This Mushy Pea Curry is an amazing, slimming-friendly substitute for chip shop curry - perfect if you're counting calories or following a plan like Weight Watchers!

Mushy Pea Curry | Slimming &amp; Weight Watchers Friendly

300 grams tins mushy peas

tomatoes

tin baked beans

onion (diced)

mushrooms

chicken breast (diced

curry powder

tsp chilli powder

garlic (crushed)

chicken stock cubes (crumbled)

granulated sweetener (or 1tsp honey)

vegetables (we used cauliflower, broccoli, carrots, green beans

seasoning

low calorie cooking spray

Sauté

Sauté the onions, garlic and mushrooms in a few sprays of low calorie cooking spray in a saucepan for 4-5 minutes over a medium heat, until they are soft but not coloured.

Add the tinned ingredients, crumbled stock cubes, curry powder, chilli powder and Sukrin/honey. Bring to the boil and then simmer for 20 minutes.

While this is cooking sauté the diced meat and all the extra veg in a frying pan.

Remove

After 20 minutes remove the curry from the heat and blend until smooth in a food processor.

When smooth add to the pan with the meat and veg and simmer for another 10 minutes.

Season

Season to taste with your choice of accompaniment!

Sauté the diced meat and all extra veg in a frying pan

Remove the curry from the heat after 20 minutes and blend until smooth

Add to the pan when smooth with the meat and veg. Simmer for 10 mins

Season to taste with your chosen accompaniment

How To Cook Frozen Cauliflower Rice

Cups Cauliflower Rice (1 medium head)

Prepare Ingredients

First, preheat your oven to 200 Celsius or 400 Fahrenheit. Prepare all of the ingredients. Frozen rice does not need to be thawed, as the fully heated oven helps against it being mushy, and water evaporates quickly.

Take out your package of frozen cauliflower rice and try to break the big frozen clumps still in the bag. Using the back of the spatula, ensure all the rice is separated. Place onto the baking sheet. 

Add the garlic cloves pressed onto the rice and add salt and pepper. Mix and spray a bit with olive oil. This will help to get a bit more crunch to the rice. Mix all thoughtfully. 

Bake

Place into the fully preheated oven and bake for 20 minutes.

Scrape and Serve

Once baked, using a spatula, scrape all of the cauliflower rice from the sides of the baking sheet and mix it. The dark pieces are the crunchiest and most delicious.
