I set out to make a great tasting grilled portobello mushroom burger that even a meat lover would love. The mushrooms are marinated then grilled and topped with melted Swiss Cheese, grilled red onion, tomatoes, spinach, and avocado – yum!!

The Best Grilled Portobello Mushroom Burger

portobello mushroom caps

tbsp balsamic vinegar

soy sauce

olive oil

rosemary

1-1/2 tsp steak seasoning

red onion

oz reduced fat Swiss (sliced thin (Alpine lace))

tomato

avocado (sliced thin)

spinach

whole wheat low calorie buns (I used Martin)

In a large bowl, whisk together vinegar, soy sauce, oil, rosemary, and Montreal steak seasoning.

Place the mushroom caps in the bowl and toss with sauce, using a spoon to evenly coat. Let stand at room temperature for 20 to 30 minutes, turning a few times.

Heat the grill or indoor grill pan over medium heat. When hot, brush the grate with oil or lightly spray the grill pan.

Place the mushrooms on the grill, reserving marinade for basting. Grill for 5 to 7 minutes on each side, or until tender, brushing with marinade frequently.

Top the mushrooms with cheese during the last minute of cooking.

While the mushrooms cook, grill the onions about 1 minute on each side and grill the buns until toasted.

To finish, place the spinach and grilled portobello mushrooms on the buns and top with the grilled onions, sliced tomato and avocado.

Mushroom Swiss Burgers

beef

salt

pepper (fresh cracked)

garlic powder

onion powder

rosemary leaves (rubbed)

tbsp red pepper flakes (pinch (optional-but recommended))

mushrooms (cremini sliced)

Swiss cheese (or more slices)

buns (soft)

mayonnaise (Choice of condiments: mustard, ketchup, ranch (or your choice))

Arugula (Choice of toppings: sliced red onions,sliced tomatoes (or your choice))

Prepare the burgers by adding all the seasoning spices to the ground beef: the salt, pepper, onion and garlic powders, rosemary and red pepper flakes (if using). And shape your patties to your desired thickness and size.

Preheat a skillet ( or grill pan) over medium-high heat and add in the olive oil. Sauté the mushrooms with a pinch of salt for just a minute, then remove on to a plate and set aside.

To that same skillet (or grill pan) add the burger patties ( no need to add an extra oil).

Sear the burgers for about 5 minutes and flip them. Sear for an extra 5-7 minutes ( you might end up searing for 7 minutes per side if you prefer a thick burger) until the burgers are just cooked.

Lower the heat to medium-low and divide the sautéed mushrooms on top of the burgers. Then place a slice ( or more) of swiss cheese over them.

Cover the skillet with a lid or tent loosely with aluminum foil for just 30 seconds until the cheese melts. Turn off the heat.

Slice the burger buns and slather them with your favorite condiments and pile on your favorite toppings.

Then place the burger on top at the center of the bun.

Bear and Burtons - W Sauce

Sorta White Sauce

1.5 lb Ground Beef (80/20)

onion

Pack of baby bella mushrooms sliced

Swiss Cheese Slices

Brioche

Butter

Set grill to 375 - 400 degrees (or medium heat on stove)

Julienne cut onion and place in skillet with Mushrooms, 2 tbsp butter, 2 tbsp W sauce, and season with Steak Supreme. Sauté onions and mushrooms until soft.

Hand make your patties and season well with Steak Supreme Rub and grill burger until internal temperature of 160. Add swiss cheese near the end to get a good melt. 

Assemble burger how you like. Add Sorta White Sauce or Mayonnaise. - enjoy

You can grill your burgers slowly indirect to get a smoky flavor while you are sautéing your Mushrooms and Onions. Add a chunk of Cherry or Hickory. 

Once mushrooms and onions are done remove and move the burgers to direct heat to finish. Once fully cooked move to indirect and add Swiss Cheese until melted.
