Maple Italian Meringue

250 ml (1 cup) maple syrup

ml (1/2 cup) orange juice

cream of tartar

salt

Maple Syrup

Put maple syrup and orange juice into a heavy-bottomed saucepan. Boil over medium heat until temperature on a candy thermometer reads 115 °C (240 °F).

Meanwhile, beat the egg whites, cream of tartar and salt in a stand mixer or bowl at medium speed, until soft peaks form.

When the syrup comes to temperature, reduce mixer speed and continue to beat whites while slowly drizzling the syrup on them.

Then increase speed and beat for about 10 minutes or until the meringue is warm and formed into very stiff peaks.

No utensils needed or wanted with these awesome drumsticks. No limits either! Make plenty because they’ll be a big backyard hit.

Chicken Drumsticks in a Maple Barbecue Sauce

250 ml (1 cup) canned crushed tomatoes

ml (1 tbsp) maple vinegar

45 ml (3 tbsp) cider vinegar

garlic, finely minced

Dijon mustard

ml (1/2 tsp) Worcestershire sauce

g (1 tbsp) Mexican chili powder

g (1 tsp) onion powder

g (1/2 tsp) smoked paprika

chicken drumsticks, skin on

g (1 tbsp) sesame seeds

chives, snipped

Combine all sauce ingredients in a small saucepan and bring to the boil. Reduce heat to low and simmer uncovered for 30 minutes, stirring regularly. Allow to cool before mixing with the chicken.

BARBECUE SAUCE

Place chicken in a dish or sealable plastic bag. Pour in half the sauce (or a bit more, if needed) and toss to coat all the drumsticks. Cover the dish or seal the bag and marinate in the fridge for at least 2 hours.

Turn heat down to medium-low. Place drumsticks on the barbecue and grill for 20 &#8211; 25 minutes, turning regularly, until the meat easily pulls away from the bone or internal temperature reads 74° C (165° F). The barbecue sauce is sweet, so the drumsticks tend to caramelize quickly. If this occurs, move them to indirect heat to finish cooking and prevent them from burning.

Sprinkle drumsticks with sesame seeds and chives just before serving them with the remaining sauce.
