Nigerian&nbsp;Pepper soup is a spicy broth popularly served at home, restaurants and parties in Nigeria. It can be made with assorted meat, beef, chicken, or fresh fish. Assorted meat&nbsp;pepper soup is a type of Nigerian pepper soup and it is absolutely delicious&nbsp;and yes spicy (hot)

Assorted Meat Pepper Soup (Nigerian Pepper Soup)

kg assorted meat (cubed)

Pepper soup spice mix

vegetable oil

Seasoning (I used 2 Nigerian Knorr cubes)

Water (about 1 litre (4 to 5 cups))

(chopped

garlic (sliced)

Cayenne pepper (use according to preference)

Scent leaves (substitute with dried or fresh basil)

Wash assorted meat thoroughly to get rid of unwanted bits.  If you are using the lungs and liver, I’ll advise you parboil for about 6 minutes before adding to the rest of the meat or simply cut the meat to cube size to allow easy access when washing to get rid of the clotted blood. Rinse clean and continue with the cooking process.

Place pan containing washed assorted meat on medium heat add, chopped onions, garlic, salt, seasoning, half of the pepper soup spice, add enough water to cover the meat and bring to boil for about 15 minutes Add the remaining pepper soup spice and vegetable oil and reduce the heat. Also, check for salt and seasoning.&nbsp;

Add more water to the broth is needed. After about 10 minutes, add a handful of scent leaves or basil. I used a combination of dried and fresh basil Bring to boil till meat is tender.Serve immediately. Assorted meat&nbsp;pepper soup can be eaten on it own or with agidi&nbsp;(eko) or bread

Fish pepper soup is a soothing West African Pepper Soup, made with just a few ingredients - catfish, vegetables, and spices.

Fish Pepper Soup

lbs catfish

habanero pepper (chopped)

tsp smoked paprika

tbsp bouillon powder

tbsp pepper soup spice

tsp crayfish (substitute with 1 tbsp coconut aminos)

basil leaf (loosely chopped)

lime/lemon (to clean the fish)

salt (or

cayenne pepper (optional)

water (or till the fish is completely covered)

Boil some water.

Gut and clean out the inner parts of the catfish.

Clean the catfish using lime or lemon to scrub the skin and insides as well.

Cut the fish into medium-sized pieces.

Chop habanero pepper into tiny pieces.

Loosely chop the basil leaves and set aside.

Pour the hot water over the fish and leave for about 30 seconds.

Drain out the hot water, rinse under the tap and place in a pot.

Add about 6 cups of water or until the fish is completely submerged.

Add the bouillon powder and bring to a boil.

Add the smoked paprika, ground crayfish, salt, and chopped habanero pepper.

Only add the cayenne pepper if you want it spicier.

Let simmer for 20 minutes on medium heat.

Taste and adjust the salt if needed.

Add the chopped basil leaves and simmer for 5 more minutes.

Serve and enjoy!
