<p>The simplest of desserts, this softly set pudding is prepared with only five ingredients: cream, milk, sugar, gelatin, and vanilla. Although the name translates as cooked cream, the dessert is actually only warmed, not cooked. Cream, milk, sugar, and vanilla are heated, but just as the cream is about to boil, it is removed from the stove, and the gelatin is whisked in. The panna cotta is then preferably strained to make it as smooth as possible and poured into, traditionally, caramel coated molds, which are then kept in the freezer for two to three hours until the puddings have set. For serving, panna cotte are unmolded, each onto an individual plate, and can be garnished with some fresh fruit.</p>

One of the most unanimously popular Italian desserts is panna cotta; a decadent, creamy pudding often served with a fresh fruit compote. In spite of its world-renowned status, panna cotta is not mentioned in any Italian cookbooks before the 1960s, though many believe that the dish was derived from a traditional Piedmontese dessert. Literally translating to ‘cooked cream’, panna cotta is a flavoured cream set with gelatine, which gives this dolce its characteristic wobble. Our Decadent Panna Cotta Recipe

Soak the gelatine sheet in a bowl of cold water for 5-10 minutes.

Mix the cream, milk, sugar and vanilla seeds together in a saucepan and bring to a gentle simmer. Then, remove from the heat. 

Take the gelatine sheet out of the water, squeezing out any excess liquid. Add the gelatine to the pan with the rest of the ingredients, stirring until it dissolves entirely. 

Divide the mixture evenly between two moulds or ramekin dishes and place them in the fridge for about two hours to set.

Remove from the fridge and either serve in the moulds if you’ve used nice jars or turn each ramekin upside-down onto a plate, they should slide easily out of their moulds. If the panna cotta are stuck, loosen them by dipping the moulds in warm water. 

Serve your panna cotta with fresh fruit compote and some fresh berries. Buon appetito!

TRADITIONAL JAPANESE RECIPE: Pannacotta is one of Italy's most famous dessert, but it's also incredibly popular in Japan too. Pannacotta's texture is very similar to the Japanese Purin (flan) and it's almost always topped with fruit, sauces or jams. Adding Kinako to Pannacotta brings together the two countries in an unique way, and with the addittion of Kuromitsu, a dark syrup made of Sugar, makes it even better. For this recipe we will not use Teriyaki sauce, although, you are free to add it. It's mouthwateringly delicious, but may take some practice.

Kinako Pannacotta with Kuromitsu Sauce Recipe

Milk

Gelatin

Heavy Cream

Honey

Sugar

Kinako

Molasses

Water

Combine

In a medium-small pot, combine Milk and Gelatin, and let rest and 5 minutes.

Add Heavy Cream

Add Heavy Cream, Honey, and Sugar to the pot containing Milk and Gelatin, and heat until the Gelatin and Sugar are dissolved, without letting the fluid boil or get too hot.

Add Kinako

Place the Kinako powder in a small bowl, and add a couple of spoons of Milk mixture prepared in step 02, and mix until all lumps have been dissolved.

Mix with Kinako

Add the Kinako mixture back in the pot and mix well.

Cool

Pour

Once the Milk mixture has finally cooled and slightly thickened, pour it into 4 glasses or ramekins...

TRADITIONAL JAPANESE RECIPE: Pannacotta with Kinako is something you might not see often in Italy, but it's definitely something that Japanese people love, this is because Pannacotta is such a great hit and is sold almost in every shop and restaurant in Japan. This Kinako Pannacotta Recipe (きな粉パンナコッタ) will give you what in Japan is called Purin (flan). For this recipe we will not use Teriyaki sauce, although, you are free to add it. It's mouthwateringly delicious, but may take some practice.

Pistachio Rose Panna Cotta Tart

g pistachios ((3.5 ounces))

flour

icing (confectioners / powdered) sugar

salt

egg white,

whole milk ((250 milliliters))

caster (superfine) sugar ((notes 1))

cream ((250 milliliters))

rosewater essence

sugar ((notes 1))

raspberries

½ teaspoon rosewater essence

pistachios (finely chopped)

rose petals

Preheat the oven to 180C / 350F / 160C fan forced. Line the base of a 9 inch fluted tart tin with removable base with baking paper.

Blitz the pistachios in a blender or food processor until very fine (the largest pieces should be only 1mm round)

Add the pistachios, flour, sugar and salt to the food processor and blitz until well combined.&nbsp;Add the butter and blitz for only 5-10 seconds until the mixture is like large breadcrumbs.&nbsp;Slowly drizzle in the water while the processor is running on low and stop as soon as it starts forming large clumps.

Tip the dough out onto a piece of baking paper and use the paper to help you pull it together into a flat disk. Wrap in the baking paper and place in the fridge for ½ an hour.

Dust a large sheet of baking paper with flour and sit the dough on top. Dust the top of the dough with flour, then roll the out to a large circle about 3mm thick.

Rest your whole arm underneath the pastry and baking paper to lift it. With the other hand hold the tin and base together with one finger and thumb and tip it upside down over the pastry as you flip the pastry towards it, then flip it back up the right way. Carefully pull away the baking paper, then gently nudge the pastry down into the corners. Trim the overhang with a pair of kitchen scissors to just 1 cm above the lip of the tin and make the dough sit up straight.&nbsp;

Freeze for 15 minutes. Prick the base all over with a fork, then line with baking paper and baking weights

Bake for 20 minutes. Gather up the corners of the paper and transfer it with the pastry weights to a heatproof dish. Use a sharp knife, laid flat to the top of the tin, to cut away the excess pastry. Brush the inside of the tart shell with beaten egg white all over the base and sides. Bake for a further 20 minutes. Any hairline cracks are fine.

As soon as the tin is cool enough to handle, place the shell in the freezer until cold - this will help the panna cotta set more quickly and reduce the risk of leaking or soaking into the base anywhere.

For the tart shell

Pour the cold milk into a saucepan and sprinkle the gelatine over the top. Allow it to "bloom" for 5 minutes (it should look a bit wrinkly by the end). Turn the heat on low under the milk and stir for a minute or two until the gelatine has dissolved.

Add the sugar and stir again until dissolved. This should only take another minute or two. Don't let the milk get too hot or to come to a simmer. It should only be just warm.

Take the saucepan off the heat. Pour in the cream, rose water essence (a little at a time to taste- notes) and salt and mix until thoroughly combined.

Pour just ½ a cup into the frozen tart shell and swirl around so the bottom is coated. Return to the freezer for 10 minutes. Pour in the remaining panna cotta mixture and place flat in the fridge to set for at least 2 hours to set.

For the rose Panna Cotta

Place the water and sugar into a saucepan and sprinkle over the gelatine. Allow it to sit for a couple of minutes.

Heat over low heat and stir until the sugar and gelatine has dissolved. Add the raspberries and rose essence and stir, pressing down on the raspberries until the liquid is pink.

Pour the liquid through a strainer into a small jug before gently pouring over the top of the set Panna Cotta.

Return to the fridge and allow to set for an hour before serving.

Klem ut vannet av gelatinen og r&oslash;r de bl&oslash;tlagte gelatinplatene in i den varme blandingen. Legg h&oslash;ye glass st&oslash;dig i en eggekartong eller en beholder, slik at de holder seg liggende mens blandingen stivner. Hell blaningen i glassene. Avkj&oslash;l og sett kaldt i minst 3 timer f&oslash;r servering
