I had to use the asparagus in my garden, so I put in that, some fiddle ferns, and some broccoli rabe, which is also growing too fast. I also prefer white pepper; it gives it just a little more zing.

Was a great recipe and I definitely prefer to do it with the wine, it just adds some more flavor. I also didn’t use onions and peas and it came out a lot better in my opinion, overly this was a wonderful and delicious meal and it would make sense that it was on delish.com, so I would definitely recommend this to anyone who hasn’t yet tried it!

You'll want to make this mushroom risotto recipe again and again! It's irresistibly creamy, flavored with wine and Parmesan cheese. 

Creamy Mushroom Risotto

yellow onion

mushrooms:

Kosher salt

salted butter, divided

garlic powder

white arborio rice

dry white wine,

Parmesan cheese

For serving: Zest thyme

Heat the broth

Make the mushroom broth (our preferred method for best flavor) and start the 15 minute simmer. OR combine 1 quart vegetable broth, 4 cups water, and 1 teaspoon kosher salt in a saucepan and place it over low heat. The homemade broth only adds a few minutes to the cook time, so we highly recommend it! Simmer it while you complete Step 2, 3 and 4.

Cut the vegetables

Finely mince the onion, then place it in a bowl and reserve. Slice the mushrooms (we used a mix of baby bella and baby shiitake).

Saute the mushrooms

Add 1 tablespoon of the butter in a large skillet over medium high heat. Add the mushrooms and cook until browned, stirring occasionally: about 5 to 7 minutes depending on mushrooms. Stir in 1/4 teaspoon salt, then remove from the pan and set aside.

Start the risotto

In the same skillet, heat the olive oil and the remaining 2 tablespoons butter over medium heat. Add the minced onion and cook for about 2 minutes until tender. Add the garlic powder and rice and cook, stirring occasionally, about 2 minutes until the rice starts to turn light brown. Stir in the wine and cook until the liquid is fully absorbed, about 2 minutes.

Add the broth

Add two ladles of the hot broth to the risotto. Cook, stirring occasionally until the liquid is fully absorbed, then add two more ladles of both. Cook in this same manner for about 12 minutes, adding two ladles and stirring. Then taste a grain of rice. If it’s creamy but still al dente in the center, you’re ready for the final step! If not, continue to cook and add broth for a few minutes more. (You may have some broth left over: save it for reheating leftovers.)

Finish the risotto

When the rice is al dente, reduce the heat to low. Add two more ladles of broth, the Parmesan cheese and a few grinds of black pepper. Stir vigorously for 1 to 2 minutes until you’ve got a thick and creamy risotto. Then stir in the sautéed mushrooms. Taste and add additional kosher salt if desired. Serve topped with lemon zest, Parmesan shavings, fresh thyme, and black pepper.

Storage info

Flavor is best day of. You can store leftovers refrigerated for up to 3 days, but the texture will become less creamy when chilled. Reheat on the stovetop and add a little extra broth and Parmesan cheese, and a few pinches salt to taste. (See Make Ahead section above for tips.)

I love to cook and have been for years, but using your site over the past 6 months has had an effect on me. You gained my trust with crazy simple and great tasting recipes, and (eventually), convinced me that I could tackle a risotto. 

Not sure why, but I’ve had Arborio rice in my pantry unopened for years and I didn’t have the confidence to pull it out. Something about a really good risotto has always dogged me as a recipe I may not be able to pull off. Made this, and it was awesome. Started with the mushroom broth, using white, cremini, and portobellos (I added a bunch of rosemary and thyme into this to simmer off with the mushrooms). Then made the risotto with cremini and portobello’s again. This turned out so good, my three teenagers couldn’t get enough of it (we have two Saint Bernards, they were fans too). 

Great dish and should have commented way sooner on this site. Love you guys, keep up the great work!

This mushroom risotto recipe is a delicious, elegant vegetarian main dish! It&#39;s rich and creamy, made with white wine, fresh herbs, and Parmesan cheese*.

mushrooms

sea salt (plus more to taste)

onion

Arborio rice (rinsed)

dry white wine

vegetable broth

pecorino

parsley (for garnish)

Heat 2 tablespoons of the olive oil in a Dutch oven or large, deep skillet over medium heat. Add the mushrooms, ½ teaspoon of the salt, and several grinds of pepper and toss to coat. Cook, stirring only occasionally, for 8 minutes, or until soft and browned. Remove from the pan and set aside. Work in batches if necessary.

Wipe out the pan and return it to the heat. Add the remaining 2 tablespoons olive oil, the onion, and the remaining ¼ teaspoon sea salt. Cook, stirring occasionally, for 5 to 8 minutes, or until softened. Stir in the garlic, thyme, and rice. Let cook for 1 minute, then add the wine. Stir and cook for 1 to 3 minutes, or until the wine cooks down.

Add the broth ¾ cup at a time, stirring constantly and allowing each addition of broth to be absorbed before adding the next. With the final addition of broth, stir two-thirds of the sautéed mushrooms into the risotto. Cook until the risotto is creamy and the rice has a slight al dente bite. Stir in the cheese and season to taste.

Top with the remaining sautéed mushrooms, garnish with parsley, and serve with more grated cheese, if desired.

Bring the stock up to just below a simmer in a saucepan. 

Dice up your onions, crush two cloves of garlic, and then finely chop your remaining three cloves of garlic.

Tear your oyster mushrooms into small pieces. Add half of your butter to a frying pan with a little oil until it begins to foam. Fry off your mushrooms until they're golden, this should take about 10 mins, then add in your 2 cloves of crushed garlic.

Drain off the mushrooms, saving the oil/butter mixture. In the same pan, add your diced onion. Cook until they start to become golden, for about 5 mins. Next, add your 3 finely chopped cloves of garlic.

When the garlic has started to sweat for 2 mins add your risotto rice.

The idea is to slightly toast the rice, so when you drag your spoon across the bottom of the pan the rice should feel like it’s slightly sticking to the pan. This should take roughly 3 mins on a gentle heat.

Add your stock ladle by ladle until the risotto is al dente, this should take about 15 mins. Add your butter and 50g grated pecorino cheese and leave to rest for 10 mins.

Save a little stock so that you can adjust the consistency of your risotto if needed.

Meanwhile, separate your egg yolks and finely slice your raw chestnut mushrooms. 

Plate up your risotto with your fresh egg yolks, sliced chestnut mushrooms, a generous amount of fresh black pepper, and more cheese. Enjoy.

Making Mushroom Risotto is easier than you think! This easy risotto recipe is packed full of flavor and is the perfect side dish for most chicken, beef, or pork main dishes!

Easy Mushroom Risotto Recipe

yellow onion, diced (see my quick dice tutorial here)

oz baby bella mushrooms, sliced

oz beef broth (room temperature)

Parmesan cheese (optional)

In a medium heavy saucepan, heat the butter and oil on medium-high heat.

Add onions and mushrooms, saute until onions are translucent.

Add the arborio rice and cook one minute while stirring constantly.

Add 2 cups of beef broth, or enough to just cover the rice and vegetables. Reduce heat to medium and simmer, stirring often.

As the broth evaporates continue to add more, one cup at a time so that the broth level is always just covering the rice.

Continue to cook for 20-25 minutes until the rice is al dente-it may not require the full 32 oz of broth.

Remove from heat, allow to rest 5 minutes then serve topped with parsley and parmesan.

Japanese Style Risotto with Seared Salmon

olive oil (divided)

shiitakes

soy sauce

brown onion (finely chopped)

celery (finely diced)

garlic (minced)

rice (like sushi rice

dry white wine (or sake)

chicken broth

tbsp white miso paste

black pepper (for serving)

chives (for serving)

sesame seeds (for serving)

brown sugar

salmon fillets

unsalted butter

seasoning

We start by marinating the salmon fillets. In a shallow dish, combine soy sauce, white wine and brown sugar. Add salmon fillets, coat both sides. Set aside to marinate.

In the meantime, tear the shiitakes into small pieces, finely dice the celery stalk, mince the garlic and finely chop the onion.

sautéing

Heat 1 tablespoon oil over high in a heavy bottomed pot or skillet. Add shiitakes and cook until they release their moisture. Add 1 tablespoon oil and cook until they start to brown. Stir in soy sauce and cook for 1 minute more. Remove from skillet.

cooking

Reduce heat to medium low and add 1 tablespoon oil. Then add the celery, onion and garlic. Cook for 2 minutes until fragrant. Add rice and toast for 1 minute. Deglaze with white wine, simmer for 2 minutes while scraping up the brown bits from the bottom of the skillet using a wooden spoon.

Add 2 ladles chicken broth at a time, stirring frequently, until the broth has been almost completely absorbed before adding the next 2 ladles. Cook until the rice is almost al dente, about 15 minutes. It&#39;s possible that you don&#39;t need to use up all of the broth. Stir in shiitakes. Dissolve miso with 2 tablespoons hot broth and add to risotto. Simmer about 5 minutes until the risotto is ready, add more broth if needed.

In the meantime, prepare the salmon. Heat oil and butter over medium high in a nonstick skillet. Add salmon and sear 4 minutes per side.

serving

Serve salmon over risotto, top with black pepper, chives and sesame seeds. Enjoy!

This was incredible. I made it for my mom tonight and didn’t make any changes at all to the recipe. The risotto took around 45 minutes. She declared it “the best thing I’ve ever made”.

This was absolutely fabulous! Made it with crimini as that’s what I had on hand. Seared the salmon in a hot pan and it was delicious. Served with some sautéed green beans with sesame oil and seeds on top of all. Thank you!

Great week night meal!  Easy to make, simple ingredients and loved by my whole family!  Second time ai make this…this recipe is a keeper😋

I love the ingredients in this dish. I made the mistake of forgetting to remove the mushrooms and so needed a couple more cups of broth. My biggest struggle is with searing the salmon. I hear its best to make sure your pan is nice and hot (med-high) and I had 5-6 oz portions. I did this and after 2 minutes when I flipped the salmon it was burnt. I turned it down and then took it off after a few minutes and it was raw on the inside. I don't know what I am doing wrong? The salmon had been out at room temp marinading for about a half hour. Any suggestions?

Second time making this tonight and and was delicious. Used Crimini mushrooms instead of shiitake. Easy to make but labour intensive as all risottos are. Impressive enough for guests.

I made this recipe tonight. My husband loved it! I substituted gluten free tamari for the soy sauce. Used Lundberg Arborio rice. It takes a little longer to cook. I marinated the salmon as directed , but opted to put it in the oven instead of pan frying. It was skin on and I didn’t want to risk it sticking to a pan, as I don’t have non stick. I used parchment paper with oil and baked it at 350. Came out fine. I served it with some baby bok Choy that I cut at the base to separate, washed and sautéed with oil, garlic, a splash of leftover chicken broth, a splash of tamari and a squirt of sriracha. I really enjoyed the shiitake risotto. Would make again. Thanks for the idea!

It was ok. Salmon was not very flavorful so we made an additional soy based sauce for it. The rice was ok but this is was not a “flavor bomb” as described in the post.

There are few things as indulgent and delicious as a bowl full of creamy, luscious risotto flavoured with fresh black truffles and exotic mushrooms.

onion (finely chopped)

garlic (thinly sliced)

1½ lb (750 grams) mushrooms (sliced)

lb (500 grams) Arborio rice

herbs

white wine

chicken/vegetable stock

salt & pepper

lemon juice

tsp truffle oil (optional)

parsley (to garnish)

To make the risotto, sauté the onion in the olive oil in a large skillet or deep Dutch oven set over medium heat.

When the onion is soft, add the garlic and fry for another 20 seconds or so then add the mushrooms. Fry until the mushrooms are golden brown then add the rice.

Stir to coat the rice in the aromatics then add the wine and herbs. Allow the wine to reduce then stir in the stock, ladle by ladle. Allow the rice to absorb the stock before adding more and stir continuously. It is this continuous stirring that creates the creaminess risotto is known for.

When the risotto has absorbed approximately half of the liquid, start tasting it regularly as a good risotto can quickly be ruined by over cooking. Your risotto might also not need all the stock or it might need more, it all depends on the rice's absorbency.

When the risotto is cooked to your preference, stir in the butter and Parmesan and season to taste with lemon, salt and pepper. Add the truffle oil, if using.

Garnish with fresh parsley then serve with more parmesan cheese.

It is the first time I cooked fresh truffles and followed your recipe , super delicious ?, now we are addicted and as you said it is a must try/ cook  at least once , we’ve made plans   to buy real truffles and cook once a month .In addition to your recipe I only added a bit of cooking cream and sour cream .

Not that I could afford a truffle, any colour, but the word "punnet" totally drove me right off the ledge! LOL Have a little French, but never heard that word before in thousands of recipes! LOL. i.e small pack? Gave it a 3 star, only because i will never be able to make it. Cheers
