These no bake key lime pie bars are the ultimate healthy treat! Made with a creamy cashew filling, a crunchy crust and bursting with tons of lime flavor!

No Bake Key Lime Pie Bars

oats

pecans

dates ((about 10))

coconut oil

cashews

limes ((¼ cup + 2 tablespoons))

limes

maple syrup

vanilla

Add the oats, pecans, dates and coconut oil into a food processor. Process until a sandy, sticky texture forms. Transfer this into a parchment-lined 8x8 baking pan. Press firmly (like really hard) into the bottom to create a crust.

Add the soaked cashews (they need to be soaked!), lime juice and zest, syrup, coconut oil and vanilla into a blender. Blend on high until smooth and creamy.

Pour the filling over the crust and freeze for at least 4 - 6 hours, preferably overnight.

When ready to serve, allow to sit at room temperature for 5 minutes, then slice. Store in the freezer and enjoy as a refreshing cold treat on a hot day!

Easy No Bake Key Lime Pie Bars

Peanut butter-pretzel truffles created as an homage to my favorite ice cream, Chubby Hubby, by Ben &amp; Jerry's.

Peanut Butter-Pretzel Truffles

pretzel pieces

peanut butter

unsalted butter (at room temperature)

brown sugar

salt

sugar

milk chocolate chips

vegetable shortening

Put the pretzel pieces into a resealable plastic bag and crush into very small bits (a rolling pin works great for this).

In a small bowl, combine the peanut butter, butter, brown sugar and salt. Stir until all of the ingredients are completely blended and smooth. Add the pretzel bits to the peanut butter mixture and mix thoroughly. Add the powdered sugar and mix until completely combined.

Line a small baking sheet with wax paper. Using a small cookie scoop, or about 2 teaspoons worth of peanut butter mixture, gently shape into a ball with your fingertips. Place the ball on the wax paper-lined cookie sheet and repeat with the remaining peanut butter mixture. Place the baking sheet into the refrigerator and chill for at least 30 minutes.

When ready to dip the truffles, microwave the chocolate chips and vegetable shortening together in a small bowl at 50% power in 30-second increments, stirring after each, until completely melted and smooth.

Working one at a time, dip one peanut butter-pretzel ball into the melted chocolate and use a fork to roll it around, ensuring that it is completely coated with chocolate. Let any extra chocolate drip off and place back on the wax paper-lined sheet. Repeat with all of the peanut butter-pretzel balls.

Return the baking sheet to the refrigerator and again chill for at least 30 minutes. Garnish with a drizzle of melted peanut butter and crushed pretzels, if desired. Store in an airtight container in the refrigerator.

No Bake Cranberry Energy Bites make a fun and easy snack for after workouts or school lunchboxes. Only 7 ingredients and you can use sun butter or pumpkin seed butter for a nut-free version.

No Bake Cranberry Energy Bites

banana

natural almond butter OR peanut butter butter

raw liquid honey

vanilla extract

flaxseed (optional)

coconut

quick oats (use gluten free if necessary)

rolled oats (use gluten free if necessary)

dried cranberries (or dried fruit of your choice)

chopped nuts or seeds

chocolate chips

In a large bowl, mash the banana with a fork. Stir in heated nut/seed butter and honey and mix until smooth.

Add shredded coconut, oats and mix until well combined. Add optional add-ins if desired. Fold in cranberries.

Wet hands slightly and form dough tightly into 1" - 1.5" balls. Or, if the dough doesn't stick together place dough in the fridge for 30 minutes prior to forming dough balls so it's easier to handle. Press additional cranberries evenly around the dough, if desired.

Store in airtight container in refrigerator or freezer until ready to enjoy.

This sweet No-Bake Chocolate Chips Cookie Dough Peanut Butter Bar is perfect as a vegan dessert or snack, refined sugar-free, and gluten-free.

No-Bake Cookie Dough Bars

Peanut Butter (Unsalted) (unsalted, no sugar

Maple Syrup (Note 2)

Vanilla Extract

Sea Salt

Almond Flour

Coconut Flour (Note 3)

Dairy-Free Dark Chocolate Chips

3.5 oz Dark Chocolate

Coconut Oil (melted)

Line a 9-inch x 5-inch baking pan with parchment paper. Set aside.

In a large mixing bowl, add peanut butter, maple syrup, salt, and vanilla.

Combine with a spatula until creamy and evenly combined.

Stir in almond flour and coconut flour with a spatula. When it starts to be difficult to stir, add the chocolate chips and knead the dough with your hands.

Transfer the cookie dough into the prepared pan and press the dough all over the pan to form an even layer.

Freeze 10 minutes while you are making the chocolate layer

In a small saucepan, add dark chocolate and coconut oil. Melt them on medium heat, stirring all the time to prevent the chocolate from burning. You can also melt the mixture in the microwave using a glass bowl. Microwave 1 minute, stir, and repeat by 30-second bursts until the chocolate is fully melted.

Remove the bar from the freezer and pour the melted chocolate onto the cookie dough bar.

Spread the chocolate evenly, then bring the pan back to the freezer for 5-8 minutes until the chocolate layer is set.

Cut into 16 small bars and store bars into an airtight box in the fridge for up to 2 weeks. You can also freeze the bars in a zip-lock bag. Defrost on the counter for 2 hours before eating or enjoy half frozen.

These are my new go to for everything; snack, gifts, etc. INSANELY delicious and everyone loves them...minus people with peanut allergies LOL 

I change out the coconut oil in the chocolate with cacao butter instead and use Lilly's sugar free chocolate and chocolate chips and it's absolutely AMAZING!  Thanks so much for this!

Made the bars this evening, and they are very good! Not super sweet. I am excited to try more recipes from this site as the cookie dough bars are my first attempt. I don't adhere to a vegan diet, but I love trying the new recipes, and vegan foods. I plan on making the blueberry cobbler next.

The No Bake Cookie Dough Bars were super quick and easy to make. Soo yummy, I have to stay away from the fridge otherwise there will be none left tomorrow.

Absolutely amazing! I’m always craving raw cookie dough and this hits the spot! Such a easy recipe and came together really well. I halfed the recipe but wish I would of made double now as they are sooo nice and are freezer friendly which is a bonus!
