This healthy mushroom stroganoff made with shiitake, baby portabella, and cremini mushrooms and noodles in a light creamy sauce is a quick and easy meal, perfect for Meatless Mondays!

Mushroom Stroganoff

butter

onion

tbsp unbleached all-purpose flour

vegetable

Worcestershire sauce

tomato paste

oz sliced white mushrooms

oz sliced Cremini or baby Bella mushrooms

3.5 oz Shiitake mushrooms

thyme

salt and pepper

tbsp white wine

sour cream

oz uncooked noodles (No-Yolk noodles)

tbsp minced fresh flat-leaf parsley

Cook noodles in a pot of salted water according to package directions, I like to under-cook them a bit so I can mix it with the sauce and let it finish cooking.

Meanwhile, while the water starts to boil for the noodles, heat a large nonstick skillet over medium-high heat.

Melt butter over medium heat and add onions to the pan. Cook 2 - 3 minutes over medium-low heat. Add flour; stir with a wooden spoon for 30 seconds.

Gradually add broth, Worcestershire sauce, and tomato paste, stirring constantly.

Add mushrooms, thyme, salt and pepper; stir and cook 4-5 minutes or until thickened and bubbly, stirring constantly.

Add wine; bring to a boil, reduce heat, and simmer 4 minutes. Remove from heat; let stand 30 seconds.

Stir in sour cream; add noodles, mix well and garnish with parsley if desired.

Recipe video above. An incredible way to use mushrooms in a meal - in a mushroom pasta! The tastiness of this pasta lies in the mushrooms you use because it's all about the mushrooms. This pasta is made the proper Italian way so even though it's only made with 6 ingredients, it's saucy and juicy and so incredibly tasty!

Mushroom Pasta

/ 7 oz short pasta

160 grams/6 oz long pasta

/ 14 oz mushrooms

/ 3 tbsp unsalted butter (, separated)

olive oil

garlic (, finely minced)

freshly grated parmesan cheese ((or 1/4 cup store bought grated))

Parsley (, finely chopped)

Parmesan cheese (, grated)

Bring a large pot of salted water to the boil. Add the pasta into the pot when you start cooking the mushrooms.

Cook pasta per packet instructions minus 1 minute. RESERVE 1 mugful of pasta cooking liquid, then drain pasta.

Pasta

Melt half butter and all oil in a large skillet over heat.

Add mushrooms and cook until water has leeched then evaporated, and the mushrooms start to turn golden around edges  - around 5 minutes.

Halfway through cooking, add salt &amp; pepper.

Add garlic and remaining butter, cook for 2 minutes until mushrooms and garlic are golden.

Add pasta, about 3/4 cup of reserved pasta water and parmesan. Toss gently or until water reduces and thickens into a saucy glaze that coats the pasta. If the pasta dries out, add more pasta water.

Taste and add more salt and pepper if needed.

Remove from stove and serve immediately, garnished with fresh parsley and parmesan cheese.

Mushrooms

Easy to make spaghetti recipe thats ready in just 20 minutes and made with garlic , mushrooms, cheese and herbs.

Easy Mushroom Garlic Spaghetti

oz spaghetti (whole wheat

cremini mushrooms (sliced)

garlic

Kosher salt and ground pepper (to taste)

Pecorino Romano cheese (plus more for serving)

parsley leaves

Cook the pasta in salted water according to package directions. Once time is up, reserve 2/3 cup of the pasta water then drain.

Meanwhile, heat the oil in a large skillet over medium heat. Add the sliced mushrooms and cook until tender and browned 5-7 minutes. Stir in the garlic and season with a pinch of salt and pepper; cook for 1 minute more to allow the garlic to release its fragrance.

While the pan is still on heat, add the drained pasta to the skillet together with the shredded cheese and reserved pasta water.

Use a pair of tongs to toss well until the sauce forms and coats the pasta.

Stir in the chopped parsley. Serve immediately and enjoy!

Creamy Garlic Herb Mushroom Spaghetti

whole wheat pasta

butter, divided

mushrooms,

flour

herbes de provence

milk

water, broth, milk or cream (optional)

parsley

Cook the pasta according to package directions. Set aside and toss with a little oil to prevent sticking.

Melt 2 tablespoons of butter over medium high heat. Add one clove of the garlic and saute for a minute until fragrant. Add the mushrooms and sauté for 5-10 minutes, until golden brown and softened. Set aside.

Sauce

Add the remaining 2 tablespoons of butter to the pan and melt again over medium high heat. Add the garlic and saute for a minute until fragrant. Add the flour and herbes de provence. Stir fry for a minute to cook out the flour taste. Add the milk slowly, whisking to incorporate. Let the mixture simmer until thickened. Season with salt and pepper.

Assemble

Toss the sauce, pasta, and mushrooms together. Add the olive oil and water as needed to keep the sauce from getting too thick. Stir in the parsley just before serving.

Coffee Rich coffee whitener is completely dairy-free.   It is a kosher substitute for cream when used full strength and for whole milk  when mixed with water in a 1:1 ratio.   There are other brands, but a lactose intolerant person can be assured that any product certified kosher - parve is totally dairy-free.

I made a milk-free version of your dish, using cashew milk, on Friday and it was absolutely delicious!!! I blended up cashew nuts and topped that up with water and blended again, at a ratio of 1 part nuts to 6 parts water.
I did use butter, but I am sure for the frying part and you could use olive oil or coconut oil and again for the sauce-part at the beginning. I also added a bit of nutmeg to the sauce.

And I should have made more because I was foolish to think that a quarter if the four serving would be enough for me =P It was just so good =) Thank you for the recipe, Lindsay!

I found another place to eat <a href="https://nightcafe.in/" rel="nofollow">tasty pastas</a> though this was very nice, always good to try out varieties.

I used cashew milk and vegetable broth. It took a bit longer to thicken but tasted great! I did add extra garlic afterwards because I LOVE garlic

Tip: you probably don't need any olive oil at all. Overall a really good recipe other than the excess olive oil!

Pretty much followed the recipe to the T; the exceptions being not adding in the extra liquid at the end, and instead splashing the mushrooms in their saute phase with some sherry. Very nice. 🤤

What a delicious sounding dish, and also a very good looking one, as well.  My family and I always prefer to use whole wheat pasta, and we also all love every kind  of mushroom.  Can you suggest a (type of) mushroom which will give us a lot of that very 'earthy' flavor in this dish?  In my opinion, plain old 'Button Mushrooms' or 'Crimini Mushrooms' just won't do it.  What do you think about using "Shitake", "Porcini", or "Morrell" mushrooms?  Do you think they'd have a bit more of that 'earthy' flavor, since that's what I'm looking for?  I'll definitely make this dish very soon, but I'll await your reply with regard to the choice of mushrooms.
     BTW, your (baby) "Sage" is absolutely adorable!!  My family and I also love animals, and we've rescued several kitties from our local"Humane Society".  We also took in a few strays who ended up on our doorstep.... starving and homeless.  They actually ended up being the most loving and wonderful pets which we've ever had.  Please dear folks, adopt a pet if you possibly can!  They are very grateful to finally have a good and loving home.  Those poor creatures have no voice of their own, but we must speak for them, and very loudly!
