Rice Krispie Cookies have a great added crunch from both the rice krispie cereal and nestle crunch bar. They&#39;re a chewy cookie that can be made in less than 30 minutes!

Rice Krispie Cookies

butter

brown sugar

sugar

turbinado sugar

vanilla

baking soda

salt

all-purpose flour

oats (pulsed in the blender)

rice krispie cereal

nestle crunch bar (chopped)

chocolate chips

oven

Preheat the oven to 350. Line 2 baking sheets with parchment paper and set aside.

Place the butter and sugars in a stand mixer fitted with a paddle attachment. Beat on medium-high speed until light and fluffy, 3 to 4 minutes. Add in egg and vanilla and mix together until combined.

oats

Place oats in a blender or food processor and pulse a few times so you have some oat flour and some thicker pieces of oats. (Can also chop with a knife if needed)

dry ingredients

Add in baking soda, salt, flour, oats and mix until combined.

chocolate

Fold in rice krispies and both kinds of chocolate.

scoop

Scoop the dough into large balls, I like to use the ¼ cup cookie or ice cream scoop. Top cookie dough with a few more pieces of chocolate and some flaked salt.

bake

Bake the cookies for 11-13 minutes. Sprinkle with a little extra salt if desired.

These cookies are soooo good and addicting. Added to my bookmarks because I’ll definitely be making them again! I was surprised at what a dry dough it was but they turned out very tasty and chewy and crispy. Highly recommend!

Always interested in Brooke’s spin on chocolate chip cookies and this did not disappoint! I think it is the perfect ratio of crunch chocolate to Rice Krispies and cookie dough!

I was looking for a recipe that would have fewer calories and I think I found it. I did substitute a half a cup of protein powder for flour, used Truvia sugar blend and various leftover Halloween mini chocolate candies. They turned out great!
