Tuscan Chicken in Parmesan Cream Sauce

chicken breasts (lightly pounded to even thickness)

Italian Seasoning

Season

Season each side of each pounded chicken breast with Italian Seasoning and salt and pepper.

Dredge

Combine flour and grated parmesan in a shallow bowl. Dredge each chicken breast in the flour mixture, coating both sides.

Heat

Heat a large skillet over medium high heat. Add the 2 tablespoons butter and stir/melt.

Cook

Cook the chicken (in batches if necessary) for 4-5 minutes per side or until its fully cooked (165F in the center and no longer pink) and browned on both sides. Remove from the skillet and place on a plate. Cover with foil.

Wipe the skillet clean and return the skillet to medium high heat and add the remaining ¼ cup butter. Use a wooden spoon to scrape the bottom of the pan as the butter melts. The brown bits hold a lot of flavor, so no need to remove.

Add the garlic and sun-dried tomatoes and cook for 1-2 minutes or until fragrant.

Whisk

Whisk in the flour and allow to thicken for approximately 1 minute.

Whisk in the heavy cream, chicken broth, parmesan cheese, Italian seasoning, and pepper. Stir to combine.

Add the spinach and reduce heat to simmer. Allow to cook until the sauce slightly thickens and the spinach wilts.

Simmer

Add the chicken back into the skillet and turn to coat in the sauce. Allow to continue to simmer until the chicken is heated through, 2-3 minutes. Garnish with fresh parsley.

Parmesan Lemon Chicken and Rice Skillet - This one-pan meal is an easy weeknight dinner delight! Juicy chicken thighs are cooked with fresh lemon, creamy rice, and rich Parmesan cheese for a zesty and cheesy skillet recipe your family will love.

Parmesan Lemon Chicken and Rice Skillet

chicken thighs, (or chicken tenders)

butter

onion,

garlic, (minced)

rice

lemons,

rosemary

chicken bouillon, (paste

water

Parmesan cheese

salt and pepper

Set a large sauté pan (with a lid) over medium heat. Add the butter. Once melted, add the onions and garlic. Sauté for 2-3 minutes.

Salt and pepper the chicken thighs liberally on both sides.

Push the onions and garlic to the sides of the pan. Then place the chicken thighs in the pan in a single layer. Brown the chicken for 1-2 minutes per side, just until color forms. Move the chicken to a holding plate.

Mix in the rice, lemon zest, rosemary, and bouillon in the pan. Stir well. Then place the chicken pieces on top of the rice and pour in the water.

Cover and bring to a simmer. Lower the heat if needed, and simmer for 15-20 minutes, until the rice is cooked through. (The water should be completely absorbed and there should be vent holes in the top of the rice.)

Remove the lid. Move the chicken pieces to the side of the pan. Stir ¼ cup lemon juice, the parmesan cheese, and parsley into the rice. Taste and season as needed. (The rice should be creamy. (Add ¼  - ½ cup water to loosen the texture if needed.)

Serve warm. Garnish with extra cheese, parsley, or lemon slices if desired.

Crispy Baked Parmesan Chicken

chicken breast

eggs (, beaten)

Panko Bread Crumbs

cornflake crumbs

garlic powder

parsley flakes

½ teaspoon each salt and pepper

Preheat oven to 375°F.

Pound chicken breasts to ½ inch thickness.

Beat egg and set aside. In a separate shallow dish, combine flour, salt and pepper.

In a second dish combine Panko Bread Crumbs, cornflake crumbs, parmesan, parsley and garlic powder.

Dip chicken in flour first and then egg and finally in the crumb mix pressing the crumbs to adhere.

Place on a pan sprayed with cooking spray. Spray the top of the chicken with cooking spray.

Bake at 375°F for 30-35 min or until juices run clear.

A quick pesto-like sauce brings this flavorful and filling parmesan chicken with sun-dried tomato cous cous and garlic veggie bowl together.

Parmesan Chicken with Sun-dried Tomato Cous Cous and Garlic Veggies Recipe

chicken breasts (filleted)

parmesan cheese

tsp red pepper flakes

paprika

olive oil (OR butter)

(9 oz) jar marinated sun-dried tomatoes (oil drained)

basil (lightly packed)

extra virgin olive oil

Roasted Salted Almonds (We like Blue Diamond)

tsp kosher sea salt

tsp black pepper

red pepper flakes (OR more to taste)

cous cous

oz crimini mushrooms (washed & sliced)

kale (chopped)

garlic (minced)

tbsp parmesan cheese (shaved)

Preheat oven to 350 degrees. Line a baking sheet with parchment paper or a baking mat; set aside.

Place a large skillet over medium-high heat, add the olive oil.

In a shallow dish, combine the parmesan, red pepper flakes, Italian seasoning, garlic powder and paprika, using your fingers, mix together. Place the chicken in, one at a time, pressing to form a breading or coating on the chicken. Place into the hot pan and sear each side until golden brown. Transfer to the prepared baking sheet and bake until the chicken reaches an internal temperature of 165 degrees. Remove from the oven and allow to rest.

Meanwhile, blend all the ingredients for the pesto in a food processor except for the olive oil. Start the food processor and drizzle in the olive oil slowly while still mixing. Toss the cous cous in a generous amount of pesto, set the remaining pesto aside.

Place a large skillet over medium-high heat, add the olive oil or butter. When hot, add the mushrooms and cook until browned, about 5 minutes. Add the garlic and kale, saute for 2-3 minutes or until wilted. Season with salt and pepper.

Serve in individual bowls with a heaping scoop of pesto and a sprinkle of chopped almonds and shaved parmesan cheese.

Easy Parmesan Chicken with Cucumber Salsa is a light summer meal and part of my Simple Summer Supper series which consists of crispy parmesan crusted chicken cutlets topped with a creamy and zesty cucumber salsa.

Parmesan Chicken with Cucumber Salsa Recipe

cucumber

tomato (seeded and finely chopped)

red onion (minced)

Tbsp parsley (chopped)

jalapeno pepper (seeds and membrane removed, finely chopped)

dill

sour cream

lemon juice

tsp cumin

tsp kosher salt

chicken breasts (boneless and skinless)

all-purpose flour

eggs

panko

Parmesan cheese (grated)

In a small bowl combine the cucumber, tomato, red onion, parsley, and jalapeno pepper to make the salsa. Set aside.

To make the salsa sauce, combine the dill, sour cream, lemon juice, cumin, salt, and pepper in another small bowl. Mix well.

Pour the sauce over the salsa and toss to combine. Cover and refrigerate until ready to serve. The sauce may be made up to 24 hours ahead.

Creamy Cucumber Salsa Directions:

Slice each chicken breast in half horizontally to make a total of four thinner chicken breasts.

Place the sliced chicken breast between two sheets of wax paper or parchment paper and pound them with a rolling pin or meat mallet until they are 1/4 inch thick.

Combine the flour, salt, and pepper in a shallow bowl or dinner plate.

Add the eggs to a shallow bowl along with 1 tablespoon of water. Beat with a fork until they are well blended.

In a third shallow bowl or dinner plate add the panko and parmesan cheese.

Dip each chicken breast into the flour mixture and make sure to coat both sides. Then dip in the egg mixture, and finally dredge in the panko/parmesan mixture. Make sure the chicken breasts are evenly coated on both sides.

Meanwhile, heat a large skillet over medium heat and add the olive oil. When the skillet is hot, add the chicken breasts and sauté 2-3 minutes on each side and the coating is golden brown and crispy.

To serve, place a chicken breast on a plate and top with a scoop of cucumber salsa.

This Parmesan Crusted Chicken is an easy meal idea. We use pounded thin chicken breasts, coat in a delicious Parmesan coating, and then fried to make them crispy.  Add this chicken idea to your dinner this week.

Parmesan Crusted Chicken

lb Boneless Skinless Chicken Breast

Water

tsp minced Garlic

Salt

tsp Black Pepper

Shredded Parmesan Cheese

tbsp Butter

tbsp Olive Oil

Cut each breast in half and pound to about 1/2" thick.

Beat egg and water in a shallow bowl until blended.

Add garlic, salt and pepper and whisk to blend.

Place parmesan in another shallow bowl.

Dip each piece of chicken in egg mixture making sure to coat.

Allow excess egg to drip off.

Place in parmesan. Sprinkle more parmesan over top. Gently press, then turn and repeat on other side. Shake off excess. Repeat with remaining chicken.

Place butter and oil in a large skillet over high heat.

Place chicken and do not move until edges brown (so that cheese sticks to chicken, about 3 minutes).

Lightly press with spatula then turn over and again do not move until browned.

Lightly press with spatula and remove to serving plate.

You can&#39;t have enough great chicken recipes, and this quick and easy recipe uses only a few ingredients and goes in the oven in about 10 minutes. Also know as Melt in Your Mouth Chicken (MIYM), it makes a moist and delicious easy dinner.

Mayo Parmesan Chicken AKA Melt in Your Mouth Chicken

chicken breasts

mayonnaise

Parmesan cheese (grated - fresh preferred)

seasoning salt (Lawry’s)

pepper

Italian Panko bread crumbs (Very light coat)

Preheat oven to 375° convection or 400° regular oven. Trim and pat dry 3-4 skinless boneless chicken breasts. If thick, thin to 3/4 inch thick with a meat mallet.

Mix in a medium bowl 1/2 cup mayonnaise, 1/4 cup Parmesan cheese (freshly shredded or grated preferred), 3/4 teaspoon seasoning salt (I used Lawry&#39;s), 1/2 teaspoon garlic powder, and 1/4 teaspoon pepper.

Prepare a cooking sheet with aluminum foil (to help clean up) and a rack. The rack will help crispness all around. You can do without the rack, but the bottom will not be crispy. Give the rack a good spray of PAM. If you don&#39;t have a rack, they can go directly on PAM sprayed foil.

Dip the chicken in the mayonnaise Parmesan mixture. Be sure to get all surface coated. Finger use is allowed, but be sure to wash well after. Note: keep the coating light.

Lightly sprinkle with some Italian bread crumbs on both sides. You are not coating them but just adding some crispy and flavor—about 1/2 cup for four breasts

Bake until an internal temp of 165°. This will vary by oven but mostly by the size of the chicken. At 20 minutes into baking, flip the breasts with a fork.

The total cooking time of about 40 minutes for medium to large. 45 minutes for huge. Let rest for 5 to 10 minutes before serving.

This tasty parmesan chicken comes out moist and juicy and the bread crumb coating is crisp, buttery, and flavorful. This meal is almost guaranteed to please even the pickiest eaters!

Jillee’s Easy Parmesan Chicken

boneless (skinless chicken breasts)

bread crumbs*

I usually start by cutting each chicken breast in half lengthwise, but it’s just a personal preference. Feel free to keep them whole if you prefer.

Next, melt the butter in a shallow dish using your microwave.

In another shallow dish, combine the bread crumbs, Parmesan, and garlic powder. Mix until well combined.

Next, take a piece of chicken and dip it in the melted butter, then dip it in the cheese and bread crumb mixture.

Make sure to coat the chicken evenly with both the butter and the bread crumbs!

Then place the coated chicken in a 9”x13” baking pan. Continue this process until all the chicken is prepped in the baking pan.

Bake at 350° for 45 minutes, until the chicken is cooked through and the bread crumb coating is nicely browned.

Serve with rice, a salad, mashed potatoes, or whatever sounds good to you!
