Black Pepper Chicken Stir Fry

chicken thighs ((or breasts))

onion,

(1/3-inch

soy sauce

rice vinegar

cornstarch

ginger

garlic powder

red pepper

liquid smoke

peanut oil ((or coconut oil))

black pepper ((use a pepper mill))

water

In a medium bowl, mix the soy sauce, rice vinegar, cornstarch, ginger, garlic powder, crushed red pepper, and liquid smoke.

Chop the chicken thighs into small bite-size pieces, no more than 3/4 inch. (Panda express uses very small pieces.) Place the chicken pieces in the marinade.&nbsp;

Allow the chicken to marinate at least 10 minutes, but longer is better. Meanwhile, chop the onions and celery. Grind the pepper on the largest setting. If you use pre-ground fine pepper the taste will be too powerful.

Place a wok (or large skillet) over high heat. Add the oil. Once it's hot, stir fry the onions and celery for about 1 minute. It should be just starting to cook, and still firm. Quickly remove from the wok.

Remove the chicken from the marinade with a skimmer, reserving the marinade for later use. Place the chicken in the hot wok. Stir fry for 2 minutes, stirring.&nbsp;

Whisk the marinade and pour it in the wok. Add the black pepper. Stir as the sauce thickens. If it thickens too much, add 1/4 cup water at a time to loosen the sauce until it's the right consistency. It should be thick enough to coat the chicken, but not gummy. Stir in the onions and celery. Simmer another 1-2 minutes. Serve warm.

In a small bowl, whisk together soy sauce, sugar, cooking wine, oyster sauce, hoisin sauce, garlic, ginger, green onions, and sesame oil; set aside.&nbsp;

Prepare lo mein noodles by placing them in large pot of boiling water. Cook according to package directions. When noodles are done, drain and rinse them. 

Heat 2 tablespoons of oil in a wok or large skillet over medium-high heat. Add onion and celery, and cook, stirring often, until tender, about 3-4 minutes, the onions will begin to become translucent.

Stir in cabbage until heated through, about 1 minute. Add noodles, and 1/2 cup of sauce, toss until well combined and the noodles are heated for about 2 minutes.

Serve immediately.

Vegetable shortening

Heat the vegetable shortening or oil to 350°F in a medium pot or electric fryer. The shortening or oil should be 2 to 3 inches deep.

In a small bowl, beat together the cream cheese and scallions. If desired, add a touch of garlic powder for additional flavor.

Spoon about 1 teaspoon of the cream cheese mixture onto a wonton wrapper.

Brush a little water over the edges of the wonton skin. Fold the wonton diagonally into a triangle. Be sure to seal all of the edges completely to prevent the filling from leaking out of the wonton as it cooks. Take the two opposite corners and press and twist them together. You may need to tack them together by brushing them with a little water.

Use a thermometer or a small piece of wonton wrapper to make sure that the shortening or oil has reached 350°F. If the wonton wrapper bubbles immediately when dropped into the hot fat, it is ready.

Drop only 4 or 5 wontons at a time into the hot fat. After about 1 minute, the wontons will begin to brown. Then they will brown rapidly, so be careful to remove them when they are lightly browned. If your oil is shallow, you may need to flip the wonton over so that it cooks evenly.

Briefly drain the wontons on paper towels before serving.

Panda Express Cream Cheese Puffs. These have been one of my favorite things
to enjoy from the Panda Express, and I wanted to share my copycat recipe
for these Panda Express Cream Cheese Puffs. They have just a few
ingredients: Wonton wrappers. If you're gluten-free, pick up the gluten-
free wrappers. I believe the name brand is called Noy Soy. We're going to
use green onions, aka scallions, one of my favorite ingredients; cream
cheese, a little bit of water, and we're going to deep fry these in Crisco.
I just like the way Crisco works the best. You could use corn oil, soybean,
oil or whatever you have.

We are going to go ahead, wash the green onions, and we're just going to
slice a little bit. You only need about 1 to 2 tablespoons, thinly sliced,
and then we are going to combine these in a bowl with 8 ounces of cream
cheese that I have allowed to soften at room temperature for about 30
minutes. This way, I can just kind of blend them together without having to
get out a mixer. I know there's something called crab puffs, but we're at
the Panda Express and they don't put panda in any of the dishes. I don't
know why they call it Panda Express. They don't put crab in these cream
cheese puffs. What do we need to do next? We need to go ahead and fill
these wonton wrappers up, and go ahead and stick them in the deep fryer.

over there and I will be happy to share you the recipe for free, how you
can make these Panda Express Cream Cheese Puffs. We are simply going to
take one wonton wrapper; we're going to fill it with about a teaspoon of
cream cheese. You don't want anymore because it will leak out and go
everywhere and that will be a hot mess, literally a hot mess, so don't do
that. Just go ahead and fold them over, press the edges down very tightly.
Again you don't want cream cheese to go anywhere. Then you're going to take
the ends of the triangle and fold them together, and you have this pretty-
looking hat thing. We're going to deep fry these for about 1 minute to 2
minutes on 350 degrees. You know your oil's at the right temperature,
because when you add a drop or two of water, it'll sizzle. These things
will fry up immediately. While they're frying, you need to turn them over
and then take them out after about 1 minute to 2 minutes. Your wontons will
be lovely and golden brown.

In a small bowl, whisk together the soy sauce, brown sugar, garlic, ginger, and white pepper; set aside.

In a large pot of boiling water, add the Yaki-Soba noodles; cook until loosened, 1-2 minutes; drain well.

Heat both oils in a large nonstick skillet over medium-high heat. Add onion and celery; cook, stirring often, until tender, 3-4 minutes. Stir in cabbage until heated through and a little tender, about 2 minutes.

Add in the Yaki-Soba noodles along with the soy sauce mixture; stir well until combined, about 2 minutes.

Serve immediately and enjoy.

This is a great recipe. My family loves panda but don't live close to one and don't want to spend the on delivery.

I've never been to Panda Express so I can't compare it to theirs, but the recipe is delish! The whole family loved it.

Serving Size = 4 Foodies

Ingredients:
- 1.5 lbs chicken breasts or thighs (cooked more in the vid)
- 4 small zucchinis
- 1.5 cup mushrooms
- Neutral-flavored cooking oil (e.g. canola or vegetable oil)

Chicken Marinade:
- 1.5 tbsp light soy sauce
- 1.5 tbsp shaoxing wine
- 1 tbsp chicken powder
- 1 tbsp white pepper
- 2 tbsp cornstarch
- 1.5 tbsp sesame oil

Mushroom Chicken Sauce:
- 1 tbsp minced garlic
- 2 tbsp minced ginger
- ¼ cup chicken stock or water
- ¼ cup soy sauce 
- 2 tbsp oyster sauce (optional)
- 2 tbsp vinegar
- 2 tbsp sugar
- 1 tbsp chicken bouillon powder (optional)
- Slurry (1 tbsp cornstarch to 2 tbsp water)

Steps:
1) Cut your chicken into cubes.
2) Marinade your chicken with light soy sauce, shaoxing rice wine, chicken bouillon powder, white pepper, cornstarch and sesame oil.
3) Half your zucchini lengthwise. Then cut into ½ inch pieces.
4) Cut your mushrooms into quarter pieces.
5) Mince garlic and ginger.
6) Flash fry or pan fry your chicken in hot oil. Break apart any chicken sticking together. Remove and set aside.
7) Blanch or stir-fry your mushroom and zucchini pieces until just cooked through. They should still have some bite. Remove and set aside.
8) Add oil to a hot wok/pan.
9) Add minced garlic and ginger.
10) Add chicken stock or water. This will serve as the base of the sauce.
11) Add light soy sauce, oyster sauce, vinegar, sugar and chicken bouillon powder. Mix upon adding each seasoning.
12) Add slurry to thicken the sauce. The amount you add is dependent on how thick you'd like the sauce. The ratio to make a slurry is 1 tbsp cornstarch to 2 tbsp water.
13) Let the sauce reduce to your liking. Adjust seasonings to taste.
14) Add the cooked chicken, zucchini and mushrooms. Mix/toss everything.

Ground Ginger

Cut the chicken thighs into small bite-sized pieces that are about 1-inch cubes.

In a bowl combine egg, salt, ground white pepper, cornstarch, all-purpose flour, water, and vegetable oil. Stir to combine.

Place cut chicken thighs into the batter. Stir to coat the chicken thighs very well with the batter. Cover bowl with plastic wrap and place into the refrigerator for 30 minutes.

Place vegetable oil into a pot, the vegetable oil should be at least 4 inches deep. You can use a deep fryer. Heat the oil to 350°F.

Shake off excess batter off chicken and fry pieces until they become light golden brown, this should take 6 to 7 minutes. You will need to fry the chicken in small batches. When you remove the chicken from the oil, drain on a wire rack resting on a cookie sheet.

Chicken

In a small bowl combine orange juice, soy sauce, ginger, ground white pepper, vinegar, cornstarch, sugar, chili flakes in oil, and sesame oil. Whisk together well.

Pour sauce into a large skillet or wok, turn the heat up to medium high and cook until the sauce thickens. Add cooked chicken and stir to coat.

I made the orange chicken dish last night, but substituted Tyson chicken nuggets instead. Still turned out good tho.

You can make flavorful teriyaki chicken like Panda Express with this copycat recipe.

To make the chicken, combine the soy sauce, water, sugar, garlic powder, and white pepper in a shallow dish. Add the chicken thighs and turn to coat. Cover the dish and marinate for 30 minutes to 1 hour in the refrigerator.

Remove the chicken from the marinade and pat dry with paper towels.

Heat the oil in a cast-iron skillet over medium-low heat. Do not use a grill pan. When the oil is hot and shimmering, add the chicken thighs to the pan in a single layer. Cook the chicken in batches; do not overcrowd the pan. Place a second pan over the chicken thighs, pressing down and flattening the meat. Cook for 3 to 4 minutes. Flip the chicken, replace the weight, and cook for another 3 to 4 minutes, until the chicken is browned and cooked through. A thermometer should measure 170°F in the thickest part of the thigh.

While the chicken is cooking, prepare the teriyaki sauce: Combine all the ingredients in a small saucepan. Whisk to remove any clumps. Bring the mixture to a simmer over medium heat. Simmer until thickened, 1 to 2 minutes.

Slice the chicken and serve it with the sauce.

Panda Express Honey Sesame Chicken

To make the sauce, heat the sesame oil in a small saucepan over medium heat. Add the garlic and chili flakes and cook until fragrant, about 1 minute. Add the water, sugar, and honey, and bring the mixture to a simmer. Cook, stirring, until the sugar dissolves. Stir in the soy sauce, vinegar, salt, and cornstarch slurry and simmer until thickened, 1 to 2 minutes. Add the lemon juice and stir. Remove the saucepan from the heat and set aside.

To prepare the chicken, whisk together the egg, salt, white pepper, and vegetable oil in a large bowl. In a second bowl, combine the cornstarch and flour and mix well.

Dip the chicken pieces into the egg mixture. Shake off any excess liquid and dredge the chicken in the cornstarch mixture. Press down lightly so the cornstarch adheres on all sides.

In a deep fryer or Dutch oven, heat four inches of vegetable oil to 350°F.

Working in batches, drop the dredged chicken pieces into the oil one at a time. Deep-fry until golden brown, 3 to 4 minutes or until the chicken reaches an internal temperature of 165°. Transfer the chicken to a wire rack set inside a sheet pan and continue frying the remaining chicken.

To assemble the dish, heat the sesame oil in a large skillet or wok over medium heat. Add the peppers and cook until softened, about 5 minutes. Add the string beans and cook until lightly blistered, about 2 minutes. Stir in the sauce and bring the mixture to a boil. Add the chicken and toss to coat. Garnish with sesame seeds and serve over hot rice.

Didn’t bread my skinless boneless chicken thighs. Seared them.  amd then removed to cook my veggies. Added meat back to pan along with sauce and was quite tasty, especially considering i did not bread and fry as expected. So safe to say would be even tastier big I had. 
The lemon juice is a subtle but necessary ingredient! Dumped frozen peas in there and poured over quinoa. Recipe is forgiving and can be tweaked to personal preferences.
