Instant Pot Pork Chops

(2lbs) bone-in well-marbled pork loin center chops ((1.25” inch thick recommended))

unsalted butter

- 12 (253 grams) cremini mushrooms (, sliced)

¾ cup (188 milliliters) unsalted chicken stock

(30 milliliters) regular soy sauce

(215 grams) medium onion (, sliced)

(16 grams) garlic cloves (, minced)

½ teaspoon (0.7 grams) dried thyme

rosemary

Kosher salt

black pepper

(20 grams) all purpose flour

½ cup (125 milliliters) heavy cream

Tenderize Pork Chops: Use back-end of a heavy knife or meat tenderizer to pound both sides of pork chops (make criss-cross patterns as shown in photo). Pat dry pork chops with paper towels. Season one side of pork chops with salt & black pepper just before you place them in Instant Pot.

Brown Pork Chops in Instant Pot: Press "Saute" button to heat up your Instant Pot using "Sauté Normal" function. Wait until it says "HOT" (~8 mins). *Pro Tip: Ensure Instant Pot is as hot as it can be in order to induce a Maillard reaction. Add 2 tbsp unsalted butter (28g) in Instant Pot. Ensure the whole bottom is coated with butter. Place 2 pork chops in Instant Pot with seasoned side facing down. Brown for roughly 2 minutes per side. Lightly season the other side with salt & black pepper. Set aside the browned pork chops, then repeat browning step for the other 2 pork chops.

Optional Flavor-Enhancing Step - Saute Mushrooms: Add in sliced mushrooms, saute until all mushrooms’ moisture have evaporated (~8 mins). *Pro Tip: The mushrooms’ edges should be slightly crisped & browned.

Saute Garlic and Onion: Add in one more tablespoon of unsalted butter if necessary. Add in sliced onions, minced garlic, ½ tsp (0.7g) dried thyme, and ½ tsp (0.9g) dried rosemary. If you’ve skipped the optional mushroom step, add the mushrooms here. Saute for another 2 minutes.

Deglaze: Pour in ¾ cup (188ml) unsalted chicken stock, then deglaze by scrubbing all the flavorful brown bits off the bottom with a wooden spoon. Give it a quick mix.

Pressure Cook Pork Chops: Add in 1 tbsp (15ml) regular soy sauce. Give it a quick mix. *Note: We're adding the second tablespoon of soy sauce after pressure cooking. Place the 4 browned pork chops and meat juice back in Instant Pot. *Pro Tip: Make sure the pork chops are partially soaked in the cooking liquid. Close lid, then turn Venting Knob to Sealing position. Pressure Cook at High Pressure for 0 (zero) minute + 8 minutes Natural Release. *Pro Tip: Yes, you can set the Instant Pot to "0 (zero)" minute with the + and - buttons. It will start natural releasing as soon as it reaches high pressure. Carefully open the lid.

Make Mushroom Sauce: While the Instant Pot is natural releasing, mix exactly 2 tbsp (20g) all-purpose flour with ½ cup (125ml) heavy cream. Set aside pork chops. Bring the content to a simmering with "Saute" function. Mix heavy cream mixture into the mushroom sauce in Instant Pot one third at a time until desired thickness.

Season & Serve: Taste and season the mushroom sauce with 1 tbsp (15ml) regular soy sauce. *Note: Use less or more soy sauce accordingly. Place pork chops in Instant Pot. Then you're ready to serve these deliciously juicy tender Pork Chops. Enjoy~

Tips on How to Cook the Best Instant Pot Pork Chops
-Why are My Instapot Pork Chops Tough & Dry?
Many Instant Pot users often ask how long to cook pork chops in Instant Pot to achieve juicy tender pork chops. The #1 reason for tough & dry pork chops is overcooking!

Pork chops are usually quite lean and will become tough once they are overcooked. For the best result, use bone-in pork chops (rather than boneless pork chops) that are well-marbled. The bone will act as a shield for the surrounding meat. A thicker cut of pork chop will work better in the Instant Pot as it is less likely to overcook.

mushrooms (see notes)

pork chops (see notes)

Salt (to taste)

chicken broth

beef bouillon cube

Worcestershire sauce (can sub low sodium soy sauce)

half and half

EACH: onion powder + garlic powder

½ teaspoon EACH: dried thyme + mustard powder

sage

dry white wine (see notes)

Tablespoons Butter

Tablespoons Flour

Kitchen Bouquet (optional)

Sprinkle each side of the pork chops with salt and let them sit out for 30 minutes or so. This will give the salt a chance to penetrate through the meat and flavor it. It will also make the pork juicier. A light sprinkling is fine as the gravy also has plenty of flavor.

Cover the pork with saran wrap and pound it with a meat tenderizer. This also helps to make it more tender.

In a large measuring cup with a spout, combine the chicken broth, beef bouillon, Worcestershire sauce, half and half, and seasonings for the gravy. (1 tsp. onion powder, 1 tsp. garlic powder, ½ tsp. mustard powder, 1//2 tsp. thyme, ¼ tsp. sage.) Set aside.

Prep Work

Melt butter over medium-high heat and add the mushrooms. Allow them to brown on each side for 3-4 minutes, undisturbed. Sauté in batches if needed, leaving space around them will allow them to crisp up more. Add a little more butter and/or a splash of olive oil during cooking if needed. Remove once golden brown and set aside on a plate.

Cook the Mushrooms

Pat the pork chops completely dry. Dredge the Pork Chops in the flour mixture just before frying. This gives them a nice outer crust.

Heat olive oil in a large pan over medium-high heat. Sear 2 pork chops at a time for about 2-3 minutes per side, until nice and golden. Optional: Use kitchen tongs to hold up the pork chops and sear the fat around the outside if using bone-in. Add a splash more olive oil or decrease heat slightly as needed during searing. Set pork chops aside.

Clear any black remnants from the pan but leave as much brown “fond” as you can, as this will create a more flavorful sauce.

Sear the Pork Chops

Add the wine and garlic to the same skillet over medium heat. Let it reduce and bubble gently until reduced by half, about 4 minutes. Use a silicone spatula to “clean” the bottom of the pot with the wine as it reduces.

Add 4 tbsp. butter and let it melt. Add 4 tbsp. flour and whisk to combine with the butter. Continue to whisk for about 2 minutes, until you can no longer smell the flour.

Add the chicken broth mixture in small splashes, whisking continuously to incorporate. Don’t add it too quickly or the roux will break and the sauce won’t be as thick.

Bring to a gentle bubble, then reduce to a simmer, stirring continuously.

Optional: Add 2-3 drops of Kitchen Bouquet to darken the color of the gravy.

Make the Gravy

Add the pork chops back to the skillet and spoon the sauce on top.

Cover and let the pork chops cook for 10 minutes. If possible, use kitchen tongs to flip them halfway through.

Add the mushrooms back to the skillet and cover. Turn off heat and let the pork rest in the skillet for 5 minutes. Ensure the middle is 145° prior to serving.

Serve with mashed potatoes and roasted carrots.

These gourmet-style Mushroom Pork Chops are easy to make on the Stove Top or in the Crock Pot! The pork is perfectly juicy and tender, and is smothered in thick and flavorful mushroom gravy.

Creamy Mushroom Pork Chops is an easy and quick one-pot recipe that takes only 30 minutes to make! Everything is cooked in one pan, and the cleanup is a breeze! The meat is first seared to a perfect golden-brown crust and then combined with a luscious creamy sauce made with garlic and thyme. These delicious pork chops with mushroom sauce are perfect for a quick family dinner!

Creamy Mushroom Pork Chops

pork loin chops (boneless, 4 pork chops)

italian seasoning

salt

black pepper (freshly

flour ((to make it gluten-free, use 1-to-1

oz mushrooms (sliced, I used cremini)

paprika

thyme

This recipe uses 2 lb of boneless pork chops which usually means 4 pork chops.

Season the pork chops with Italian seasoning, salt and pepper in a large shallow bowl. Sprinkle with 2 tablespoons of flour and dredge both sides of each pork chop in the flour.

Heat an empty large, high-sided skillet (preferably cast-iron) over medium heat for 2 minutes. This allows the skillet to heat through. Add 2 tablespoons of olive oil. Add pork chops. Cook the pork chops on one side on medium heat for 5 minutes, without moving it. This allows the pork chops to sear.

Flip the pork chops over to the other side, reduce heat to low-medium, and cook for about 5 more minutes or longer until it's cooked through. The meat thermometer should register 145°F in the thickest part of the pork chop. Remove from heat. Remove the cooked pork to a plate.

Sear pork chops

Add 1 tablespoon of olive oil on medium heat to the same cast-iron skillet. Add sliced mushrooms and sprinkle them generously with salt to taste.

Let them cook for about 3 or 5 minutes, without moving them. At this point, the mushrooms will release juices, give them one more stir for 1 minute on low-medium heat.

Remove ⅓ of the cooked mushrooms to a plate, leaving the remaining ⅔ in the skillet.

Cook mushrooms

Add heavy cream, minced garlic, and 1/2 teaspoon paprika to the skillet with mushrooms.

Bring everything to a boil and reduce to low-medium heat. Cook for about 5 or 7 minutes on low-medium heat, with the sauce visibly simmering and bubbling (but not actively boiling) until the sauce acquires a nice color from the mushrooms and reduces a little bit. Remove from heat. Stir in half of the fresh thyme.

Make cream sauce

Add back pork chops to skillet and reheat on low heat for several minutes.

Tip: For presentation purposes, do not spoon the sauce all over the pork chops. Do it sparingly so that they retain a golden brown seared look in some parts. Remove from heat.

When ready to serve, divide the pork chops and the sauce among the plates.

Top with the reserved ⅓ of mushrooms (for presentation purposes) and the remaining fresh thyme. Season with salt and pepper, if needed.

One-Pan Smothered Pork Chops with creamy mushroom, bacon and fresh thyme sauce. Use boneless pork loin chops. Everything is cooked in one large skillet. Easy recipe. Minimal cleanup. Low carb, high fat, KETO friendly, gluten free recipe.

Bacon and Mushroom Smothered Pork Chops

bacon (, uncooked)

pork loin chops (, boneless (3 or 4 pork chops, depending on size))

oz mushrooms (, sliced)

garlic (, minced)

flour flour flour

Chop bacon into smaller bites. In a large skillet, cook on medium heat until the bacon is cooked. Remove bacon from the pan to a plate, leaving the fat in.

Season pork chops with salt and pepper. In the same pan, on high-medium heat, cook pork chops for 4 minutes on each side in bacon fat, until nicely seared. Reduce heat to medium midway through cooking. Remove the pork chops to a plate from the pan.

Add sliced mushrooms and minced garlic to the same pan. If needed, add 1 tablespoon olive oil. Season with salt. Sprinkle with fresh thyme leaves. Cook on medium heat for about 5 minutes, stirring, until mushrooms soften and release juices. Sprinkle 2 tablespoons of flour all over the mushrooms, and stir the flour in on medium heat.

Add chicken broth and raise the heat to bring to boil, constantly stirring. You should have a smooth slurry from the flour and the chicken broth. Add heavy cream and stir it in while boiling until everything is smooth. Then reduce heat to low.

Add back the pork chops and the bacon. Cook on low heat, covered, until the pork chops are cooked through.

To serve, top pork chops with mushroom and bacon mixture and with more fresh thyme leaves.

Love your recipes for their simplicity in prep & healthy ingredients. (I’ve made the colorful Christmas salad several times & it was a hit.) The rich gravy/sauce for these pork chops could be used for so many dishes. I used low sodium cream of mushroom soup, portobello mushrooms, & smoked applewood bacon. It was delicious!

Excellent recipe! I doubled the sauce ingredients and sautéed onions with the garlic and mushrooms. Rave reviews from all! Thank you for sharing!

I’ve made this 2 times; delicious! My only tweak is to add some red wine while the chops are reheating. Gives a nice color and a bridge to the wine we are drinking with it.

I made this today with 2 thick pork chops. Kept it keto and put about 1/2 teaspoon xantham gum after I finished cooking the chops in the broth. Very delicious!

I don't go around posting rave reviews for every blogger, and it annoys me when some people appear to delete all bad reviews...but I am here to say that my husband and I genuinely LOVED this recipe! I had to use powdered thyme and it was still amazing.

If served with asparagus or spinach how many small chops can you eat on keto?

Delicious. Husband and I both enjoyed this recipe. I had to use beef broth but it worked. Next time I will use the chicken broth. Thank you.
