Paneer Tikka Masala

Prepare the paneer: Place the paneer in a bowl and toss with the ginger, garlic, coriander, garam masala, cumin, and salt. Add the 5 tablespoons of yogurt and stir until the paneer pieces are evenly coated. Let marinate at room temperature for 20 minutes or refrigerate and marinate overnight. Preheat the oven to 400 degrees F.

Line a large baking sheet with aluminum foil and place an oven-safe baking rack on top (I use a cooling rack that is oven safe). Coat the rack with nonstick spray, then arrange the paneer cubes on top in an even layer, discarding any excess marinade. Bake for 12 to 15 minutes, until the paneer is lightly golden at the edges. Remove from the oven and set aside.

While the paneer bakes, prepare the masala (sauce): Heat the coconut oil over medium low in a large, sturdy skillet. Once hot, add the bell pepper, cauliflower, onion, ginger, garlic, salt, and pepper. Cook, stirring occasionally, for 1 minute, then increase the heat to medium and continue cooking until the vegetables are tender and the onion is translucent, about 12 to 15 minutes. Do not let the onion brown—if it starts to turn brown, reduce the heat and continue cooking until soft. Add the tomato paste, garam masala, turmeric, and cayenne. Cook and stir constantly for 30 seconds, until very fragrant. Add tomatoes and cook, stirring occasionally, until hot, about 2 minutes. Add the paneer and peas, and cook, stirring occasionally, until warmed through, about 2 minutes more.

Remove from heat and let cool for 1 minute. Stir in the 1/2 cup yogurt. Taste and add additional salt and pepper as desired. Sprinkle with cilantro and serve warm with naan bread or brown rice.

Paneer Tikka Masala Recipe

ginger garlic paste (or crushed ginger garlic)

½ teaspoon garam masala (or tandoori masala)

Paneer tikka masala recipe

Firstly add ½ cup yogurt, ¼ to ½ teaspoon red chili powder, 1 teaspoon ginger garlic paste, ½ teaspoon garam masala, ⅛ teaspoon turmeric &amp; ¼ teaspoon salt to a mixing bowl. 

Mix well and taste test it. Add more salt if needed. Add paneer cubes &amp; mix well to coat the marinade.

Optional - If using onions &amp; bell peppers, then add ½ cubed onion layers &amp; ½ cubed bell pepper and marinate well. Set this aside until the gravy is done.

Preparation

Heat 1 tablespoon oil and add 1 cup chopped onions. Saute them well until transparent or golden.

Add 1½ cup tomatoes, 14 cashews, 1 teaspoon sugar and ½ teaspoon salt. Saute all of these well until the tomatoes turn mushy and soft.

Then add ¾ to 1 teaspoon red chilli powder &amp; ¾ to 1 teaspoon garam masala, Saute all of these for 2 mins, until the masala smells good &amp; aromatic.

Cool this completely and add to a blender.  Pour ½ to ¾ cup water and blend to a smooth puree.

Heat 1 tbsp oil in a pan. Add 1½ teaspoon ginger garlic paste &amp; saute for 1 to 2 mins, until the raw smell goes off.

Lower the flame and add the onion tomato puree. (Careful as it may splash)

If needed you can optionally add more chilli powder to achieve a brighter color.

Pour ½ to ¾ cup water to bring this to a consistency.

Cover and cook until the gravy turns thick and you see traces of oil on top.

Crush the kasuri methi in your palms and sprinkle it. (optional)

Taste the gravy &amp; add more salt if needed. Rest this aside.

How to make paneer tikka masala

Option 1 - To make on griddle. Heat a tsp oil in a wide pan on a high flame, coat each paneer piece with the marinade &amp; place on the griddle. Cook on a high flame till the marinade dries up and paneer turns golden. Similarly place the bell peppers and marinated onions and fry until the marinade dries up.

Option 2 - Grill in oven. Preheat the oven to 430 F or 220 C. Thread paneer, onion, bell pepper to a skewers. Then grill for 8 to 10 minutes on both sides until golden and crisp.

Option 3 - Air fryer. If your air fryer needs preheating, you may preheat it for 5 mins first. Thread paneer, onion, bell pepper to a skewers. Air fry the skewers placed in a tray at 390 F or 200 C for 5 mins. Brush them with the marinade and then air fry for another 2 mins. The marinade has to partially dry up. Also adjust the air fryer time as needed.

Transfer grilled paneer tikka along with veggies &amp; onions to the tikka masala gravy.

Pour the cream. Gently mix. Garnish with cream and coriander leaves.

&nbsp;Serve paneer tikka masala with roti, butter naan or veg pulao.

Whisk the hung curd or greek yogurt till smooth in a large bowl. You can also use a really thick curd instead of hung curd.

Add all the ginger-garlic paste, spice powders, lemon juice, corn starch or gram flour &amp; salt. Mix well.

Add the paneer cubes, onions, bell pepper.

Gently mix again so that the marination coats the paneer, onions and bell peppers evenly. Cover the bowl &amp; marinate for a minimum of 1 hour or overnight in the refrigerator.

Marinating paneer

Line a baking tray or pan with aluminum foil. This method makes its easier to clean the pan later.

Thread the paneer cubes on a bamboo or metal skewers and place them on the prepared pan. Preheat the oven to 200 degrees Celsius (390 degrees Fahrenheit) for at least 10 minutes before you grill the paneer cubes. 

For a regular oven, keep only the top heating element on and keep the pan in the top rack. For a microwave oven use the convection mode and preheat at 180 degrees celsius (350 degrees Fahrenheit).

Brush about 1 to 2 teaspoons oil evenly on the paneer and bell pepper cubes.

Grill the skewered paneer cubes &amp; veggies in a preheated oven at 200 degrees Celsius (390 degrees Fahrenheit) for a total of 15 to 20 minutes (depending on the oven temperatures). While grilling remove halfway, turn over and then continue to grill.

Just keep an eye when the paneer is getting grilled in the oven. For a microwave oven in the convection mode, use 180 degrees Celsius (350 degrees Fahrenheit).

Oven method

Heat about 1 to 2 tablespoons oil in a pan. Place the threaded paneer cubes and veggies with the skewers on the pan.

Gently rotate the skewers, when one side is crisp and browned. Keep on rotating till all the sides are browned. Add more oil if required, while frying. Keep the fried paneer cubes and veggies aside.

Pan frying method

Boil water with a pinch of salt. Add halved onions and tomatoes to the boiling water. Cook for one or two minutes. Switch off. Cover and keep aside for 15 to 20 minutes.&nbsp;

You can also add cashews to the hot water. Adding cashews gives a creamier consistency with a nice sweetness. Later drain and chop the onions and tomatoes roughly. Its not necessary to blanch, but blanching reduces the cooking time later.

Later chop the onions roughly and make a smooth fine paste in a grinder or blender.

Peel and roughly chop the tomatoes. Make a smooth puree of the tomatoes in the grinder or blender. Keep both the onion &amp; tomato puree aside.

Whisk or beat the yogurt till smooth and keep aside. There should be no lumps in the yogurt and it should be beaten well.

Blanching and making puree

In the same pan, heat 2 tablespoons oil and then add the onion paste.

Stir often and saute till the onions paste turns golden.

Add ginger-garlic paste and sauté for some seconds till the raw aroma of ginger-garlic goes away.

Add the tomato puree. Stir well and saute till you see fat leaving sides of the masala.

Now add all the dry spice powders - turmeric, red chili powder, coriander powder and garam masala or tandoori masala.

Stir well so that the spices are incorporated in the masala paste evenly.

Now remove the pan from the fire. Add beaten fresh curd (yogurt). Removing the pan from fire, won&#039;t allow the yogurt to curdle. Use full fat and fresh curd.

Stir well. Add water and salt. Stir again.

Simmer for 5 to 6 minutes or till the gravy thickens and you see fat floating on the top. You can keep the consistency from medium to slightly thick. The consistency can be altered by adding more or less water.

Add cream and kasuri methi (dry fenugreek leaves). Stir well and simmer on a low flame for a minute. Check the taste and add more salt or cream if you prefer. You can also about ½ to 1 tsp of sugar for a light sweet taste.

Then add the grilled or pan-fried paneer and veggies cubes. Switch off the heat and mix well.

Garnish with coriander leaves &amp; serve Paneer Tikka Masala with some naan, roti or jeera rice.

white onion (roughly chopped, around 150 grams)

garlic

ginger (chopped)

tomatoes (roughly chopped, around 400 grams)

curry powder

Kashmiri red chili powder (divided (for color, not hot))

salt (or

sugar (I used granulated white sugar)

water (or more as needed)

heavy cream (30-45 ml)

cilantro

We will start by making the paneer tikka. To a large bowl, add thick yogurt, make sure the yogurt is thick (if using regular homemade yogurt, drain the yogurt for 3 to 4 hours before using in the recipe or use Greek yogurt).

To that add ginger-garlic paste, coriander powder, garam masala, Kashmiri red chili powder, red chili powder, 1/4 teaspoon salt and juice of 1/2 lime.Using a spatula or whisk, mix until all the ingredients are well combined.

Now add cubed paneer, onion (quartered and separated into petals) and green pepperMix until the paneer, onion and peppers are well coated with the marinade. You can use your hands here. Cover the bowl and refrigerate for 30 minutes at the least.

Meanwhile, let&#39;s work the curry part of this recipe. Heat oil and 1 tablespoon butter in a pan on medium heat. Once hot, add cumin seeds and cinnamon stick.

Let the seeds sizzle and then add white onion (roughly chopped), chopped garlic cloves and chopped ginger. Stir and cook for around 5 to 6 minutes until onions turn light golden brown in color, stir often in between.

Then add the roughly chopped tomatoes along with curry powder, Kashmiri red chili powder, 3/4 teaspoon salt (or to taste) and sugar. Stir and cook the tomatoes for 7 to 8 minutes until soft and completely cooked. This step is important so do not rush this step.

Once the tomatoes are completely cooked, remove the pan from heat. Let it cool down a bit and then remove the cinnamon stick and transfer everything to a blender and blend to a fine paste. Set this aside.

Back to the tikka now, take the marinated paneer out of the refrigerator. Now, you can cook this in a pan or grill or in your oven. I have used a grill pan that I had. Spray the pan with oil and then add the marinated paneer, onions and bell peppers on the pan.Cook until the paneer turns light golden brown in color and onions and peppers are slightly cooked, turning them few times in between for even cooking. Now it&#39;s time to bring the curry together.Oven instruction: arrange tikka on skewers and bake at 450 F degrees for 10 minutes and then broil for 2 to 3 minutes to get it browned (optional).

Now put the pan back on medium heat and add the pureed paste to it that we had prepared earlier. You can also add remaining 1/4 teaspoon Kashmiri red chili powder at this point if you prefer a brighter color of the curry.

Add 1 cup water (or more depending on how much gravy you want), and stir well. Then add remaining 1 tablespoon butter, cream and chopped cilantro. Mix and let it cook for 2 minutes.

Add the roasted paneer, onions and peppers into the curry. Mix well and let it simmer for 2 to 3 minutes. Garnish with more cilantro and serve paneer tikka masala with naan or paratha.
