Tofu Bhurji Vegan Bhurji

tomato (, finely chopped)

tsp salt (, divided)

oz firm tofu (, lightly squeezed to remove extra dipping moisture and crumbled evenly)

cilantro

tsp kala namak

Heat oil in a skillet over medium heat. Add onion and cook for 3 mins or until starting to get golden. Add garlic and chili and a pinch of salt and cook for another 2 mins until golden.

Add turmeric, cumin, black pepper and mix in. Add tomatoes and 1/4 tsp salt and mix in, cook for a minute to soften. (Add in other veggies such as peppers, zucchini etc with the tomatoes if you like)

Add cilantro, crumbled tofu and 1/4 tsp salt and mix well. Cover and cook for 2 mins (longer for dryer). Taste and adjust.

Sprinkle in kala namak, and mix in for a few seconds and take off heat. Let sit for a minute before serving over toasts, pita bread or part of a breakfast bowl with roasted potatoes, crunchy greens.

Paneer Bhurji (Punjabi Style Recipe)

red chilli powder (or ¼ to ½ teaspoon cayenne pepper

Coriander Powder

Garam Masala Powder

Paneer ((cottage cheese))

salt (as required)

coriander leaves

Crumble the paneer (cottage cheese) and keep aside

Finely Chop the onions, tomatoes and green chillies. Keep aside.

Crush the ginger and garlic to a paste in a mortar pestle and keep aside.

Also remove the spice powders and keep aside.

Preparation

Heat oil or ghee or butter in a pan. Let the oil become hot on a medium-low or medium flame.

Add cumin seeds. Let them crackle and change color. Once they get browned, add onions.

Mix well and sauté the onions. When the onions become translucent, add ginger-garlic paste and chopped green chilies.

Sauté for some seconds till the raw aroma of the ginger-garlic goes away.

Then add tomatoes and sauté on medium-low heat till they become soft. You can add a pinch of salt so that the tomatoes get cooked faster.

Now add all the dry spice powders - turmeric, red chili powder, coriander powder and garam masala powder.

Mix the spice powders very well and sauté for 5 to 6 seconds.

Then, add the crumbled paneer. Mix throughly and cook for 1 minute.

Don't cook the paneer for a long time as they harden and loose their softness.

Lastly add the chopped coriander leaves and mix.

Serve Paneer Bhurji hot with bread toast. You can also serve it with roti, plain paratha or as a stuffing in burrito or wraps.

Paneer Bhurji

Dry Paneer Bhurji recipe is an Indian cottage cheese scramble made with onion, tomato and spices for an easy to make Indian breakfast

oil (or butter)

cumin (jeera) seeds

garlic

ginger

green chili (finely chopped)

onion (finely chopped)

tomato (finely chopped)

turmeric powder

red chilli powder

garam masala powder

salt (to taste)

paneer/cottage cheese ((appx 100 grams))

lime juice

In a kadai/pan, add oil, once oil is hot, add cumin seeds let them splutter.Then add minced ginger , garlic, green chili and saute for few seconds.

Add onions and saute till they are soft and translucent.

Next add the finely chopped tomatoes, turmeric powder, red chilli powder ,garam masala ,salt and mix well. Cook until tomatoes are soft and mushy.

Then add crumbled paneer and cook for 1-2 minutes.

Finally add lime juice and garnish with coriander leaves and switch off the flame.

Paneer bhurji is ready and can be served with roti,naan,rice.

Paneer Bhurji is a North Indian dish of scrambled &amp; spiced Indian cheese aka paneer.  It makes a great side with roti, paratha or bread. Stuff it in bread or rotis/tortillas to make sandwiches and wraps.

Paneer Bhurji Recipe

paneer (crumbled (or 4 cups milk, 2 tsps lemon juice))

oil (or as needed)

onion ((½ cup chopped finely))

green chilli (chopped (skip for kids))

ginger garlic paste ((or minced, fine chopped))

tomato ((⅓ cup chopped finely))

capsicum (or green peas (optional))

salt ((adjust

garam masala powder ((adjust as needed))

½ teaspoon kasuri methi ((dried fenugreek leaves))

lemon juice

Coriander leaves (finely chopped)

Pour 4 cups milk to a pot and bring it to a boil. Add 1 tbsp vinegar or lemon juice and Stir. When the milk begins to curdle well, turn off the stove. If the milk does not curdle then add 1 tbsp more vinegar.

Drain it to a colander lined with a muslin cloth. Rinse it well under running water. Squeeze off the excess whey and make a knot with the cloth.

Hang the paneer for about 10 to 15 minutes to remove excess whey. Meanwhile chop the onions &amp; tomatoes finely.

To make paneer - skip this section if you have it

Pour oil to a hot pan and add cumin seeds. When they begin to sizzle, add finely chopped onions and chopped green chili.

Saute until the onions turn golden to light brown. Add ginger garlic paste and saute until the raw smell has gone, for about a minute.

Add chopped tomato, salt and turmeric. Saute until the tomatoes turn soft and mushy. 

Stir in the red chili powder, kasuri methi &amp; garam masala.

Mix and saute until the raw smell goes off from the mixture &amp; the masala leaves the sides of the pan. 

Stir in peas or capsicum if using. Fry until capsicum turns slightly soft. Crumble paneer well and add to the pan.

Stir and fry till everything blends well just for 2 minutes. Taste it and add more salt and spices if required.

Turn off the stove. Add 2 tbsp chopped coriander leaves. Serve paneer bhurji with roti, paratha or bread. Sprinkle some lemon juice before serving.

Thank you for the recipe Swasthi. Paneer is expensive where I live so I made it at home using your recipe. The bhurji was delicious and love it. We served it with sourdough flatbreads, mint chutney and zucchini salad.

Thank you for this easy and delicious recipe. I used sach paneer with spicy habanero for extra heat but followed your instructions exactly. A sprinkle of chaat masala elevated the overall flavors. Tasted amazing with roti.
