Pan-fried ocean perch fillet is covered with a thick vegetable sauce and has a savoury flavour. It might look complicated, but it is quite easy to make. Ocean Perch with Thickened Vegetable Sauce (Vegetable Ankake)

ocean perch fillet ((note1))

salt

snow peas (, diagonally sliced)

dashi stock

mirin

soy sauce

tsp cooking sake

1½ tsp cornflour/corn starch diluted in 2 tsp water

On the skin side of the fillet, score diagonally in a few places where the flesh is thick. This will allow the fillet to cook evenly.

Sprinkle salt on both sides of the fillet.

Heat a frypan with oil over medium heat.

Put the fillet skin side down. Press down the fillet for a while to prevent it from curling.

Cook for 3 minutes, turn it over and cook for about 3 minutes until the flesh is just cooked and no longer translucent (note 2).

Transfer the fish to a serving plate, skin side up.

Pour the Vegetable Sauce over the fish. Serve immediately.

Add dashi stock and all the vegetables, excluding snow peas, to a saucepan and bring it to a boil. Cook for a couple of minutes.

Add the snow peas and the remaining Sauce ingredients except cornflour/corn starch to the pan.

When it starts boiling again, add the cornflour/corn starch in a swirling motion and quickly mix the sauce. The sauce should thicken.

As soon as it starts boiling, turn the heat off.

With a good fish, well seasoned and crispy skin, I don't need a sauce....but I've added a couple in the notes just in case! :)

Use scrunched up paper towels to pat the fish dry on both sides. This is especially important if you are using thawed frozen fish.

Season the fish well on both sides with salt and pepper (key!).

Mix the flour and paprika on a plate.

Coat fish on both sides with flour, pressing down firmly so it adheres, but shake well to remove excess. (Note 2)

Heat a heavy based skillet (normal or non stick) over medium high heat until you see wisps of smoke. Add oil and swirl to coat the pan - it will heat within seconds.

Add fish - it should sizzle straight away. Shake the pan lightly to move the fish.&nbsp;Cook for 2 minutes until golden and crisp, pressing down gently, then flip.&nbsp;Cook the other side for 2 minutes until crisp then remove.

If it's browning too quickly, just remove pan from the stove briefly. &nbsp;If it's stuck, don't move - it will release naturally once golden.

Serve fish immediately with lemon wedges and garnished with dill or parsley, if using. It starts to lose crispiness after 5 minutes.

Lay fish on work surface or plate. Sprinkle on both sides with salt and pepper.

Place rice flour in a shallow dish. Dredge the fish in the flour and shake to remove excess.

Melt butter in a large skillet in a large heavy skillet over medium-high heat. Add oil and then carefully add fish fillets. Cook, adjusting heat as necessary to prevent the butter from burning. Carefully flip the fish over when it is golden on the bottom, 1 to 3 minutes.

Continue cooking until the fish is opaque all the way through, 30 seconds to 2 minutes longer, depending on thickness.

Serve immediately with pineapple salsa or transfer to a plate and tent with foil while making the caper sauce.

Pan Fried Fish

Pan fried whole fish is a dish commonly prepared by Chinese families. Pan fried fish is both simple to make and is a crispy, savory and delicious fish dish!

Pan Fried Fish: Chinese Whole Fish Recipe

Clean the fish, removing all scales, making sure to pay attention to scales on the belly, the head, and near the fins. Even if you have it cleaned at your fish market, fish mongers always tend to miss some scales. Make sure you clean out the inside of the fish as well.

Let the fish drain in a colander and pat both sides dry with a paper towel. Transfer to a plate. Sprinkle salt on both sides of both fish--use about 1/4 teaspoon in total. Set aside for 15 minutes.

Heat your wok over medium-high heat, and spread 3 tablespoons of oil around the perimeter. Add the ginger. After about 10 seconds, turn the ginger over for another 10 seconds and push them to the side. The wok should be hot but not smoking too much (an indication that the wok is too hot). The ginger should be slightly caramelized but not burned.

Use a paper towel to pat the fish dry again, and carefully place into the wok in one motion. Do not move the fish! After about 1 minute, turn the heat down to medium; you want to get a nice light crust on the skin without it burning. Tilt the wok carefully one side at a time so the oil distributes around the perimeter of the fish, including the head and the tail. You can add more oil around the perimeter of the wok if you want some extra insurance against sticking.

Continue frying the fish for 5 to 6 minutes on the first side. At this point, a light crust should have formed, and you can give the wok a little shake now--the fish should slide around easily. If not, you can use a metal spatula to lift the fish slightly and peek underneath to check the color and to make sure the fish is not sticking. The fish should be a nice golden brown.

If the fish still sticks, then you probably have the heat too low, so turn it up slightly, add a little more oil, and let it cook for another 1 to 2 minutes! Once you have the fish sliding around in the wok or pan and the first side is golden brown, then you are ready for the flip! Carefully slide the spatula under the middle of the fish on the side towards the middle of the wok and in one steady motion, lift and flip it towards the outside of the wok. Repeat the same “flip” for the other fish.

Let the fish fry on the second side for another 4 minutes and again, add some oil if you think it is necessary. While the fish is frying, dissolve the sugar and hot water in a small bowl, and add the soy sauce, white pepper, and sesame oil (if using). Set aside.

Shake the wok to make sure the fish is not stuck. Next, add the Shaoxing wine around the perimeter of the wok and let cook off for 30 seconds. Pour the soy sauce mixture around the perimeter of the wok and turn the heat back up until the sauce is simmering (about 30 seconds). Add in the chopped scallions.

Turn off the heat, and use your spatula to carefully transfer the fish to serving plates. Scoop up the rest of the remaining sauce, pour evenly over the fish and serve!

Salsa verde is the perfect accompaniment to pan fried fish - delicious, fresh flavors.

Pan-fried sea bass with salsa verde

parsley (large)

anchovy (or 2 if bigger)

capers

garlic (small)

Dijon mustard

lemon juice

olive oil

tbsp butter (a knob)

sea bass fillets

Remove the parsley leaves from the stalks. Put the parsley, anchovy fillets, capers and garlic on a chopping board and chop all together so that everything is cut up finely and starts to mix.

Transfer the mixture to a small bowl and add the mustard, lemon juice, a few grinds of pepper and the olive oil. Mix all together and refrigerate until ready to use (will keep a few hours well, a day or two not bad but not as bright colors).

Get a skillet/frying pan hot over a medium heat and add the butter.

Swirl the butter round a little so it covers all the pan then add the bass fillets, skin sound down.

Allow the fish to cook most of the way through - you will see it cook from the outside in.

When the fish is still a bit uncooked in the middle, carefully turn it over. Cook for a couple more minutes, turn back to skin side down for a minute then serve.

Stir the salsa and serve with the fish. Sides as you prefer but greens such as green beans and potatoes or salad work well.
