Muffins with Pancake Mix

pancake mix

Preheat oven to 400 degrees and line a muffin tin with 12 papers.

In a large bowl, whisk together pancake mix and sugar. Create a well in the center of the mix.

In a separate medium bowl, whisk together eggs, milk, vegetable oil, and vanilla until well combined.

Pour the wet ingredients into the well in the dry ingredients and using a spatula, mix together until just combined, taking care not to over-mix.

Fold in blueberries, chocolate chips, or any other mix-ins you desire.

Fill muffin papers about 3/4 of the way with batter and bake for about 18-21 minutes, until muffins are just turning golden and a toothpick inserted into the middle comes out clean.

Let cool in the tin for a couple minutes before moving muffins to rack to cool completely.

mashed ripe banana, (from about 2 large bananas)

Pre-heat oven to 350 degrees and lightly butter a 9x5&quot; metal loaf pan.

In the bowl of an electric mixer or in a large bowl with a hand mixer, beat butter until light and fluffy, 2-3 minutes. Add sugar and beat until well blended.

Beat eggs into mixture one at a time. Add mashed bananas and vanilla extract and mix until combined. Batter may look a bit lumpy.

With the mixer on low speed, beat in pancake mix until just combined, taking care not to over-mix.

Pour into prepared loaf pan and bake for 35-45 minutes, until edges are turning golden and a toothpick inserted into center comes out clean. Turn out onto a rack and cool.

Pancake Mix Donuts

Tbsp unsalted butter, (melted)

mini chocolate chips ((or add-ins of choice), optional)

Vanilla icing ((recipe below))

Sprinkles ((or topping of choice))

confectioners' sugar

tsp vanilla extract

Preheat oven to 325 degrees and spray a donut pan with cooking spray.

In a large bowl, whisk together pancake mix and sugar.

In a separate small bowl, lightly whisk eggs. Whisk milk, melted butter, and vanilla into the eggs, until combined.

Stir the wet ingredients into the dry ingredients, taking care not to over-mix. Gently fold in chocolate chips or your add-ins of your choice.

Fill each cavity in donut pan about ¾ of the way with batter. I recommend putting the batter in a plastic bag and cutting off the corner to pipe it into the pan (you can also use a pastry bag).

Bake donuts for 9-11 minutes, until they&#39;re light and springy to the touch. Let cool in the pan for a few minutes and then remove to a wire rack to cool completely. If you only have a 6-cavity donut pan, repeat with remaining batter.

When doughnuts are cooled, dip upside down into icing to coat the tops. Add sprinkles or topping of choice.

In a medium bowl, whisk confectioners&#39; sugar, 2 Tbsp milk, and vanilla extract together until well combined.

If you want your icing to be thinner, add remaining Tbsp milk a little at a time until desired consistency is reached.

Vanilla Icing

I'm using protein waffle mix and adding blueberries. It was absolutely delicious and high protein for my littlest.

First time making this recipe I used silicone donut molds. I'm going to try metal non stick donut pans next time. Secondly, it took 20 minutes to bake them instead  of 10. That may be due to the silicon. The vanilla icing has too much vanilla in it, and just didn't taste right. My grandson, however, loved them.
