Mixture will look thin and grainy at first but will thicken and come together after heating. Thin to desired consistency with additional evaporated milk. To reheat the sauce, microwave it on high heat, stopping and stirring every 30 seconds until it's fully melted.

What does it take to make an incredible plate of bar-style, fully loaded nachos? For starters, at least three kinds of cheese, two kinds of beans, and two different applications of creamy, tangy dairy. It may sound like overkill, but there's a method to this madness.

The Ultimate Fully Loaded Nachos Recipe

Adjust oven rack to center position and preheat oven to 375°F. Heat oil in a large wok or Dutch oven to 350°F. Add 1/3 of tortilla chips and cook, agitating and flipping them constantly with a wire mesh spider until bubbles slow to a trickle and chips are pale golden brown, about 2 minutes. Transfer to a paper towel-lined bowl, season with salt, and toss. Allow to drain for 30 seconds, then transfer to a second bowl. Repeat with remaining chips in two more batches.

Layer 1/2 of chips in the bottom of a rimmed 9-by-13-inch baking sheet or baking dish, leaving a large space in the center. Drizzle with 1/2 of cheese sauce and 1/2 of refried beans. Top with 1/2 sliced pickled jalapeños and 1/2 black beans and sprinkle with 1/2 grated cheese.

Layer with remaining 1/2 of chips, maintaining the space in the center. Drizzle with remaining cheese sauce and refried beans. Top with remaining jalapeños and black beans and sprinkle all over with remaining grated cheese. Bake until grated cheese is completely melted, about 5 minutes.

Top with pico de gallo and drizzle all over with crema. Sprinkle cotija on top and garnish with cilantro leaves and radish slices. Mound sour cream and guacamole side-by-side in the space in the center of chips. Serve right away.

Super Nacho Bowl

(14.5 oz.) cans Dei Fratelli Chopped Mexican Tomatoes (drained)

Garlic (granulated)

Cumin

Paprika

Sea Salt

Black Pepper

lbs. Jack Cheese (shaved)

lbs. Muenster Cheese (shaved)

lbs. Queso Fresco (shaved

(15 oz.) can Black Beans (drained and rinsed)

(4 oz.) can Black Olives (drained and sliced)

Cup White Onion (diced)

Cup Green Bell Pepper (diced)

Cup Red Bell Pepper (diced)

Jalapenos (sliced thin)

Nonstick Cooking Spray (as needed)

Preheat oven to 375 F. Remove all but the lower rack in the oven.

In a small bowl, mix together all of the seasonings.  Set aside.

Optional step: Place onion and bell peppers into a medium-sized sauté pan.  Sauté over medium-high heat until soft and onions are translucent, about 5 minutes.  This will help remove some of the moisture.

Spray the entire inside of a very large, oven-safe bowl with nonstick spray (we used a 13&quot; stainless steel bowl).  Make sure the bowl will fit comfortably in the oven before spraying.  Use 1/4 tsp. of the seasoning to coat the inside of the bowl.

Cover the bottom of the bowl with a layer of tortilla chips.  Begin building your layer by topping the chips with 1/4 of the Dei Fratelli Chopped Mexican Tomatoes, cheeses, beans, olives, onion, and peppers.  Finish with a sprinkle of 1/4 tsp. seasoning.

Top with another layer of chips and repeat until the bowl is filled, about 3 more times.  Make sure the very top layer is only chips.

Bake for 45 minutes or until cheese is completely melted.  Remove from oven carefully and cover with a large baking sheet or pizza pan.  Invert to flip nachos out of the bowl.

Heat oven to 400°F. Line 15x10x1-inch pan with foil, and spray with cooking spray.

Spread half of chips evenly in pan. Top chips with half of the chicken mixture; sprinkle 1 cup of the cheese over chicken. Repeat layers.

Bake 8 to 10 minutes or until cheese is melted. Drizzle with sauces, and top with tomatoes, green onions and cilantro; serve immediately.
