(100 grams) brown rice

asparagus, woody ends trimmed, cut into 5cm lengths

snow peas, thinly sliced lengthways

spring onions, thinly sliced diagonally

pkt Coles Brand Hot Smoked Salmon, coarsely flaked

salt-reduced tamari

lemon juice

mirin seasoning

caster sugar

sesame oil

nori,

sesame seeds, toasted

For a little lunch inspiration, make these colourful sushi slices for the family.

Salmon and avocado sushi slice

sushi rice

tbsp rice wine vinegar

can red salmon, drained, skin and bones removed, flaked

tbsp whole-egg mayonnaise

green onions, thinly sliced

These sushi-style rice balls are just the right size for popping in your mouth.

Salmon and sesame rice balls

(2 cups) koshihikari Japanese rice (SunRice brand)

500 milliliters (2 cups) cold water

(1/3 cup) sushi seasoning (Mitsukan brand)

tsp sesame seeds

tbsp sushi seasoning, extra

nori sheets, cut into 1cm-wide strips

x pink salmon (Paramount brand), drained, flaked

tsp wasabi paste

green shallot, end trimmed, chopped

tbsp light soy sauce

1/4-1/2 tsp wasabi paste,

Mouth-watering Asian flavours spring to life in this super-healthy salmon with nori and sesame soba noodles main.

Salmon with nori and sesame soba noodles

(about 800 grams) thick salmon fillets, skin removed

nori

olive oil

pkt soba noodles

sesame seeds

31.50 gm sushi soy sauce

milliliters sushi vinegar

tsp sesame oil

tsp ginger

asparagus, woody ends trimmed

carrot, peeled

TikTok-inspired Nori Wraps with canned tuna are a fun way to make sushi! Pick-and-choose what goes into the sushi wraps for lunch/snack in minutes!

Nori Wraps with Canned Tuna

canned tuna

mini cucumbers (or English cucumber, thinly sliced to rounds)

eggs

avocado (thinly sliced)

Sriracha (or Frank's original hot sauce

Mayo (optional)

Furikake (or toasted sesame seeds, optional)

Prep

Prepare all your ingredients before taking out the nori sheets. Use 2 sheets per wrap.  Gently fold them twice to make 4 square marks. Cut a slit to the middle of the nori sheets.

Add the food, starting from the bottom left corner and clockwise, with avocado, cucumber, canned tuna, and boiled eggs. Place the food in an even layer and try not to overload. Add the sriracha, mayo and furikake, if using, on top of the tuna.

Fold

Carefully lift the bottom left corner to fold the avocado over the cucumber and press gently to help them adhere.

Fold the top left corner to top right corner.

Then fold again to get one square shape wrap.

Eat them right away & here’s how - with a tray under, carefully lift the wrap up with two hands and take a big bite! It might get a bit messy as some items might fall out ...just like when you eat tacos but it won’t affect the taste! Have fun and enjoy! :)
