Sweet Noodle Kugel With Jam Pokes

extra-wide egg noodles

⅓ cup sugar

½ cup melted butter (1 stick / 110 grams)

(225 g) cream cheese, room temperature

(450 g) cottage cheese

Sweet Lokshen Kugel

raisins (optional)

oz wide egg noodles

sour cream ((2 cups))

oz cottage cheese ((1 cup))

oz cream cheese, softened

unsalted butter, melted

tsp salt

Nonstick cooking oil spray

Place a rack in the middle of your oven and preheat to 350 degrees F. Cover the raisins with hot water and let them soak to plump while you prepare the other ingredients.

Bring a large pot of water to a boil. Add the noodles to the pot, bring back to a boil, and let them cook until tender (not overly soft), about 5 minutes. Drain and return the cooked noodles to the pot.

In a food processor or blender, blend together the eggs, sour cream, cottage cheese, cream cheese, sugar, melted butter, and salt.

Pour the egg mixture over the cooked noodles in the pot and stir until well combined.

Drain the raisins. Stir them into the noodles.

Spray a 9x13 inch baking dish with nonstick cooking oil. Pour the noodle mixture into the dish.

Top the kugel by sprinkling generously with sugar and lightly with cinnamon. Alternatively, you can use your favorite kugel topping (streusel, crushed graham crackers, cornflakes, etc.).

Bake the kugel for about 60 minutes, turning once halfway through cooking, till the center of the kugel is set and the tips of the noodles turn golden brown. Remove from the oven.

Let the kugel rest for 15-20 minutes before slicing. Kugel can be served warm or cold.

Sweet and Peppery Jerusalem Kugel (Kugel Yerushalmi)

(12 egg noodles

black pepper (or more if you like pepper)

Instant Pot Jewish Noodle Kugel also known as Noodle Pudding, is a favorite Holiday, Shabbot, Chanukkah, Brisket side dish. It also makes a great dessert.

Instant Pot Jewish Noodle Kugel

oz Wide Egg Noodles (drained/rinsed)

Tablespoon Butter

Eggs

Cottage Cheese

Sour Cream

Kosher Salt

White Sugar

Cinnamon

Lemon Juice

Raisins (White

Tablespoon Butter (for dotting)

Corn Flakes

Soak raisins in a bowl of water to plump.

Add egg noodles and water to just barely cover the noodles to Pressure Cooker cooking pot.

Lock on lid and close Pressure Valve.&nbsp; Cook at High Pressure for 1 minute.&nbsp; When Beep sounds, do a Quick Release by carefully using intermittent movements to toggle the Pressure Valve open and close, to avoid spewing liquid.

Immediately, rinse under cool water to stop the cooking. Set aside.

Beat or whisk eggs.&nbsp; Add cottage cheese, sour cream, sugar, cinnamon, salt, lemon juice and beat well.&nbsp; Fold cooked noodles into mixture.

Drain water from raisins and fold into mixture.

Generously grease your Push Pan,  Pour noodle mixture into Push Pan and dot with butter.

Add 1.5 cups of water to Pressure Cooker cooking pot and place in a trivet.&nbsp; Place Kugel on top of trivet.

Lock on Lid and close Pressure Valve.  Cook at High Pressure for 20 minutes.

When Beep sounds, allow a 15 minute Natural Pressure Release.

Open lid and if using topping, add it now.

Place Mealthy Crisplid on top of pressure cooker. Set temperature to 375 degrees and cook for 5 minutes.

Filling

Crush corn flakes and mix with sugar and cinnamon.  Sprinkle over the top of noodle mixture and dot with butter prior to crisping.

Topping (optional)

This moist, creamy Vanilla Noodle Kugel is made with pudding and covered with a crunchy cookie topping. Perfect for potlucks. Kosher, Dairy.

Take cream cheese out of the refrigerator to let it soften. Prepare pudding according to package directions and chill until soft set (thickened, but it doesn&#039;t need to be completely firm).Preheat oven to 350 degrees F.

Boil the egg noodles according to package directions until they reach an al dente texture (cooked, but not too soft or limp). Drain and rinse with cold water until noodles are cool. Drain again.

Use an electric mixer to cream together the cream cheese and sugar. Add the eggs and mix again until blended.

Add pudding, milk, sour cream, vanilla and salt. Mix on medium high until all ingredients are well blended.

Pour noodles into the liquid mixture. Stir to combine noodles and liquid, making sure all noodles are covered in liquid and no noodle clumps have formed.

Pour noodle mixture into a greased casserole or baking dish.

Crush vanilla wafer cookies to a crumbly texture using a food processor, or by placing the cookies into a sealed plastic bag and pounding them with a mallet. You want them crushed fine, but not to a powder-- a little texture is good. Place crumbs into a small mixing bowl.Add sugar, cinnamon, and melted butter to the crumbs. Mix with a fork for a couple of minutes until all of the crumbs are evenly moistened by the butter.

Evenly sprinkle the crumbly topping across the top of the kugel.

Bake kugel uncovered on the middle rack of the oven for 1 hour to 1 hour 15 minutes, turning the dish once during baking to make sure it bakes evenly. Kugel is done when the topping lightly browns all the way across. Remove from the oven.

You can serve this kugel warm or cold. Store it in the refrigerator to avoid spoilage. The topping won't be as crunchy the second day, but it will still taste delicious. Enjoy!

Sweet Noodle Kugel

raisins

cream cheese (, softened)

granulated sugar (, divided)

cinnamon (, divided)

Preheat oven to 350 degrees F. with an oven rack in the middle position. Coat a 9x13 baking dish with nonstick cooking spray.

Place raisins in a small bowl and cover with hot water; let them soak to plump up while you prep the other ingredients.

Bring a large pot of 5 quarts water and 2 teaspoons kosher salt to a boil. Add the noodles to the pot, bring back to a boil, and let them cook until tender but not entirely cooked, about 7 minutes. Drain thoroughly and return the cooked noodles to the pot.

In a blender or the bowl of a food processor, blend together the eggs, sour cream, cottage cheese, cream cheese,  melted butter, vanilla, salt, 1 cup sugar, and 1/4 teaspoon cinnamon.

Drain the raisins and stir them into the noodles.

Pour the noodle mixture into the prepared baking dish, spreading evenly.

Whisk together the remaining tablespoon of sugar and 1/4 teaspoon cinnamon; sprinkle over the top of the kugel.

Bake the kugel for about 1 hour until the center of the kugel is set and the tips of the noodles turn golden brown.

Remove from the oven and let the kugel rest for 15-20 minutes before slicing.

Kugel can be served warm or cold, as a side dish, for breakfast, or dessert!
