An easy Thai vegan curry with zucchini, fresh tomatoes and coconut milk that&#x27;s a one dish meal and cooks in less than 30 minutes. The easy zucchini curry recipe is also paleo, low carb, keto and gluten free.

Vegan Thai Zucchini Curry

Tbsp coconut oil

yellow onion, diced (about 1.5 cups)

garlic

tsp fresh ginger, minced

cherry tomatoes,

Zucchini,

coconut milk

Tbsp red curry paste

Tbsp coconut aminos, tamari, or soy sauce

tsp rice wine vinegar (or apple cider vinegar)

Tbsp Sweetener (optional)

Garnish with: chopped fresh cilantro or basil slivers

Since this is a quick and easy vegan curry that comes together fast, you'll want to prep all the ingredients and have them ready to go. On a clean cutting board, dice and slice the vegetables as mentioned in the ingredient list. 

Heat a large skillet over medium heat and...

Heat a large skillet over medium heat and add the coconut oil. Once the coconut oil is melted, add the chopped onion and sauté for 5 minutes until it starts to soften. Add the garlic and ginger, cooking for 1 more minute.

Add in the chopped zucchini and halved cherry...

Add in the chopped zucchini and halved cherry tomatoes with 1/4 cup water. Cook the dish covered for 5 more minutes until the vegetables are soft and the tomatoes are breaking down.

Remove the lid and turn up the heat...

Remove the lid and turn up the heat to medium-high. Finish cooking the vegetables until the zucchini is all the way cooked through (about 3+ minutes more). There will be some liquid on the bottom of the pan but some of it will have cooked down.

Add the 1/2+ can of coconut milk, using mostly the coconut cream and saving the remaining can for another use. Also add in chili paste and soy or coconut aminos.

“Crisper” Chopped Salad with Tahini Dressing

lemon juice 60 mL

olive oil 30 mL

tbsp tahini paste 30 mL

garlic,

tsp each ground cumin and salt 2 mL

grape tomatoes 250 mL

chickpeas, drained and rinsed 540 mL

tsp za’atar seasoning (optional) 10 mL

pita breads, toasted and cut into triangles

Whisk together lemon juice, oil, tahini paste, garlic, cumin and salt. Toss with chopped "crisper" vegetables, tomatoes and chickpeas.  

Sprinkle salad with za’atar seasoning, if using. Serve with toasted pita triangles.

This one dish meal is perfect for a cold winter night and can be made in a slow cooker if you prefer.

Layered One Dish Supper

oz tomato soup

oz condensed cream of mushroom soup

Preheat oven to 375°F .

Layer meat in a large casserole dish then layer vegetables in the following order on top of the meat - onion, celery, potatoes, and carrots.

In a bowl combine soups and water and season with salt and pepper; pour in a casserole dish evenly over contents.

Cover and bake at 375°F for at least 3 hours until vegetables are tender.

Pork Stir-Fry with Broccoli &amp; Mushrooms

vegetable oil 30 mL

oyster mushrooms 250 mL

onion,

6.5 oz pork tenderloin,

broccoli florets 500 mL

water chestnuts, drained 125 mL

chicken broth 60 mL

tsp toasted sesame oil 2 mL

tbsp sesame seeds,

Heat oil in a very large high-sided skillet or wok over high heat. Add the mushrooms; cook, stirring, for about 1 min. 

Add the onion and garlic. Cook, stirring constantly, until slightly softened, about 5 min. Add the pork and broccoli; cook, stirring constantly, until the pork begins to brown, about 5 min.

Add the water chestnuts, broth and sesame oil; cook for 2 min. Garnish with sesame seeds. Serve on its own or with rice, rice noodles or quinoa.

Citrus Rubbed Chicken Dinner Salad

lemon juice

Tbsp. grated lemon peel

Combine lemon juice, oil, lemon peel and Knorr® Chicken flavor Bouillon in small microwave-safe bowl. Evenly coat chicken with 2  tablespoons Bouillon mixture.

Grill or broil chicken, turning once, until chicken is thoroughly cooked, about 20 minutes. Microwave remaining Bouillon mixture at HIGH 30 seconds; stir.

Remove chicken from bone, then slice. Toss lettuce, tomato, cucumber and onion with warm Bouillon mixture in large salad bowl or platter, then top with chicken. Garnish, if desired, with chopped fresh cilantro. Serve with rolls.

One Skillet Salmon with Lemon Orzo

salmon fillets

salt (divided)

tsp black pepper (divided)

tsp sweet paprika

garlic powder

unsalted butter

yellow onion (finely chopped)

dry orzo pasta

thyme

baby spinach

juice from ½ lemon

Parmesan

black pepper (for servng)

chili flakes (for serving)

Get your prep done before you start cooking: Grate the Parmesan cheese, finely chop the onion and mince the garlic cloves. Pat the salmon fillets dry with a paper towel. Season both sides with garlic powder, sweet paprika and ½ teaspoon salt and pepper.

Heat oil and butter over medium high in a large nonstick pan or skillet. Add salmon fillets and sear, 3-4 minutes per side. Remove from skillet and set aside.Reduce heat to medium, add garlic and onion. Cook until soft and fragrant for about 2 minutes. Stir in thyme and the remaining salt and pepper. Add orzo and toast for 1 minute.

Pour in broth and bring to a boil. To maintain a simmer, reduce the heat to medium-low. Cook uncovered while stirring occasionally to prevent the orzo from sticking, until almost al dente and most of the liquid is absorbed, about 8 minutes.

Add spinach, stir and simmer until wilted for about 2 minutes. Stir in lemon juice and Parmesan. Add more broth, if needed. Taste and adjust salt.

Return salmon to the skillet and simmer for 2-3 minutes, or until the salmon is heated through.

Top with freshly ground black pepper and chili flakes. Enjoy!
