These are the BEST Healthy Breakfast Bars ever! I have eaten one every day for over a decade (seriously)! This easy recipe is made in one bowl in 30 minutes, and is loaded with fiber, protein &amp; omega-3s to keep you full all morning long! Plus they’re gluten-free, dairy-free, refined sugar free and vegan!

Healthy Breakfast Bars Recipe

almond meal

flaxseed meal

cinnamon

sea salt

2-4 TBS plant-based vanilla protein powder (optional)

tsp pure vanilla extract

bananas (ripe and mashed)

applesauce

peanut butter

TBS honey

butter

Preheat oven to 350 degrees F. Grease an 8x8 square baking dish

In a small bowl combine the dry ingredients (oats, almond meal, flaxseed, salt, cinnamon and protein powder if using), set aside. (alternately add the dry ingredients after mixing the wet ingredients).&nbsp;

In a large bowl mash the banana. Add applesauce, honey, 1/4 cup peanut butter and vanilla. Mix well.

Stir dry ingredients into wet until combined. Spread mixture into the pan (should be moist but NOT soupy).

Bake 20 minutes (should be slightly brown around the edges and top should be set), remove from oven and spread peanut butter over the top of the bars (I like a really thick layer of peanut butter but it’s to your own preference)

Continue baking for 10 minutes more or until firm and lightly browned around the edges. At this point the peanut butter layer will have tiny little bubbles in it.

Cool completely in the refrigerator and cut into 6 or 9 bars. Wrap each with plastic wrap and store in an airtight container in the fridge for a quick grab and go breakfast!

Maple-Cinnamon Oatmeal Breakfast Bars

certified gluten-free old fashioned oats, divided

baking powder

salt

milk, any kind

banana (roughly 1 large banana)

coconut oil, melted

vanilla

pecan halves, roughly chopped

Preheat oven to 350 degrees then spray an 8x8" baking pan with nonstick spray and set aside.

Add 1 cup old fashioned oats to a food processor or blender then process until oats have turned into flour. Set aside. (Alternatively you could use a scant cup oat flour.)

Add milk, mashed banana, maple syrup, coconut oil, egg, and vanilla to a large bowl then whisk to combine. Add remaining 1-1/2 cups oats, oat flour, cinnamon, baking powder, and salt then stir to combine. Fold in chopped pecans then pour batter into prepared baking pan.

Bake for 35-40 minutes, or until the edges are golden brown and the center has set. Check on the bars at the 25 minute mark - if the edges are browning too quickly, place a piece of foil on top of the baking pan. Cool before slicing into bars then store in the refrigerator, or individually wrap bars in saran wrap and freeze.

Oatmeal Breakfast Bars

old fashioned oats

whole wheat flour

milk

honey*

Place rack in the center reheat oven to 375 degrees. Lightly coat an 8x8 inch square pan with cooking spray.

In a medium bowl, stir together the oats, whole wheat flour, cinnamon, baking powder, and salt. In a separate large bowl, combine the milk, applesauce, egg, honey, peanut butter, and vanilla.

Pour the dry ingredients into the wet mixture and stir to combine. The batter will be very wet. Fold in the diced banana, then pour into the prepared baking pan.

Bake for 35 minutes or until thickened and golden and a toothpick inserted in the center comes out clean. Cool, cut into bars, and serve.

Tbsp sliced almonds

Tbsp chocolate chips

Preheat oven to 375 degrees.

Mix all ingredients together.

Place the mixture on an oiled baking sheet and bake for 25 minutes (or until the bars can hold their shape).

Remove, let cool, and slice into bars.

Serve and enjoy or save for later!

Mix together all the ingredients in a bowl. Add a sheet of parchment paper to a 9 x 9 pan. Place the ingredients in the pan and press it into an even layer. Use a small glass to roll over the top to get it smooth. 

Freeze the bars for 15 minutes. Remove the pan from the freezer and use the parchment to lift it out of the pan. Cut into 16 squares or 32 rectangles. Store refrigerated for up to 2 weeks. You can eat right away, or refrigerate for about 1 hour for a more solid texture.
