The perfect nostalgic dessert for any and all occasions! These super simple homemade Banana Pudding Cups are sweet, creamy, and melt in your mouth delicious.

Homemade Banana Pudding Cups

sugar

cornstarch

milk

Tablespoons salted butter (sliced)

vanilla extract

bananas (sliced)

vanilla wafers (broken)

heavy cream (cold)

Whisk

In a medium bowl, whisk together sugar and cornstarch.

Heat

In a medium saucepan, heat milk until it starts to bubble around the edges.

Return

Cook

Cook over medium low heat, stirring continuously, until custard thickens, about 5-8 minutes.

Stir

Strain

Strain through a fine mesh sieve into a clean bowl.

Cool

Pudding

Combine

In a small bowl, combine cream, sugar, and vanilla.

Beat

Beat at high speed with an electric mixer until stiff peaks form.

Chantilly Cream

Spoon

Spoon ½ inch custard into the bottom of each glass.

Cover

Spoon another ½ inch custard on top of vanilla wafers.

Repeat

Spoon Chantilly cream on top of puddings.

Assembly

Spiced vegan banana waffles that are crispy on the outside but soft and fluffy on the inside. This delicious gluten-free vegan breakfast will become a new favourite breakfast treat in your home!

Gluten-Free Vegan Banana Waffles

unsweetened dairy-free milk

coconut oil

flax seed

bananas ((approximately 1 large banana, see note below))

gluten-free flour

baking powder

baking soda

cinnamon

nutmeg

salt

Turn oven on to "warm" setting or to 200F to keep your finished waffles warm and crispy (see link to directions for this tip above).

Turn on waffle maker to desired temperature setting. Setting will vary depending on your waffle maker and how you prefer your waffles.

Whisk almond milk, coconut oil, vanilla, ground flax seeds, and banana puree together in a medium-sized bowl, whisking enough to incorporate the flax seeds. Let sit for 5-minutes.

Whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt together in a large bowl.

Slowly add wet ingredients to the dry ingredients, mixing well until incorporated.

Ladle enough waffle mixture into your waffle maker so the bottom of the waffle maker is filled. Close waffle maker and cook according to your maker's directions.
