<em>This is my favorite recipe for cheese dipping sauce. This spicy nacho cheese sauce is absolutely awesome with veggies, soft pretzels, and nachos! None of that processed stuff, either.</em>

Kicked-Up Cheddar Cheese Sauce

unsalted butter

(31 grams) all-purpose flour (spoon & leveled)

(480 milliliters) whole milk

sharp cheddar cheese, grated

hot sauce

cayenne pepper

salt + pepper

Melt the butter in a saucepan over medium heat. Sprinkle the flour over the top, stirring constantly until a thick paste forms, 1 to 2 minutes.

Slowly add the milk to the flour/butter paste in a steady stream, whisking constantly. Continue cooking, whisking constantly until the mixture thickens, about 5 minutes. It should be thick but still pourable. Add the cheese, whisking constantly until it is melted. Add the hot sauce and cayenne. Taste, then add salt and pepper to taste. Add more cayenne and/or hot sauce if preferred.

The sauce will thicken upon cooling. Store leftovers covered tightly in the refrigerator for up to 5 days. Heat over stovetop or in the microwave before serving again.

Absolutely amazed. The sauce is great and so are the pretzel bites. 
Just by chance I used Franks Red Hot sauce as well.

This is the third recipe I’ve made from your site in the last two weeks and every one was perfection.  My kids and I made your soft pretzel recipe (you’re my hero) and at the last minute I decided I HAD to have this cheese with them. I didn’t have all the right ingredients and it still came out perfect! I used shredded Mexican cheese mix, oat milk (because I didn’t have any cow milk - yes, it came out great!) chili-lime seasoning and a mix of sriracha and cholula.  Omg.

Nacho Cheese Sauce

tbsp butter

tbsp all-purpose flour

milk

tsp salt

oz block sharp cheddar cheese* (grated)

Melt&nbsp;the butter in a medium size skillet over medium heat.

Once the butter is melted add the flour.

Whisk until it combines into a smooth blond paste and starts to bubble around the edges.

Add the milk to the skillet and continue whisking.

Once the milk is incorporated, raise the heat to high and bring to a boil.

Once the milk has reached a boil, quickly lower the heat and reduce to a simmer. Allow the sauce to thicken slightly.

Add the cayenne pepper and salt and whisk to combine.

Turn off the heat, and remove the skillet from the stove**. Add the cheese and gently stir, allowing the cheese to melt.

When the cheese is completely melted and the mixture smooth in consistency, the nacho cheese sauce is ready to serve. Enjoy immediately, as the sauce will get firm as it sits.

Place the cashews in a pot on the stovetop and cover with 2 inches hot water. Bring to a boil, then boil 10 minutes (for high speed blender) or 15 minutes (for standard blender). 

Place all ingredients in a high speed blender and blend on high until creamy and fully combined. Place in a sealed container and store in the refrigerator.

I'm making this nacho cheese right now to have on some baked potatoes. I followed the directions exactly, and the boiling of the cashews is an amazing trick that I'll use every time now—it makes smoother cashew cheese than soaking overnight!

I did add a couple of ingredients: two tbsp nutritional yeast and a generous splash of warm water. That really perfected it for me!

I loved the simplicity of the recipe.  Next time I will use 1/2 tablespoons of mustard because it overpowered.   After reading the comments, I used 2 tablespoons of nutritional yeast and 1/2 pickled jalapeño and carrots.

This Nacho Cheese Sauce Recipe is CRAZY Delicious! Cheesy, saucy, smooth, flavor packed, better than store bought nacho cheese sauce that you will use endlessly!

Nacho Cheese Sauce Recipe

Tablespoon Butter (unsalted at room temperature)

Flour (all purpose regular)

milk (whole milk or even 2%)

cheddar cheese

salt and pepper

oregano

chilli powder

cilantro (monced)

jalapeno (minced)

Tablespoon scallions (minced)

- Melt butter in a saucepan over medium heat.

- Now add flour to the melted butter and continue whisking until the mixture is well-blended and starts bubbling.

- Next, add milk to the butter and flour mixture, and let it simmer for a while.

- Continue whisking till the mixture starts thickening.

- Once it reaches the consistency of a thick sauce, stop whisking.

- Start adding the grated cheese to the mixture in small batches till it completely melts.

- At this point, turn the flame low, and stir the mixture a bit to help the cheese melt into the mixture.

- Once everything is completely blended, stir in the seasoning and flavoring. You can increase or decrease the amount depending on your taste and preference.

And there you have it - The ultimate homemade nacho cheese sauce!

(250 grams; 8 ounces) shredded cheddar cheese

When freezing, put a wee bit of either wax paper, freezer paper or cling wrap on the surface of the sauce. This helps keep the integrity of the sauce and prevents ice crystals touch the surface of the sauce.

Much like other reviews, I also found an overwhelming taste of flour. The roux was well cooked to a nice golden colour, which should cook off the flour taste, but it didn't. The sauce also does not cook to a smooth consistency and seemed grainy almost, which you  can actually see in the photos. I noticed this but didn't think it would come through in the taste. Except for the fact that is was spicy, it tasted like Mac n cheese sauce,  ot nacho sauce. Next time will find a recipie that uses either corn starch or evaporated milk rather than plain milk. Most of it just got tossed out.

I have made this delicious cheese sauce multiple times and it always comes out incredible. And I'm back here because I'm making it yet again! I make pretzel loaves, pretzel buns but I had never made pretzel bites before.  This was so much fun and successful.  The cheese dip is a perfect accompaniment and neither one was labor intensive making it perfect in my opinion.  One of my biggest pet peeves is when something is delicious but you are exhausted after making it and you are entertaining.  I however waited to make this recipe before a neighborhood get-together otherwise you seriously can't stop at just eating one.

Just made it with my kids along with the cheese sauce. So good.

So good and super easy!  Made this with heavy cream, cheddar cheese, and provel cheese.  Also added fresh grated nutmeg and smoked paprika.  Layered the cheese sauce with cheese tortellini in baking dish for a fancy version of mac-n- cheese.

Incredible flavor! Went light on the salt and put over nachos. SO good.
