This creamy orzo pasta with roasted butternut squash, kale, fresh sage and Parmesan cheese is  a delicious and nutritious dinner option.

Creamy Orzo Pasta with Roasted Butternut Squash

butternut squash (Large, approximately 2 lbs)

salt and pepper

shallots

garlic

sage

orzo

litre +250 milliliters/5 cups vegetable stock plus 0.5 cup if needed

grams/1cup kale, chopped (I used cavolo nero)

Parmesan cheese

Preheat oven to 200C/400F.   Peel, de-seed and cut butternut squash into bite-sized cubes, season with salt, pepper and 1 tbsp of olive oil or low calorie spray. Arrange on a shallow pan, scatter 4-5 sage leaves throughout and roast at 200C/400F for 45 minutes or until golden.

20 minutes before the squash is done, heat 1 tbsp of olive oil in a deep pan and saute chopped shallots, garlic and remaining minced sage leaves over low heat for 2-3 minutes.

Add vegetables stock, salt and kale, bring to a boil, add orzo and cook according to package instructions for approximately 7-8 minutes until tender but al dente. Stir the orzo throughout the cooking process to release starch and to avoid it sticking to the bottom of a pan. If the mixture looks too thick add 1/2 cup of vegetable stock or water to maintain creamy, risotto like consistency. Take off the heat and stir in Parmesan cheese, salt to taste and top with roasted butternut squash.

Orzo Pasta Recipe with Spinach and Parmesan

Mexican Beef and Rice One - Pot Meal

beef

yellow onion, diced

brown rice

tsp cumin

tsp salt

garlic powder

tsp chili powder

chicken broth

salsa

corn, drained

can black beans, drained and rinsed

cherry tomatoes, sliced

Mexican style cheese

To a large pot or dutch oven over medium high heat add the ground beef and onion break the ground beef up and cook it through. Once cooked remove any grease in your pot.

Stir in the rice. Stir in the seasoning, broth, salsa, corn, black beans, stir well simmer on a low heat covered for 15-20 minuets (stirring occasionally) or until the rice is tender.

Stir in the cherry tomatoes and cheese once the cheese melts enjoy with your favorite taco toppings.

Sausage and Tomato Gnocchi

lb Italian sausage

white onion, diced

Italian seasoning

tsp pepper

tbs minced garlic

heavy cream

tomatoes

potato gnocchi

spinach

mozzarella cheese

To a large pot or dutch oven over medium heat add the onion, sausage, seasonings, and minced garlic break the sausage up and cook it through. Once cooked remove any grease in the pot. Stir in the heavy cream, diced tomatoes, gnocchi, and spinach simmer for 12-15 minutes stirring frequently.

Stir in the mozzarella cheese. Once it melts down enjoy!

Ham and Noodle One Pot meal

olive oil

lb precooked ham steak, diced

parsley

basil

oregano

all purpose flour

milk

dry penne pasta

sweet peas

parmesan cheese

To a large pot or dutch oven over medium heat add the oil once hot add in the onion and ham cook stirring frequently for 5-7 minutes or until the ham is a nice golden color.

Stir in the minced garlic, and all of the seasonings. Stir in the flour for 1 minute so it no longer appears as white. Slowly stir in the broth *Make sure do stir it in slowly so no clumps appear* stir in the milk bring this up to a simmer then add in the pasta. Simmer for 15-20 minutes or until the pasta is cooked while simmering if the liquid line gets too low add in 1/2 cup of water in at a time until the pasta becomes tender.

Stir in the frozen peas and let them simmer in the pot for 2-3 minutes. Stir in the parmesan cheese. Enjoy!

Southwestern Black Bean Skillet 

red bell pepper, diced

tbs taco seasoning

can corn, drained

To a large skillet or dutch oven over medium heat add the oil once hot add the pepper and onion in cook the vegetables for about 7 minutes or until they get soft.

Stir in the minced garlic for 20 seconds so it becomes fragrant. Add in the seasoning, and orzo stir well. Add in the black beans, corn, broth, and Rotel stir well cover with lid and let simmer on low for 15-20 minutes stirring frequently until the orzo is tender.

Stir in the cheese once it melts down enjoy this dish with your favorite taco toppings.

One Pot Cheesy Chicken Parmesan 

lb chicken breast, cubed

salt

onion powder

dry rigatoni pasta

marinara sauce

mozzarella cheese, shredded

To a large skillet or dutch oven over medium heat add the oil once hot add the cubed chicken, and all of the seasonings in. Stir well and let the chicken cook through.

Stir in the minced garlic. Now add in the pasta, marinara sauce, and chicken broth stir well and let simmer covered for 15-20 minutes string occasionally until the pasta is tender. Stir in the cheese and enjoy!

Ounces Orzo Pasta ((Cooked))

Cup Olive Oil ((divided))

Toss cooked orzo with 2 tablespoons of the olive oil. Chill.

In a separate bowl, whisk together the red wine vinegar, olive oil, lemon juice and sugar.

Chop the basil leaves and add in. Stir in a pinch (approximately 1/4 teaspoon) of sea salt and fresh ground black pepper.

Combine the orzo, dressing, tomatoes and feta.

Stir until the dressing coats the pasta.

Refrigerate until serving.

Creamy Broccoli Orzo

Combine the vegetable broth, milk, and broccoli in a medium saucepan and bring to a boil. Reduce the heat to medium-low and simmer for 2 minutes.

Add the orzo, salt, pepper, and turmeric and cook for 8-10 minutes, stirring occasionally.

Now add the Parmesan and keep cooking for another minute. Turn off the heat and serve.

This easy, one-pot Mediterranean orzo pasta is a healthy vegetarian recipe, known as orzotto or orzo risotto. Give it a try, it&#39;s delicious!

Transfer the olive oil and the leeks to a deep saucepan or large skillet and heat over medium-high heat, stirring often, until the leeks soften and are translucent.

Add the orzo pasta, the thyme and the vegetables and stir for 2 minutes. Then, start adding the stock or water gradually, one cup at a time and reduce the heat to a low simmer.When you have used about 6 cups of stock taste the orzo to see if it&#39;s ready. It should be soft but still chewy (al dente). If it needs more time to cook, add more water accordingly.

When the orzo is ready it should have some liquid left in the form of a starchy sauce. If it&#39;s too dry add a splash of water.Remove the pot from the heat and add the yogurt, the parmesan cheese and the freshly ground black pepper. Stir gently to combine, taste and adjust the salt.Optionally, sprinkle some chopped parsley on top and serve immediately.
