10-Minute Pan-Fried Chicken Breast

chicken breasts ((boneless, skinless))

Tbsp olive oil ((one

tsp kosher salt

tsp black pepper

garlic ((pressed))

parsley

tsp thyme ((dried))

tsp cayenne pepper ((plus more to taste))

Using a sharp knife, cut the chicken breasts in half lengthwise. You want to end up with 4, equally thin, chicken cutlets. Uniformly thick chicken breast will cook faster and more uniformly.

Rub the chicken breasts with one tablespoon oil, then season with salt, pepper, thyme, garlic, parsley and cayenne pepper.Tip: the seasoning mix here is fairly basic but gives the chicken good flavor. I vary it depending on what I have, or want to use, and often add fresh herbs. I find basil, oregano and coriander to be great in this recipe. Spice mixes like Italian, herbs de provence are also fabulous. If you like sesame oil, use it instead of olive oil for rubbing, but reduce the amount to about teaspoon, or to taste.

Heat one tablespoon of oil in a non-stick skillet over medium-high heat. Add the chicken breasts and partially cover the pan with a lid, leaving about a 1/2" - 1" crack.&nbsp;Tip: if using a regular skillet, double the amount of oil. You can also use 50/50 oil and butter for better flavor.

Cook for 3 minutes undisturbed. At this time you will notice that the tops of the breasts have turned white. Flip the breasts, partially cover and cook for another 3 minutes.

Remove from the pan and serve immediately or keep warm until ready to eat.

Easy Pan-Seared Chicken is easily prepared right in the skillet with a crunchy crust and lots of flavor from Italian seasoning.

Easy Pan-Seared Chicken Breasts

chicken breasts ((thin, boneless and skinless))

sea salt

black pepper

garlic powder

onion powder

Paper towel dry your thin chicken breasts (if you bought thick ones, make sure to butterfly each one). In a large bowl, combine flour, salt,  black pepper, garlic powder, onion powder and Italian Seasoning. Stir well to blend. 

Using a fork or tongs, coat the chicken breasts in the flour mixture and set aside.

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the skillet is hot, place flour coated chicken breasts in the skillet and cook for 4 to 5 minutes on each side, until golden brown on both sides and cooked through, turning once between cooking, about 8-10 minutes.&nbsp;

Remove chicken from pan and serve warm with pasta or vegetables.

Pan-fried chicken tenders are an easy and tasty way to get dinner on the table in a hurry. Covered in a crisp batter, the toothsome filets of white meat beg to be dipped and devoured.

Into a large, nonstick skillet, pour enough oil to cover the entire bottom of the pan. Set over medium heat.

Whisk

In a shallow dish or pie plate, whisk the eggs and water together until well combined.

Combine

In a medium container with a tight-fitting lid or in a large re-sealable plastic bag, combine the flour, paprika, onion and garlic powders, salt, and pepper.

Shake

Working in batches, coat the chicken tenders in the egg mixture, shake off any excess egg mixture, then place in the container or bag of seasoned flour. Tightly close the container or seal the bag, and shake gently to thoroughly coat the chicken tenders with flour.

Working in batches, if necessary, place the coated chicken tenders in the skillet, and cook until golden on the bottom, 6 to 7 minutes. Flip the chicken tenders over, and continue to cook until golden on the other side, 4 to 6 minutes more. If you have a reliable food thermometer, the temperature of the chicken should be 170°F (77°C) when it is cooked all the way through.

Remove and serve

Use tongs to carefully remove the fried chicken from the pan, place on a plate or serving platter lined with paper towels, and serve hot, with your favorite dipping sauce.

Pan seared chicken thighs are an excellent method of preparing juicy, tender chicken in a skillet. They can be ready in 15 minutes and are easily adaptable!

Heat olive oil in a large skillet over medium heat.

Pat chicken thighs dry with paper towel. Season chicken thighs with onion powder, cumin, coriander, paprika, turmeric, salt, and pepper.

Add seasoned chicken thighs to the skillet, smooth side down; cook for 5-7 minutes without moving, and then flip when the chicken easily releases on its own. Cook until the juices run clear, an additional 7-10 minutes, depending on the thickness of the chicken thighs.

Add garlic and cook until garlic is golden and fragrant, about 30 seconds. Pour chicken broth to deglaze the bottom and sides of pan with the crispy browned bits until they’re no longer sticking to the pan.

Remove from heat, spoon sauce over chicken. Garnish with fresh chopped parsley and serve immediately.

These rosemary chicken fillets with turmeric are flavoured with herbs and spice, and make for an easy weeknight dinner. Pan fried rather than baked, they are quick to make with minimal &#39;hands on&#39; cook time. A dairy-free and low histamine recipe. Serves 2 people.

Rosemary chicken fillets (pan fried)

Place the chicken breast fillets in a bowl and add the apple juice, oil, garlic, turmeric, rosemary, salt and pepper (if using). Combine so the fillets are coated in the herbs and spices. Cover the bowl and marinate in the fridge for an hour or so (low histamine readers see note above).

In a large pan, heat a little oil and then fry the chicken fillets for 4-5 minutes on each side or until they are cooked through. Use a meat thermometer for an internal temperature of 165F or ensure the chicken is white throughout.

BEST Breaded Chicken Cutlets (Italian)

chicken breasts (about 5-7 oz each breast)

butter

eggs, very well beaten

all purpose flour cornstarch

breadcrumbs

 In three separate shallow bowls place the beaten eggs, flour and cornstarch, and bread crumbs. Dry the chicken and season with salt and pepper.

Dip the chicken in the flour and set aside on a separate plate.

Then, one by one, dip the chicken breasts in the egg and lastly, the bread crumbs. If you want a thicker coating you may repeat the egg and bread crumb mixture again. This will give a thicker crust. OPTIONAL: Before cooking let chicken sit for 30 minutes, on a plate, to dry and let crust mixture harden a bit.  

 Heat large skillet (make sure the skillet is large enough to fit the four chicken breasts without them overlapping) on medium high heat. Add olive oil and butter.

Brown chicken for 4-5 minutes on each side. DO NOT turn or touch the chicken in between turning. after browned on both sides turn heat to medium- low.

Cook an addition 5 minutes until the chicken is cooked all the way through reaching an internal temperature of 160 degrees F. Take of heat and let it rest for 10 minutes before serving.

The internal temperature will then rise an extra 5 degrees F reaching a final temp of 165 degrees F. 

 Enjoy with a squeeze of lemon and an extra sprinkle of kosher salt and fresh ground pepper if desired.

Italian Pan Fried Chicken

In a medium to large-sized frying pan add 2 tablespoons olive oil, then add the chicken, sprinkle with half of the ingredients oregano, thyme, salt, rosemary leaves and garlic turn the legs and sprinkle with the remaining ingredients. 

Add the water and cover cook on high heat until boiling then lower heat to low / medium for approximately 35 minutes (check occasionally), check for doneness after 30 minutes, if cooked remove cover raise the heat and cook until water has evaporated. Once evaporated raise the heat and fry, turn the chicken pieces to brown on both sides. Serve immediately. Enjoy!

Pan Fried Stuffed Chicken Thighs (Involtini di Pollo)

chicken thighs

garlic clove, smashed flat

(120 grams) mascarpone cheese

bread crumbs, unflavored

truffle oil

sage leaf, minced

white wine

 In a small mixing bowl add the mascarpone, bread crumbs, salt and pepper, sage leaf, and truffle oil. Mix until smooth. Set aside. 

Dry chicken thighs with paper towel. Place chicken thighs flat on a cutting board and spread open. Spoon about 1 teaspoon of mascarpone filling and spread across each chicken thigh.

Add one slice of meat of choice to each chicken thigh. Roll up each chicken thigh and secure on both ends with kitchen twine (about 4-6 inches of twine per side).

Secure even more with a toothpick through the middle of the roll. Season chicken with salt and pepper to taste. 

 In a large skillet heat on medium high heat add olive oil and garlic. Add chicken rolls to pan and brown on both sides about 3-5 minutes per side.

Take the meat out of pan and place on a plate, temporarily. Deglaze the pan by adding the chicken broth and white wine.

Scrape the bottom of the pan and let it simmer on low for about 10 minutes. Add chicken back to the pan and cover with a lid. Cook on low heat for about 10 minutes until the internal temperature of the chicken reaches 165 degrees F.  

Remove kitchen twine and toothpicks before serving!

Prepare marinade

Combine oyster sauce, light soy sauce, cooking wine, salt, sugar, white pepper, and cornstarch in a small bowl.

Cut aromatics

Cut the white onion and the red onion into slices.

Debone & trim chicken

Optionally, debone the chicken, and trim the skin and excess fat. To remove the bone, angle your knife towards it and slice down both sides. When the bone is more exposed, pull it up vertically and slice around it to release it from the flesh.

Marinate chicken

Dry each piece of chicken with a paper towel, then place them into the bowl of marinade. Coat each piece thoroughly, then set aside for about 10 minutes. 

Pan-fry chicken

Heat a skillet or flat-bottomed wok on high heat. Once it’s hot, add oil.

Add aromatics & final seasoning

Make some room by pushing the chicken to the sides of the pan. Add the minced garlic to the now-vacated middle of the pan, and cook until fragrant, or 10 seconds.
