Omelette with Beet Greens Recipe

beet greens (and thin sliced tender stems)*

garlic

olive oil

Parmesan cheese

eggs

butter

Kosher salt and fresh ground black pepper

Saute the filling

In small 8-inch nonstick skillet, heat the olive oil over medium high heat. Add the greens and cook for about 1 minute. Just before tender, add the garlic, Parmesan cheese, and 1 pinch kosher salt and cook until just bright green. Remove from the heat, and remove the greens to a bowl. 

In another small bowl, whisk the eggs, 1/2 teaspoon water, 1/8 teaspoon kosher salt, and a few grinds of black pepper until fully combined, about 20 seconds.

Cook the omelette (takes about 1 minute total)

Heat the same nonstick skillet over just below high heat, with the pan handle facing towards you. Add the butter and swirl the pan to fully coat. Wait until the butter starts to become foamy with large bubbles, then pour in eggs. When a skin just starts to form (10 to 15 seconds), add the greens in a line from left to right.

Run a small spatula under the far edge of the omelette to release it from the pan. Start to pull the eggs up and shake and tilt the pan to spread out any uncooked egg and allow it to cook. Using the spatula, roll the eggs up and over the cheese. Cook another 10 to 15 seconds until just barely set. The outside should be a pale golden and the inside soft and creamy (for a harder cooked omelette, you can cook it several seconds longer). Turn off the heat.

Flip the omelette out of the pan

Hold a plate in one hand. Pick up the pan with your right hand, thumb up, and quickly turn the pan upside down over the plate so that the omelette rolls off onto the middle of the plate, folding over itself into a rolled shape. Serve immediately.

How to Make an Omelette

Beat eggs, milk, and salt &amp; pepper with a fork until the yolks are completely incorporated. Set aside.

Melt butter in a 6” skillet over medium medium-low and add egg mixture. Allow to cook about 1-2 minutes.

Gently run a spatula along the edges moving the cooked egg away from the edges while tilting the pan and letting the raw egg run underneath the cooked egg. Repeat as needed until the eggs are almost set.

Once the eggs are almost set, add cheese (and other toppings as desired) and cover.

Cook until the top is set and cheese is melted, about 3 minutes.

Fold in half and serve.

In a small mixing bowl, beat together eggs and a pinch of salt until foamy.

Place a small nonstick skillet over medium heat and swirl in 1/2 Tbsp butter. Once butter is melted and bubbling, add frothy eggs to the skillet and immediately reduce the heat to low.

Use a spatula to pull the cooked eggs into the center, letting the liquid egg fill the space behind it. Continue going around the pan, pulling the eggs towards the center until the eggs are nearly set.

Once the omelette is sliding around the pan easily and you can get a spatula underneath, flip the omelette over and turn off the heat.

Sprinkle cheese over the egg and add your favorite toppings. Fold the omelette in half and slide it onto your plate then garnish as desired.

Easy Omelette Recipe (4 Ways)

A quick and tasty breakfast that will keep you going till lunchtime.

Make 4 pieces of each cheese slice and keep on a plate.

Apply butter to pav/white rolls and roast them on medium heat (inner side down) till golden brown.

Flip them over and place cheese pieces and cook for another minute. Then keep aside.

Add butter, onions, green chillies, salt and mix well.

Break 2 eggs and sprinkle salt, onions, red chilli flakes, cheddar cheese and cilantro.

Cover and cook on low heat till egg white is just done.

Remove the lid, loosen edges and place the eggs on pav/white rolls.

Egg white should be completely cooked and egg yolk should be runny.

If you do not prefer runny yolk, cook eggs a bit longer till yolk is completely cooked.

Crack the eggs into a medium bowl and whisk until the egg whites and yolks are well combined. Season with salt.

Heat an 8-inch nonstick skillet over medium heat. Add a small pat of butter or a drizzle of olive oil to the pan and swirl to coat the bottom. Pour the eggs into the pan and reduce the heat to medium-low. Cook without stirring until the edges just begin to set, about 10 seconds. Working around the edges of the omelette, use a spatula to quickly push the cooked egg toward the center of the pan. Let the uncooked egg run to the outside of the pan, tilting the pan as necessary. Continue until the uncooked egg thickens and fills in the edges of the omelette slowly, then use the spatula to gently smooth the raw egg into an even layer.

Cook without stirring until the omelette is mostly set, then add your desired filling on one side and fold the other side over it. Cook until the eggs are just set. Remove from the heat, season to taste with salt and pepper, and serve.
