A super simple but tasty tradtional pasta salad recipe from Bari, Puglia. Crudaiola Barese is perfect as a side dish or light summer meal.

Pasta Salad Crudaiola Barese

350 g Sedani rigati

12-15 cherry tomatoes

basil leaves

250 g Marzotica ricotta

garlic (peeled)

Extra virgin olive oil (as required)

(for

black pepper. (to taste)

Wash the cherry tomatoes and cut them into small pieces.

Peel the clove of garlic and chop it well. (some people omit the garlic and others keep it whole and remove it before serving the pasta)

Put the tomatoes, garlic and some of the basil in a bowl, add a pinch of salt and a good amount of olive oil.

Add a good amount of grated ricotta on top but don’t mix it with the tomatoes.

Seal the bowl with cling film and leave it in the fridge for about 2 hours.

2 hours before cooking

Put a pot of water on to boil for the pasta. Add salt once it starts to boil and bring to the boil again. Cook the pasta al dente in boiling salted water according to the instructions on the packet.

Remove the tomato mixture from the fridge and take out the basil leaves which will have become soft and replace them with chopped fresh ones.

Drain the pasta well, let it cool for a minute and add it to the tomato mixture.

Add more grated ricotta, a dash of olive oil, ground pepper if required, mix well and serve.

Finish the dish

This bright &amp; garlicky Argentinean pesto is a terrific counterpoint to savory vegan steak tacos. Drizzle this sauce on top of sliced grilled seitan steak, along with shredded cabbage, tomatoes, and avocado. It&#x27;s also delicious on roasted potatoes or roasted cauliflower. The sauce tastes best when the flavors have had a chance to fuse. So plan on making it the day before you want to use it. Makes about 3/4 cup cilantro chimichurri.

Cilantro chimichurri sauce

cilantro (with stems* (about 2.5 ounces))

Tablespoon chopped onion (yellow)

garlic (minced)

Tablespoons red wine vinegar (+ 1/2 Tablespoon more, if desired)

paprika

salt

Tablespoons extra virgin olive oil

Put cilantro, chopped onion, minced garlic, 1 1/2 Tablespoons red wine vinegar, paprika, and salt into food processor.

Put on the cover &amp; turn the food processor to low. While the blade is running, pour 3 Tablespoons extra virgin olive oil through the chute. Stop to scrape down the sides once, so that everything is evenly incorporated.

Move the cilantro chimichurri to a covered container. Refrigerate for at least 3 hours, and preferably overnight, so that the flavors have a chance to fuse.

Once you are ready to serve the cilantro chimichurri, taste for any adjustments. If you&#x27;d like more tang, add 1/2 Tablespoon more of red wine vinegar. If you&#x27;d prefer a thinner sauce, add a Tablespoon of water or an additional Tablespoon of extra virgin olive oil.

This recipe for No-Cook Sun Gold Tomato Pasta takes just 6 simple ingredients and less than 20 minutes to make! 

No Cook Sun Gold Tomato Pasta

tomatoes

garlic (finely minced or grated)

extra virgin olive oil

Pecorino Romano cheese (plus more as needed)

salt and freshly cracked black pepper (to taste)

lb long pasta like spaghetti or linguine

basil (roughly chopped)

Bring a large pot of water up to a boil.

Add the tomatoes, garlic, olive oil and Pecorino Romano cheese to a large bowl.

Use the back of a spoon to mash the tomatoes and release their juices, then mix everything together until it forms a thick sauce. Season with salt and pepper to taste. 

Season the boiling water with a heavy pinch of salt, then cook the pasta until al dente (follow package directions - they vary).

Scoop out a few cups of pasta water, then drain the pasta and immediately transfer it to the bowl of tomatoes.

Toss it around vigorously, adding a few tablespoons of pasta water to help loosen it up. If it seems too watery, add a bit more cheese to thicken.

Add the basil and continue tossing for another minute until it smells fragrant, the pasta is well coated and the sauce has a nice consistency.

Serve immediately.

Totally incredible, made almost exactly as recipe asks, just didn’t have a full Cup of Romano cheese so I only used about 2/3s-3/4 C, and I used about 1/3 C of virgin olive oil.  Used our own sun gold tomatoes, our own garlic and our own basil!  Just unbelievably incredibly tasty!  Could not stop raving about it, and I NEVER rave about meals that I make!

OMG best summer pasta recipe ever! I seriously wish I could make it all year long (I mean I guess I can, right? No one is stopping me). Nothings hits better than fresh, sweet sun golds with basil in butter and cheese. Best part, its so easy to make!

This pasta is unreal. So easy and tastes incredible. I just made it last night and my husband is already asking for it again!!

I am very particular about pasta; I want not too much sauce and I want it to be slurped up by very thirsty al dente pasta with a 6c1a splash of reserved cooking water in the last minute before you eat it, so that they become as one. Guess what happened?

This looks so good! Tomato season is my favorite time of the whole year, and I'm always looking for new ways to use them - totally going to give this a try!

Coley, I don't know what the larger gold tomatoes are called but they are low acidic and have been my favorite for  awhile.  Ramon and I have a lot of tomatoes; we love your recipes and I am sending a pic on your home page...xo

Those little babies look too good to cook, anyway!  I love the idea of squishing them up a bit for a super fresh pasta sauce.  And just the right amount of cheese... Yum.   p.s.  what are you gonna do with those bananas?  ????

Mmmmm! Deeee-lish!! Only one thing I might change (for hubby who has a difficult time in his belly with raw garlic and onions)... I'd probably use roasted garlic (a few extra cloves to add more flavor) and smoosh that into the whole thing. Otherwise... I'm so there!

Sun Gold Tomato Pasta

This Vietnamese fermented shrimp sauce (Mam Tom) is the traditional dipping sauce for Hanoi Fried Fish with Turmeric and Dill (Cha Ca La Vong).

Vietnamese Fermented Shrimp Sauce (Mam Tom)

shrimp paste (mam tom)

sugar

lime

water

MSG (optional but highly recommended)

garlic (peel and mince)

Chili peppers (slice thin)

Prepare the Sauce

In a small bowl, combine shrimp paste, sugar, lemon or lime juice, and MSG. Stir until the sugar and MSG are fully dissolved.

Add Garlic

Mix in the minced garlic until well incorporated.

Garnish and Serve

Top the sauce with sliced chili peppers for garnish.
