This refreshing fruit salad is perfect to bring to summer al fresco gatherings when melons are at their peak. It can be made in advance and chilled, without the fruit going brown.

grams/3½oz butter

250 grams/8¾oz digestive biscuits, crushed

cream cheese

milliliters/1fl oz Baileys

milliliters/3½oz icing sugar

300 milliliters/10½oz double cream, whipped

grams/3½oz chocolate

200 milliliters/7¼oz double cream, whipped

cocoa powder, to dust

This simple salad allows the wonderful flavours of roasted peppers and artichokes to shine through. Perfect served with couscous on the side.

175 grams/6 ounces chargrilled artichoke hearts

tsp basil leaves

tsp balsamic vinegar

salt and black pepper

Christmas trifles are always an indulgent affair but this one is a little extra. Using Christmas pudding and madeira cake for the base and swapping jelly for tropical fruit makes it rich and sumptuous. Make sure you use a good, thick custard and leave time to allow it to set in the fridge.

100–150 milliliters/3½–5½fl oz ginger wine (or sherry if you prefer)

500 milliliters/18fl oz custard

300 milliliters/½ pint double cream

tbsp icing sugar

tsp vanilla extract (optional)

orange, pared zest only

marshmallows, (optional)
