30 Minute Broccoli Cheddar Soup (Better than Panera!)

Melt butter in a large dutch oven or pot over medium-high heat. Add the onion and cook 3-4 minutes or until softened and light gold. Add the garlic and saute for another minute.

Add flour and whisk for 1-2 minutes or until the flour begins to turn golden in color. Pour in the chicken stock, broccoli florets, carrots, and seasoning. Bring to a boil then reduce heat to medium-low and simmer for 15 minutes or until the broccoli and carrots are cooked through.

Stir in half &amp; half and cheddar cheese and simmer for another minute. Taste and adjust seasoning if needed.

Serve with toasted crusty bread or in a bread bowl if desired.

This copycat recipe of Panera&#039;s new Broccoli Cheddar Mac and Cheese is spot on perfection! They took their two fan favorites: mac &amp; cheese and broccoli cheddar soup and mixed them together to make magic! 

Panera Broccoli Cheddar Mac &amp; Cheese

lb uncooked macaroni ((or Pipe Regatta))

tbsp butter

carrots (shredded)

broccoli florets (small dice)

flour

2% milk

heavy cream

salt

tsp white pepper

dry mustard

onion powder

extra sharp WHITE cheddar cheese (shredded)

WHITE American cheese (shredded)

sharp YELLOW cheddar cheese (shredded)

Cook pasta according to package directions in a large pot with well salted water.

In a large skillet over medium high heat, melt butter. Add in onions, carrots and broccoli. Cook to soften about 5 minutes (may be more or less depending on the size vegetables you cut). if mixture gets dry add 1-2 tbsp olive oil. Remove veggies from pan and set aside in bowl 

At this point - get all of your liquids out in measuring cups and cheeses grated. 

In veggie pan, melt butter over medium heat. When melted, whisk in flour and cook for 2-3 minutes, whisking constantly to cook out the raw flour.

Begin splashing in milk, cream and broth, alternating and whisking well. Continue pouring milk and cream in small amounts, constantly whisking to ensure smoothness, until the mixture is no longer a paste-like consistency but more like a soupy liquid.

Turn heat to medium-low, whisking consistently and getting into the corners (to ensure nothing sticks to the bottom or the corners and burns), until the mixture becomes thick, about 5 minutes.  

Remove from heat and whisk in salt, pepper, mustard powder, garlic powder and onion powder. 

Place back on heat on low and add cheeses and stir until melted and smooth. 

Add in broccoli mixture and noodles, stir.

Preheat oven to 375

Mix together the oil, sugar, honey, eggs and pumpkin in a bowl. Set aside. In a separate bowl, mix together the flour, salt, baking soda, baking powder, cinnamon, ginger and pumpkin pie spice. Add the wet ingredients to the dry ingredients and mix just until combined.

Spoon the batter into muffin pans that have been sprayed with cooking spray. This makes 12 Texas sized or 18 regular sized muffins

In a small bowl, cut the butter into the flour and sugar with a fork. Mix until it resembles crumbs and the butter is in small pieces. Add honey, cinnamon and salt and mix again.

Divide the streusel between the muffins, spoon it over the unbaked batter.

Bake the muffins until the cupcakes have risen and a toothpick inserted in the center comes out clean. - Texas sized - 25 minutes (oven)- Regular sized - 18 minutes (oven)- Air Fryer Regular Sized - 13 minutes- Mini donuts - 10 minutes (oven)

Allow the muffins to cool in the pan for 10 minutes, then remove them to a wire rack to cool completely.

Once the muffins are cool, use a handheld sifter, shake powdered sugar over top.

We wanted to see if a fresh, scratch-made Panera mac and cheese copycat recipe could compete with the real deal. How did it stack up? Spoiler alert: We loved it. As a bonus, our recipe only took 30 minutes from start to finish, so you might want to read on and check it out.

Copycat Panera Mac And Cheese That's Great For A Weeknight Dinner

In a large stockpot, cook the pasta in salted water according to the package directions. Drain well and set aside.

Meanwhile, in a large pot, melt the butter over medium heat until it's bubbly and melted, about 2 minutes.

Add the flour and cook, stirring constantly, until the roux is frothy and smells nutty, about 3 to 5 minutes.

Slowly whisk in the milk and heavy cream. Add the Dijon mustard and bring the mixture to a simmer over medium heat. Cook for 10 minutes, until the liquid has thickened.

Remove the pot from the heat and add the white cheddar cheese one handful at a time, stirring until it's melted before adding the next handful of cheese. When all the cheese is added and incorporated, stir in the salt and pepper.

Add the cooked pasta to the cheese sauce and stir to combine. If the pasta cooled down while you were waiting for the cheese sauce to cook, simmer the mixture over medium-low heat until it's warmed through.

If the cheese sauce is too thick, add a splash of milk to thin it out. Alternatively, if the sauce is too thin, simmer it gently with the pasta until it reaches the desired level of thickness.

Serve immediately. If there are leftovers, add 1/2 cup milk when reheating the leftovers to loosen up the sauce.

Instant Pot Broccoli Cheddar Soup

Pillsbury Butter Flake crescent rolls are the base of these four cheese, spinach, bacon and egg souffles. Perfect breakfast or brunch recipe!

Spinach and Cheese Egg Souffle

tube Pillsbury butter flake crescent rolls ((8 ounces))

eggs ((keep one aside

Monterey Jack cheese

Parmesan cheese

spinach

bacon (cooked and crumbled)

Asiago cheese

Preheat the oven to 375 degrees.

In a small microwaveable bowl, combine 5 eggs, milk, heavy cream, cheddar cheese, monterey jack cheese, parmesan cheese, spinach, bacon and salt. Mix well.

Microwave this mixture for 30 seconds. Stir the mixture, then continue to microwave it in 20 second intervals about 4-5 times. You want the egg mixture to get just a tad thickened. It will still be very runny and uncooked, but the fact that it is just a tiny bit thicker will help hold up the crescent roll dough when you fold it over the top.

Unroll the crescent roll dough and separate it into four rectangles. Press the perforated triangles together to make rectangles. Roll out each rectangle until it is in about a 6x6 square.

Spray four ramekins or souffle dishes (about 4-5 inches in diameter) with cooking spray. Lay a rolled out crescent roll in each dish, with the edges hanging over the sides. Pour 1/3 cup egg mixture on top of each crescent roll dough. Sprinkle the Asiago cheese on top of the egg mixture, dividing the cheese between the 4 ramekins. Fold the crescent roll dough overtop the egg mixture.

Take the remaining egg and beat it lightly in a small dish. Using a pastry brush, brush the egg on top of the crescent roll dough.

Bake at 375 for 17-20 minutes, or until browned on top and the eggs are set.

I made this recipe this morning for my family! We didn't have ramekin dishes so I used a large muffin tin instead. Also ate alongside strawberry jam and it was delicious! Toss all ingredients in a large salad bowl.
