Old Fashioned Cocktail (Difford's recipe)

Bourbon whiskey

ml Whiskey - Rye whiskey (100 proof / 50% alc./vol.)

ml Demerara/Muscovado/brown sugar syrup (2 sugar:1 water)

Abbott's bitters

STIR all ingredients with ice and strain into ice-filled glass

Old-fashioned slow-cooked corned beef

Corned beef, preferably home-killed (Main)

Onion

Cider vinegar

Cloves, whole

Tbsp Golden syrup

Place all ingredients in the crockpot, cover with cold water

Serve with boiled potatoes and steamed brussels sprouts, drizzled with a sauce of melted butter, balsamic vinegar and honey.

Old-fashioned fish cakes

500 g Agria potatoes (Main)

450 g Smoked fish (Main)

g Butter

Spring onions

Tbsp Parsley

& pepper

Tbsp Milk

Breadcrumbs

Tbsp Olive oil

Cook potatoes, such as Agria, peeled and coarsely chopped in boiling, salted water until tender. Drain well and mash. Beat in melted butter, then set aside to cool.

Stir drianed and flaked fish fillets, finely chopped spring onions and chopped parsley into the potatoes. Season well with salt and pepper. Form mixture into eight thick patties.

Beat egg and milk together in a bowl. Spread breadcrumbs out on a tray. Dip patties in egg mixture and then roll in crumbs, pressing well to coat.

Heat a nonstick frying pan, add a little oil and gently fry fish cakes over a medium heat for 3 to 4 minutes on each side until golden brown, adding more oil as necessary.

Old-fashioned tomato and onion 'pie'

Large onion, roughly chopped (Main)

tomatoes,

150 g Cherry tomatoes

parmesan cheese

Butter,

Salt and black pepper

Preheat an oven to 180C. Grease an ovenproof baking dish with butter.

Into the dish place the chopped onion and tomatoes. Sprinkle over the breadcrumbs and parmesan cheese. Dot over the butter, then season generously with salt and pepper. Place into the oven and bake for 40 minutes until the mixture is soft and squishy, and the top is lightly golden.

Serve hot with your choice of barbecued meat.
