add the mushrooms here. Saute for another 2 minutes.

Deglaze: Pour in ¾ cup (188ml) unsalted chicken stock, then deglaze by scrubbing all the flavorful brown bits off the bottom with a wooden spoon. Give it a quick mix.

Pressure Cook Pork Chops: Add in 1 tbsp (15ml) regular soy sauce. Give it a quick mix. *Note: We&#x27;re adding the second tablespoon of soy sauce after pressure cooking. Place the 4 browned pork chops and meat juice back in Instant Pot. *Pro Tip: Make sure the pork chops are partially soaked in the cooking liquid. Close lid, then turn Venting Knob to Sealing position. Pressure Cook at High Pressure for 0 (zero) minute + 8 minutes Natural Release. *Pro Tip: Yes, you can set the Instant Pot to &quot;0 (zero)&quot; minute with the + and - buttons. It will start natural releasing as soon as it reaches high pressure. Carefully open the lid.

Make Mushroom Sauce: While the Instant Pot is natural releasing, mix exactly 2 tbsp (20g) all-purpose flour with ½ cup (125ml) heavy cream. Set aside pork chops. Bring the content to a simmering with &quot;Saute&quot; function. Mix heavy cream mixture into the mushroom sauce in Instant Pot one third at a time until desired thickness.

Season &amp; Serve: Taste and season the mushroom sauce with 1 tbsp (15ml) regular soy sauce. *Note: Use less or more soy sauce accordingly. Place pork chops in Instant Pot. Then you&#039;re ready to serve these deliciously juicy tender Pork Chops. Enjoy~

Instant Pot Pork Chops (Secrets to Juicy Tender Pork Chops!) [Amy + Jacky]

Creamy and tender, these Mushroom Pork Chops are the perfect entree for any day of the week!

Mushroom Pork Chops

pork chops* (or pork steaks)

salt & pepper

panko bread crumbs

bread crumbs

parsley (divided)

garlic powder

eggs (beaten)

oil (or more, for browning)

mushrooms

condensed mushroom soup (10.5 oz each)

Preheat oven to  350°F.

Check pork chops for bits of bone or debris. Season with salt &amp; pepper.

Combine panko bread crumbs, seasoned bread crumbs, 1 1/2 teaspoon of parsley and garlic powder.

Dip pork chops in beaten eggs and then in bread crumb mixture.

Heat 1 tablespoon oil a large skillet and add pork chops. Brown on both sides, about 3 minutes per side. Repeat with remaining pork chops adding more oil if needed.

Place pork chops in a large baking dish. Top with sliced mushrooms and mushroom soup. Cover with foil.

Bake 1 1/2 to 2 hours, pull back the corner and check one of the pork chops. It should be fork tender. If not, bake 20-30 minutes more.

Garnish with parsley and serve over mashed potatoes.

Heat the olive oil in a large pan over medium high heat. Season the pork chops with salt and pepper to taste.

Place the pork chops in the pan. Cook for 6-8 minutes per side or until a meat thermometer registers 145 degrees F.

Remove the pork chops from the pan; cover to keep warm.

Melt the butter in the pan. Add the mushrooms and season with salt and pepper to taste.

Cook the mushrooms for 5-6 minutes or until tender and browned. Add the garlic and cook for 30 seconds.

Add the flour to the pan. Cook for 1 minute, stirring constantly.

Slowly add the beef broth; whisk until smooth. Bring the sauce to a simmer and cook for 2-3 minutes until thickened. Stir in the heavy cream.

Add the pork chops back to the pan and spoon the sauce over the top. Sprinkle with parsley, then serve.

Sprinkle each side of the pork chops with salt and let them sit out for 30 minutes or so. This will give the salt a chance to penetrate through the meat and flavor it. It will also make the pork juicier. A light sprinkling is fine as the gravy also has plenty of flavor.

Cover the pork with saran wrap and pound it with a meat tenderizer. This also helps to make it more tender.

In a large measuring cup with a spout, combine the chicken broth, beef bouillon, Worcestershire sauce, half and half, and seasonings for the gravy. (1 tsp. onion powder, 1 tsp. garlic powder, ½ tsp. mustard powder, 1//2 tsp. thyme, ¼ tsp. sage.) Set aside.

Prep Work

Melt butter over medium-high heat and add the mushrooms. Allow them to brown on each side for 3-4 minutes, undisturbed. Sauté in batches if needed, leaving space around them will allow them to crisp up more. Add a little more butter and/or a splash of olive oil during cooking if needed. Remove once golden brown and set aside on a plate.

Cook the Mushrooms

Pat the pork chops completely dry. Dredge the Pork Chops in the flour mixture just before frying. This gives them a nice outer crust.

Heat olive oil in a large pan over medium-high heat. Sear 2 pork chops at a time for about 2-3 minutes per side, until nice and golden. Optional: Use kitchen tongs to hold up the pork chops and sear the fat around the outside if using bone-in. Add a splash more olive oil or decrease heat slightly as needed during searing. Set pork chops aside.

Clear any black remnants from the pan but leave as much brown “fond” as you can, as this will create a more flavorful sauce.

Sear the Pork Chops

Add the wine and garlic to the same skillet over medium heat. Let it reduce and bubble gently until reduced by half, about 4 minutes. Use a silicone spatula to “clean” the bottom of the pot with the wine as it reduces.

Add 4 tbsp. butter and let it melt. Add 4 tbsp. flour and whisk to combine with the butter. Continue to whisk for about 2 minutes, until you can no longer smell the flour.

Add the chicken broth mixture in small splashes, whisking continuously to incorporate. Don’t add it too quickly or the roux will break and the sauce won’t be as thick.

Bring to a gentle bubble, then reduce to a simmer, stirring continuously.

Optional: Add 2-3 drops of Kitchen Bouquet to darken the color of the gravy.

Make the Gravy

Add the pork chops back to the skillet and spoon the sauce on top.

Cover and let the pork chops cook for 10 minutes. If possible, use kitchen tongs to flip them halfway through.

Add the mushrooms back to the skillet and cover. Turn off heat and let the pork rest in the skillet for 5 minutes. Ensure the middle is 145° prior to serving.

Serve with mashed potatoes and roasted carrots.

Creamy Mushroom Pork Chops

This recipe uses 2 lb of boneless pork chops which usually means 4 pork chops.

Season the pork chops with Italian seasoning, salt and pepper in a large shallow bowl. Sprinkle with 2 tablespoons of flour and dredge both sides of each pork chop in the flour.

Heat an empty large, high-sided skillet (preferably cast-iron) over medium heat for 2 minutes. This allows the skillet to heat through. Add 2 tablespoons of olive oil. Add pork chops. Cook the pork chops on one side on medium heat for 5 minutes, without moving it. This allows the pork chops to sear.

Flip the pork chops over to the other side, reduce heat to low-medium, and cook for about 5 more minutes or longer until it&#39;s cooked through. The meat thermometer should register 145°F in the thickest part of the pork chop. Remove from heat. Remove the cooked pork to a plate.

Sear pork chops

Add 1 tablespoon of olive oil on medium heat to the same cast-iron skillet. Add sliced mushrooms and sprinkle them generously with salt to taste.

Let them cook for about 3 or 5 minutes, without moving them. At this point, the mushrooms will release juices, give them one more stir for 1 minute on low-medium heat.

Remove ⅓ of the cooked mushrooms to a plate, leaving the remaining ⅔ in the skillet.

Cook mushrooms

Add heavy cream, minced garlic, and 1/2 teaspoon paprika to the skillet with mushrooms.

Bring everything to a boil and reduce to low-medium heat. Cook for about 5 or 7 minutes on low-medium heat, with the sauce visibly simmering and bubbling (but not actively boiling) until the sauce acquires a nice color from the mushrooms and reduces a little bit. Remove from heat. Stir in half of the fresh thyme.

Make cream sauce

Add back pork chops to skillet and reheat on low heat for several minutes.

Tip: For presentation purposes, do not spoon the sauce all over the pork chops.  Do it sparingly so that they retain a golden brown seared look in some parts. Remove from heat.

When ready to serve, divide the pork chops and the sauce among the plates.

Top with the reserved ⅓ of mushrooms (for presentation purposes) and the remaining fresh thyme. Season with salt and pepper, if needed.
