There’s something about baked fish dinners that always wins. They’re easy, quick, light and super delicious! Today’s oven baked fish is loaded with flavors of the Mediterranean and it’s a simplified version of a family classic.

Mediterranean Baked Fish

olive oil

garlic

thyme

baby tomatoes (whole)

Pieces of Haddock fillets

salt and pepper

chilli flakes (optional)

Mezzetta sliced jalapeños

Mezzetta capers (drained)

Preheat the oven to 450 degrees F.

Place the baking dish with the olive oil in the oven to preheat for 6-8 minutes.

In the meantime season your fish with salt, pepper and chilli flakes.

Once the pan is preheated, immediately add in the garlic slices, half of the thyme sprigs, the tomatoes, fish fillets, and Mezzetta olives.

They will sizzle slightly and the aromas will begin to infuse.

Continue by topping the fish with Mezzetta sliced jalapeños and capers.

Drop the oven to 375 degrees and bake the fish for 15-18 minutes depending on the size of your fillets.

If you want a charred look to your fish, switch to broil after 15 minutes of baking and broil for 2 minutes.

Once the fish is ready, take the flavorful olive oil around the fish and drizzle it over the fish.

Garnish with the remaining fresh thyme sprigs and enjoy!

Oven-Baked Fish (with Lemon)

¼ tsp black pepper (to taste)

Combine the seasonings in a small bowl.

Spray a baking dish with cooking spray, or grease with olive oil

Prep

Place fish in a greased baking dish and sprinkle with the seasoning mix.

Grate lemon zest over the top of the fish

Drizzle with butter

Grate parmesan over the top.

Cover with foil and bake at 350 degrees F for 15-20 minutes or until fish flakes easily with a fork.

For the Fish

Serve with extra lemon butter from the baking pan.

Sprinkle with parsley and extra parmesan if desired.

Devour.

Crispy Baked Fish (20 minutes)

(450 grams) white fish, skinned,

(119 grams) Panko breadcrumbs ((or finely crushed Ritz cracker/cornflakes))

butter (use 1 1/2 tbsp for extra buttery crumbs)

Cajun seasoning, Note 2 (or Old Bay)

mayonnaise (light is fine)

Dijon mustard

lemon juice

lemon wedges

dipping sauce options, Note 3

HEAT OVEN TO 425F/217C. Line a rimmed baking sheet with parchment paper and place a grill/rack on top. Spray rack with cooking spray for easy clean up.

TOAST BREADCRUMBS: Pan fry Panko crumbs with butter, lemon zest and Cajun seasoning over medium heat in a large pan for about 5 minutes or until golden brown, stirring occasionally. Be careful not to burn them. To toast crumbs in oven instead: place crumbs on pan and bake in heated oven for 5-7 minutes, shaking half way through, until golden brown.

COAT FISH WITH MAYO, THEN PANKO: Stir mayo mixture ingredients together in a shallow dish and brush on fish in a thin layer on both sides. Sprinkle one side lightly with salt and pepper (skip if cajun seasoning is salty). Then dip pieces of fish in crumbs, patting to help adhere crumbs to fish. Place fish on the rack on top of baking sheet in a single layer. Sprinkle any remaining crumbs over fish.

BAKE: Bake fish in middle rack of oven for 7-10 minutes, depending on thickness of fish. One inch (2.5cm) thick fish will take about 10 minutes. Half inch, about 7-8 minutes. An instant thermometer will read 135F/57C. The fish should flake easily and be slightly translucent (not dry). Serve with lemon wedges and your preferred dipping sauce (note 3).
