This parfait requires no baking and that makes it perfect for summer. Nothing says summer more than lemons.

Lemon Cream Parfait

lemon

oz evaporated milk

bars 8 oz each cream cheese

oz frozen concentrated lemonade mix (defrosted)

oz tub (whipped topping -OR- 2 cups real whipped cream)

In a small bowl, beat pudding mix and evaporated milk for 1 minute; set aside and let stand for 2 minutes.

In a large bowl, beat cream cheese until smooth. Gradually add the lemonade concentrate and beat well.

Gradually add the pudding/milk mixture and beat well to incorporate.

To make parfaits: distribute half of the lemon/cream cheese mixture evenly in 4 old-fashioned or stemless wine glasses.

Place a layer of topping or cream on top, then distribute remaining half of the lemon mixture on top of the whipped cream.

Garnish with a dollop of cream. Chill for at least 2 hours.

Alternately, dessert may be served in individual bowls and topped with the whipped cream (if you don't want to get fancy)

Chocolate Peanut Butter Chia Breakfast Parfait

chia seeds

raw cacao powder

+ 2-3 tablespoons Silk Soymilk

Sweetener (optional)

peanut butter

banana (sliced)

Cacao nibs for garnish (optional)

Combine the chia seeds and cacao powder in a small resealable container. Pour in 1/2 cup of soymilk and stir to incorporate. If you're using unsweetened soymilk, stir in sweetener of choice, to taste.

Let the mixture sit at room temperature for about 10 minutes, then give it another good stir, put on the lid, and refrigerate for at least 2 hours. The longer you refrigerate the pudding, the thicker it will be.

When you're ready to assemble your parfait, whisk together the peanut butter with 2 tablespoons of soymilk in a small bowl. If the mixture is too thick, whisk in an additional tablespoon of soymilk.

Layer the chia pudding with the peanut butter sauce and banana slices in a serving dish or jar. Top with cacao nibs, if using, and serve immediately.

portions of sunrise soya almonds tofu dessert (2x150 grams)

almond butter or peanut butter

strawberries and chia seeds

To a blender, add your tofu dessert, bananas (save a small piece) and nut butter. Pulse until smooth and creamy.

Grab a mixing bowl and stir together your sliced almonds, oats and maple syrup. optional: if you want a bit more crunch you can toast your oat mixture in the oven at 350 degrees for 5-10 minutes!

Layer your parfait. Alternate between layers of your oat crumble, fresh strawberries and your blended parfait mixture.

Finish off with a final layer of sliced strawberries, sliced bananas and a sprinkle of chia seeds for an added health kick!
