This easy, one-pot orzo pasta recipe with spinach and sundried tomatoes is perfect served with crispy chicken thighs for a delicious dinner.

Tomato Spinach Orzo Pasta with Crispy Chicken Thighs

chicken thighs

salt (to taste)

onion (finely chopped)

garlic

sundried tomatoes (chopped)

baby spinach

basil (chopped)

orzo pasta

chicken stock

salt

½ tsp pepper

Preheat the oven to 200°C/390°F.

Pat the chicken thighs dry with paper towels then season generously with salt.

Place the thighs, skin-side down, in a large pan. Place the pan over medium heat then allow to cook for 10 minutes until the skin is crisp and golden.

Turn the thighs over and cook for another 5 minutes. Remove the chicken from the pan and set aside. 

In the same pan, cook the onion and garlic until soft and fragrant. Add the sundried tomatoes and spinach and cook until the spinach has wilted.

Add the orzo and basil then stir to combine then pour in the chicken stock and season with salt and pepper.

Place the chicken thighs on top of the orzo then place in the oven and allow to cook for 10-15 minutes until the orzo and chicken are cooked through.

Remove from the oven and serve with lemon wedges.

Mediterranean-Style Toasted Orzo with Parmesan and Sundried Tomatoes

extra virgin olive oil

In a large saucepan, eat 2 tablespoons extra virgin olive oil over medium-high. Add the orzo and cook, tossing around, until toasted to a beautiful golden brown.

Add at least 7 cups of boiling water to the saucepan and season well with kosher salt. Cook the pasta in boiling water to al dante according to the package instructions (about 7 to 8 minutes).

Just before the pasta is fully cooked (about 5 minutes), take a cup of the starchy pasta water and save it aside for now.

In a large pan, warm 1/2 cup extra virgin olive oil over medium heat. Add the garlic and season with a pinch of kosher salt and red pepper flakes, if using. Cook, tossing regularly, until just fragrant. Add the lemon juice and 1/2 cup of the pasta cooking water. Raise the heat if needed to bring to a boil. Add the parsley and dill.

When the pasta is ready, drain and add it to the pan and toss to combine. Season with kosher salt and black pepper. Add the sundried tomatoes and a bit of the grated parmesan. Toss to combine. If needed, add a little more of the pasta cooking water. Finish with more Parmesan and red pepper flakes, if you like.

Toasted Orzo

This creamy Lemon Chicken Orzo is made with a creamy lemon sauce, rotisserie chicken, and fresh basil on top for a pop of flavor!

Lemon Chicken Orzo

Tablespoon butter, salted

Tablespoon miced garlic

orzo pasta, uncooked

water

¼ teaspoon ground pepper

chicken bouillon

onion powder

milk

parmesan cheese

chicken

basil

In a medium cooking pot (or large frying pan with lid), melt butter over medium heat and add minced garlic. Stir and cook until fragrant, 1-2 minutes.

Add orzo pasta, water, salt &amp; pepper, chicken bouillon, and onion powder and mix well. Cover and simmer 8-10 minutes until pasta is tender, stirring occasionally.

Turn to low heat and add in milk and parmesan cheese and mix well.

Add in lemon juice and shredded chicken and mix in gently. Last sprinkle lemon zest and chopped basil over top of pasta and serve warm. Enjoy!

Delicious!  I swapped oat milk for regular milk for my lactose intolerant family and added a little extra butter to compensate.  I also added in a bunch of fresh spinach at the end.

Oh boy oh boy I just barely learned how to brine lemons for storing and needed a savory recipe to try them in, this is perfect!
