Olive Oil and Cocoa Brownies

all-purpose flour

cocoa powder

salt

eggs

sugar

extra virgin olive oil

vanilla extract

cacao nibs (optional)

Heat oven to 325 degrees with a rack positioned in the center.

Coat an 8-inch square baking pan with olive oil. Cut a piece of parchment to fit just the bottom of the dish and oil that too.

Sift the flour, cocoa and salt into a bowl ( a mesh strainer is perfect for this job).

Beat the eggs in the bowl of a heavy duty mixer fitted with the paddle attachment on medium speed for a minute. Increase speed to medium-high while adding the sugar 1/2 cup at at time. Beat until the eggs are pale, thick and creamy.

Decrease mixer speed and slowly add the oil in a thin stream, as if you were making an emulsion like mayonnaise. Add the vanilla extract.

Stir the flour mixture into the egg mixture in 3 or 4 additions until just incorporated, scraping down the bowl as needed.

Scrape the batter into the prepared baking dish and sprinkle the cacao nibs over the top, if using.

Bake 30- 35 minutes, or until a toothpick inserted into the center of the brownies emerges with some moist crumbs.

Cool the pan completely on a rack before cutting into serving pieces.

Fudgy Olive Oil Brownies that are also dairy free.

Olive Oil Brownies

120 ml (1/2 cup) olive oil

(3/4 cup) caster sugar or granulated sugar

(1/2 cup) brown sugar

(1/2 cup) cocoa powder, sifted

(1/2 cup) plain flour flour

(1/2 cup) chocolate chips*

Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Line an 8-inch square baking tin with baking or parchment paper.

In a large mixing bowl, add olive oil, vanilla and sugars and mix briefly.

In a separate bowl, add eggs and whisk with a fork for approximately 30 seconds or until combined.

Add eggs to sugar mixture, along with cocoa powder, flour and chocolate chips. Gently mix with a spoon or spatula to combine. Pour into prepared tin.

Bake for approximately 28-30 minutes or until a knife inserted in the middle comes out clean. Leave to cool slightly before removing from pan. They will firm up as they cool. Serve with ice cream or whipped cream.

Deliciously easy Olive Oil Brownies made from scratch.

These super fudgy salted olive oil brownies are simply heavenly! Made with cocoa, dark chocolate, and chocolate chips with a hint of earthiness from olive oil, they are rich, decadent, and chewy with a crackly crust topped with flaky sea salt. All with just one bowl, one pan and naturally dairy-free!

Fudgy Salted Olive Oil Brownies

oz unsweetened chocolate

espresso powder

eggs egg

tsp vanilla extract

whole wheat pastry flour (or all purpose flour)

tsp fine sea salt

chocolate chips (dairy-free if necessary)

Flaky sea salt,

Heat oven to 350°F. Line an 8x8-inch metal baking pan with parchment or grease with oil.

In a microwave-safe bowl, melt the unsweetened chocolate in 30-second intervals in the microwave, stirring between each until just melted and smooth.

Add cocoa powder and espresso powder. Whisk until combined.

Add eggs, egg yolk and vanilla. Whisk well - at least 100 strokes to help form a crackly crust.

Spread batter into prepared pan. Bake 20-25 minutes, or until just barely set. They will look underdone when you pull them out but will set as they cool.

Sprinkle with flaky salt and cool before cutting.
