Easy Napa Cabbage Slaw Recipe

oz blue cheese crumbles

white onion, thinly sliced

garlic,

olive oil

apple cider vinegar

dijon mustard

honey

celery seed

sea salt

black pepper

Prep ingredients: Thinly slice cabbage and onion.Mince garlic. 

Layer napa cabbage, onions, and blue cheese in serving bowl and chill until serving.

Whisk together garlic, olive oil, apple cider vinegar, dijon mustard, honey, celery seed, sea salt, and pepper until emulsified. 

Toss dressing with cabbage and chill for 5-10 minutes before serving.

Easy Napa cabbage slaw with Chinese cabbage, snow peas, almonds and wonton chips, tossed in a creamy no mayo ginger miso dressing.

Napa cabbage slaw recipe

10-12 large whole leaves of Napa cabbage (thinly sliced)

snow peas (strings removed and sliced to long thin strips)

oz Radicchio or Purple cabbage

bulb bulb Scallion (diced)

Sprinkle toasted sliced almonds (or peanuts)

Sprinkle wonton chips (optional)

soy sauce (or coconut aminos)

tbsp rice vinegar

maple syrup

0.3 oz ginger (grated)

tbsp white or yellow miso paste (or chickpea miso)

tbsp toasted sesame oil

tbsp avocado oil

Trim

Slice away the bottom end of a whole napa cabbage. This will separate the cabbage into several large whole leaves. We will need 10-12 whole leaves. Take a few leaves and stack them on top of each other with the curved side facing down for easy control.

Slice

Thinly slice from the cabbage stems to the ruffled leaves. If the leaves are too wide to slice, roll the leaves up into a loose bundle then thinly slice.

Rinse

Transfer the cabbage to a large bowl and rinse under cold water a few times until the water runs clean. Set aside to drain well. It’s important to remove the excess moisture. Use a salad spinner to help if you have one.

Dice napa cabbage for salad:

Remove the strings of snow peas and thinly slice them into long thin strips. Thinly slice the radicchio and chop the scallions. Set them aside ready to use.

Snow peas, radicchio, and scallions:

Combine

In a large measuring cup with a spout, add the ingredients from soy sauce to ginger. Give it a stir then add the miso paste. Stir and use the liquid in the cup to help dissolve the miso.

Emulsify

Slowly drizzle in the sesame oil and the avocado oil while whisking at the same time to emulsify the dressing.

Dressing:

Serve

Transfer the cabbage to a large serving bowl, add the snow peas, radicchio, and scallions. Slowly drizzle in about half the amount of dressing. Toss well, taste, and decide if more dressing is needed. Before serving, sprinkle over almonds and wonton chips, if using.  Serve fresh and best right away.

I made this recipe for the first time a few months ago and since then have made it twice a week since then. Absolutely delicious and the dressing tastes so good it always surprised me how easy it is to put together. I often don’t have all the salad ingredients so I’ll improvise, but honestly just some red cabbage, spring onions and peanuts with this dressing makes a delicious dish.

I love this slaw so much and am continually making it on repeat.

Made this for the first time for a dinner of 6 and it was a crowd pleaser! Just a little bit of leftover which I appreciate having. Dressing was perfectly balanced and the thin veg were easy to eat. Keeping this in my recipe list for sure.

I LOVE NAPA!!! GREAT recipes here and will make the one with quail eggs. Also, in a versatile salad like this one, I usually add some fine slivers of jalapeños just to make it interesting! Thanks for another great salad option!!!
