Tomatoes, tossed with garlic, fresh thyme, and spices, then roasted in a high-heated oven until super tender and bursting with intense, concentrated flavor. There are so many ways to use up roasted tomatoes--as a delicious side; tossed in pasta or soup; or served bruschetta-style on top of your favorite toasted bread.  Heck, you can serve them with homemade pita chips.

Quick Oven Roasted Tomatoes Recipe

lb Smaller Tomatoes, (halved (I used Campari tomatoes))

garlic cloves, (minced)

Kosher salt and black pepper

tsp fresh thyme, (stems removed)

sumac

dry chili pepper flakes,

Extra virgin olive oil,

feta cheese, (optional)

Preheat the oven to 450 degrees F.

Place the tomato halves in a large mixing bowl. Add minced garlic, salt, pepper, fresh thyme, and spices. Drizzle a generous amount, about 1/4 cup or more, quality extra virgin olive. Toss to coat.

Transfer the tomatoes to a baking sheet with a rim. Spread the tomatoes in one single layer, flesh side up.

Roast in your heated oven for 30 to 35 minutes or until the tomatoes have collapsed to your desired doneness.

Remove from heat. If you are planning to serve it soon, feel free to garnish with more fresh thyme and a few sprinkles of feta cheese. Enjoy warm or at room temperature.

There are so many ways to use your beautiful garden tomatoes! This basic roasted tomatoes recipe is one I make often to use as an easy side, delicious appetizer with pita chips, or to toss in pasta or soup! You can make it ahead and store it in the fridge for a few days.

Roasted Tomato Basil Pizza

Italian seasoning

olive oil

store bought pizza crust (11 ounce thin crust)

mozzarella cheese, shredded

Monterey Jack cheese, shredded

Slice the tomatoes into 1/8 thick slices and place on baking sheet sprayed with non-stick spray.

Season the tomatoes with salt, Italian seasoning pepper and olive oil and bake at 450 degrees for 20 minutes.

Lower the oven to 425 degrees, then spread out the pizza crust out onto a clean baking sheet spreading to the edges as much as possible. Poke holes with a fork along the top of the crust so it doesn&#8217;t bubble up.

Bake the crust for 8 minutes then remove from the oven and top with the three types of cheese and the roasted tomatoes.

Place the pizza back in the oven and bake until the cheese is melted, about 7-8 minutes.

Garnish with more parmesan cheese and fresh basil.

Preheat oven to 400°F.

Using a blender, food processor or Magic Bullet, process the bread into fresh breadcrumbs. (This took about 1 second in my Magic Bullet).

In a small bowl, combine breadcrumbs, cheese, garlic, olive oil, herbs, salt and pepper. Toss until well mixed.

Place sliced tomatoes in a shallow baking dish, season with salt &amp; pepper. Top with breadcrumb mixture.

Bake for 10-15 minutes or until crumbs are lightly browned. Be sure not to over bake so the tomatoes don’t become mushy.

This oven roasted tomato sauce is so simple, but is delicious every time. It&#x27;s perfect for pasta, pizza, stirring into soups and stews, really anything you can think of. Roasting the tomatoes brings out a rich flavor for all kinds of tasty Italian dishes. Plus, you can freeze the recipe to use it all fall and winter.

Oven roasted tomatoes will make even just-okay tomatoes taste like amazing tomatoes! We love roasted cherry tomatoes, but this recipe will work with any variety you have.

Roasted Tomatoes (Any Variety!)

garlic

balsamic vinegar

extra virgin olive oil

Arrange a rack in the center of the oven and preheat to 375°F/190°C.

Cut the tomatoes in half for quicker roasting and more caramelization. If using small cherry tomatoes or grape tomatoes, you can leave them whole. If using any tomato larger then a plum tomato, cut them into quarters or large wedges.

Transfer the tomatoes to an un-lined sheet pan, along with the garlic, shallot, balsamic vinegar, olive oil, salt, and pepper. Toss with your hands until well-combined, and spread the tomatoes out into a single layer.

Roast the tomatoes for 30 minutes, and check their progress. Continue roasting for another 5-15 minutes, checking on them every 5 minutes until they are wrinkly, caramelized, and the juices have reduced to a sauce consistency.

If the edges are burning, turn off the heat, tilt the pan so any remain liquid flows to the corners to naturally deglaze the pan. If the liquid does not flow, then your tomatoes are probably done!

I've been making a similar roasted cherry tomato recipe for years. The only difference is the lack of shallots, so I'm going to add them.  This is my favorite topping for baked potatoes, as well as toasted bread.
