Nigerian Beef Stew is a vibrant tomato beef stew made with bell peppers, tomatoes, and aromatics. Serve with a side of rice, sweet fried plantains, and coleslaw for a true Nigerian dining experience. This recipe makes a big pot of stew so feel free to scale the recipe if you want a smaller quantity.

Nigerian Beef Stew

beef,

red onion, (half diced, half cut into chunks)

salt

chicken bouillon powder

thyme

curry powder

Roma tomatoes

red bell peppers

habanero peppers

olive oil (or any neutral-tasting oil)

tomato paste

Boil the beef: Place the chunks of beef into a medium pot. Add half of the diced onions, the salt, 2 teaspoons of chicken bouillon powder, half a teaspoon of thyme, and half a teaspoon of curry powder. Stir to combine. Place on medium heat and bring to a simmer. Let the beef cook together with the seasoning for 5 minutes. Add 2 cups of water, cover the pot and let it cook until the beef is tender. Start checking the beef for tenderness after around 15 minutes. Once the beef is done, drain it from its stock. Reserve the stock.

Blend the tomato-pepper mixture: Cut the tomatoes into chunks and place them into a blender. Cut and deseed the bell peppers and place them into the blender. Add the chunks of onions and habanero peppers. Blend into a smooth paste or a chunky sauce. A chunky sauce will lend more texture to the stew.

Cook down the tomato-pepper mixture: Place the tomato-pepper blend into a medium pot on medium heat. Bring to a simmer and let it cook until most of the liquid evaporates. About 10 minutes. Do not stir while cooking.

Fry the beef: Place a large pot on high heat and add the oil. Let the oil heat up then add half of the beef. Let it brown on one side then flip to the other side and let it brown. Remove the beef from the pot and also fry the remaining beef.

Cook the stew: Turn the heat down to medium. Add the remaining diced onions to the pot and saute until translucent. Add the tomato paste and cook for five minutes while stirring continuously to prevent burning. Add the reduced tomato-pepper mixture and cook while stirring from time to time for about 15 minutes. Add the remaining curry powder, thyme, and bouillon powder. Then add the stock from cooking the beef and the fried beef. Stir to combine and let everything simmer together for about 5 minutes. It might splatter at this point so cover the pot as needed. Taste to adjust seasoning.

Serve. Serve warm over steamed rice.

Boil beef with 2tsp bouillon powder, 1/2 tsp salt and chopped onion, oregano and boil till tender. This should take between 20 minutes or longer depending on the cut of meat used. Tougher meat would take longer to cook. Take the beef out of the stock, sieve the stock to get rid of scum and reserve for later

fry beef

Place a saucepan on medium heat, add vegetable oil and heat till hot, carefully drop the meat into the hot oil and fry until golden brown. You may choose to grill the meat for healthier option

drain fried beef

Place the fried beef on a kitchen towel and move on to cooking the stew

To the hot oil, carefully add the pepper mix, stir to combine, cover the pan with a lid and cook for 10 minutes. Stir to combine, if the stew is becoming thick, add beef stock or water to avoid burning. (Remember this is fried stew so you only need to add little water/stock at a time if using at all)

Add curry and thyme or any other spices you choose to add and stir to combine.

Add bouillon powder or salt (you can use the combination of both but be careful, so you don’t overdo it. Remember you have added salt and bouillon to boil the beef. Also, if you have added the beef stock to the stew, you might not need to add salt or bouillon powder)Return the fried beef to the stew, stir until well combined and continue to simmer for another 10 to 15 minutes or until oil floats on top of the stew.Turn off the heat and serve stew warm with side of choice

I’m always looking for good recipes to try. This one caught my eye and I decided to make it for my kids and I. I followed the instructions given, the only thing I did differently is that instead of frying the meat, I stir fried it with little oil. It’s much healthier in my opinion. The food was amazing, I’m sure I will make this dish again and try with different protein. Thanks

How to make the best NIGERIAN BEEF STEW | African Beef Stew

Nigerian Beef Stew is a mouthwatering West African stew made with blended tomatoes, red bell peppers, and habanero peppers and spiced to perfection. It is so versatile and is amazing with so many different dishes!

lb beef

water

tsp black pepper

plum tomatoes

habanero pepper

olive oil

beef stock/broth

tbsp bouillon powder

½ tsp black pepper

salt (to taste)

Wash beef and place in a pot.

Add water, salt, and black pepper and bring to a boil.

After it boils, stir together and let cook for 20-25 minutes.

To boil the beef

Blend the tomatoes, bell pepper, habanero pepper, and half an onion together.

Chop the other half of the onion.

Pour olive oil in a pan and when heated, add the chopped onions and stir till its wilted.

Add the blended tomato and pepper mixture and black pepper and stir.

Boil for 5 minutes on medium heat.

Add the beef and 1/2  cup of stock and mix together.

Add a little more broth if needed, till it has enough of a stew-like consistency.

Add the thyme, bouillon powder, and curry. Taste for salt before adding any.

Cover and let simmer for 10 minutes on medium-low heat.

Serve and enjoy!

Hi Tayo! I've tried the Nigerian Beef Stew twice! OMG, its absolutely delish! Our household loves spicy foods, so I added 3 habanero peppers including the seeds. The second time making, I doubled the portion as we were entertaining guests. My husband and I enjoy cooking, and now I'm the queen of fabulous dishes in my house this week.

I absolutely loved the flavour, and consistency the only thing I would do is put curry in a higher (tall) cylindrical or small surface area container after cooking for purpose of removing olive oil.  There are other Nigerian dishes that have similar preparation to them that are also delicious.? Thank you for the wonderful eats: )

Do you blend the veggies with any of the stock? Is one habanero enough heat, I've seen recipes with 2 scotch bonnet peppers?
