Remove the giblets from the chicken cavity. Pat the chicken dry all over with paper towels, including the cavity.

Generously season the entire chicken with salt and pepper. With the tip of a toothpick, poke the skin of the chicken all over, creating at least 20 tiny holes.

Transfer the chicken to a rimmed baking dish and let sit in the refrigerator, uncovered, for 8-12 hours.

Remove the chicken from the refrigerator and let it warm to room temperature for 1 hour.

Truss the chicken legs. Using butcher’s twine, tie the legs together, then slip the twine under each leg, pull up to the top of the chicken, and flip the bird over. Pull the twine under the wings, loop around the neck, and then tie to secure and cut off any excess twine. Flip the bird over again and tuck the wings under the breasts.

Set the chicken, breast-side up, on a roasting rack set over a roasting pan.

Roast for 1 hour, or until a meat thermometer inserted in the thickest part of the chicken reaches 165˚F (75˚C).

Let the chicken rest at room temperature for 20 minutes.

To carve, remove the twine. Using a sharp knife, cut between the leg and the breast. When you reach the joint, bend it back and cut right through. Twist off the wings. To remove the breasts, cut straight down along the keel bone. Then, angling your knife outward, remove the breast. Break the legs down into thighs and drumsticks, if desired. Pull off the oysters from the underside of the chicken.

If you’d like, make chicken stock from the carcass. Add the carcass to a large pot with onions, celery, carrots, garlic, and other aromatics of your choice. Cover with water and bring to a boil over high heat. Reduce the heat to low and simmer for about 8 hours, skimming off the fat as needed. Store in the fridge for a few days or freeze for a few months.

Preheat oven to 450 degrees, spray the bottom of a large casserole dish with olive oil spray.

Mix the ingredients for the chicken breast rub together in a small bowl, then sprinkle over the chicken breasts.

Place the chicken breasts into the casserole dish and lightly spray the tips with olive oil spray.

Bake chicken breasts for 15-18 minutes. Until the juices run clear and the internal temp is 165 degrees.

Start by preheating the oven to 425 degrees. Prepare the chicken breast. If you are using thick chicken breasts, either butterfly the chicken by cutting in half lengthwise or use a mallet or rolling pin to pound the chicken into thinner pieces. I prefer to buy the thin sliced chicken breasts.

Make the spice rub. In a bowl, stir together the salt, garlic, powder, onion powder, chili powder, paprika, and brown sugar.

Line a baking sheet with foil or parchment paper. Lightly drizzle the chicken with olive oil. Toss the chicken in the seasoning or press into the chicken, coating both sides of the chicken. Place on the baking sheet.

Bake for 14-18 minutes, depending on the thickness of the chicken breasts. A meat thermometer is so helpful to determine when the chicken is done. The chicken is fully cooked at 165 degrees. You want to ensure that it is fully cooked and no longer pink.

Remove from the oven and let rest for 10 minutes before slicing. This is an important step to allow the juices to seep into the chicken.

OPTIONAL: if you want more of a sear on your chicken, heat a large skillet over medium-high heat. Drizzle with oil. Cook the chicken for 2 minutes per side. Then transfer to the baking sheet to continue to cook in the oven. If you cook the chicken this way, you may lose some of the spices as they will fall into the skillet. You will also need to cook it for less time in the oven since the cooking process was already started.

If you want extra juicy and flavorful chicken, melt 4 Tablespoons of salted butter in a bowl. Stir in 1/4 teaspoon of garlic powder and 1 teaspoon of minced fresh parsley. Drizzle over the chicken when serving.

It’s a keeper! Super simple to whip up, juicy, and delicious. When I make it again, I think I’ll try a honey drizzle instead the garlic butter sauce. I served w mashed potatoes and whole green beans and a bowl of sliced  cukes for crunch. TY
