These homemade lemonade popsicles are super refreshing.  With just three ingredients they are easy to make and perfect to cool off on a hot day.

Lemonade popsicles

lemons

(110 gramsms) white sugar

(500 milliliterss) water

Add the sugar and one cup of water to a small pot.  Heat on low, stirring until the sugar is dissolved.  Remove from heat.

Optional: microwave the whole lemons for about twenty second to help release the juice.  Be careful when cutting in case juice bursts out.

Juice the lemons.  You will need half a cup of juice.

Add the juice to the sugar and water mix and transfer to a heat proof container.

Top up water until total volume is about 2 and a half cups (600mls).

Pour into popsicle molds, add sticks and freeze for at least 8 hours, preferably a full day to ensure they are fully frozen.

Remove from molds and enjoy!

Paletas de Fresas (Mexican Strawberry Popsicles)

Set aside 3 strawberries.

In a food processor or blender, puree the rest of the strawberries. Strain the mixture through a strainer into a large bowl. Discard the seeds.

In the same food processor or blender, add ½ cup milk and sugar. Process until the sugar has dissolved completely, about 1 minute. Add to the puree.

In the same food processor or blender, roughly blend the reserved 3 strawberries into ¼-inch pieces. Pour into the puree.

In the puree bowl, add the rest of the milk and heavy cream. Mix well. Fill the popsicle molds with strawberry mixture. If using molds that contain sticks or hold wooden ones in place, put on lids and freeze. If using open cup molds, freeze until beginning to set, about 2 hours, then insert the sticks and put back in freezer.

After about 8 hours, popsicles are ready. If the popsicles are stuck in the molds, dip the molds in warm water for 10 seconds or so. Remove molds and serve.

These simple 3-ingredient homemade strawberry yogurt popsicles are easy to make and a huge hit! All you need are strawberry slices, Greek yogurt, and brown sugar. Mix these ingredients, scoop into popsicle molds and freeze overnight for an amazing snack for hot days!

Homemade Strawberry Yogurt Popsicles

Greek yogurt, plain

strawberry slices

brown sugar

Add all ingredients into mixing bowl and gently stir until just barely combined.&nbsp;

Spoon mixture into popsicle molds and push down so that the thick yogurt mix is pushed all the way down to the bottom of the mold.&nbsp;

Put in popsicle sticks and freeze for 8 hours or overnight.&nbsp;

I have a popsicle mould and fruit and brown sugar and a freezer so guess who is making these for treats for the rest of this week?
