Easy and delicious Mahi Mahi crusted in Parmesan herb coating and baked in the oven.&nbsp;&nbsp;

Parmesan Crusted Baked Mahi Mahi

all purpose flour

garlic powder

tbsp Parmesan cheese

salt

eggs

black pepper

bread crumbs

Parmesan cheese

tbsp parsley

Preheat the oven to 425° and line a rimmed baking sheet with parchment paper or aluminum foil.

Set three wide and shallow bowls in front of you.&nbsp;Mix  flour with salt, garlic powder, and grated Parmesan cheese in first bowl.&nbsp;Whisk eggs with salt and pepper in another bowl.&nbsp;Mix Panko bread crumbs, grated Parmesan cheese, parsley, garlic powder, and salt in a third bowl.

Coat each piece of fish in flour first, then in egg, and last in the Panko mixture. Pat the coating onto the fish firmly and lay in on the prepared baking sheet.

Bake for 18-22 minutes, depending on the thickness of the fish.

The parmesan crust is crispy, savory and wonderful. To fit the whole rack, you must use a large air fryer that is at least 5 qt. or larger. Don’t try squeezing the whole rack into a small air fryer because it’ll burn when too close to the heating element. If needed, cut the rack into smaller sections.

Air Fryer Rack of Lamb w/ Mustard Parmesan Crust

1.25 lbs. rack of lamb (, about 7-8 chops)

cheese

Dijon mustard

olive oil

Worcestershire sauce

garlic (, minced)

herbs

salt (,

black pepper (,

oil spray

Clean lamb rack

Pat dry the lamb rack. Remove silver skin from underside of ribs if needed.

Cut and oil lamb

Cut lamb rack in half if needed to fit in your air fryer. Spray the rack, including the bones, to lightly coat with oil.

Make parmesan crust

Make the parmesan crust: combine parmesan cheese, mustard, olive oil, Worcestershire sauce, garlic, chopped herb(s), salt, and pepper.

Coat lamb with parmesan crust

Coat the rack of lamb with the parmesan crust, pressing it into the lamb chops.

Place in air fryer

Place a perforated parchment sheet or perforated silicone mat in the air fryer basket/tray and spray with oil spray. Place rack of lamb bone-side down, making sure not to overlap the meat.

Air fry first side

Air Fry at 380°F for 8 minutes. A crust should start to form and be light golden.

Flip

Carefully flip, trying not to break the crust.

Finish air frying

Air Fry for another 6-10 minutes, or to your preferred doneness (for medium-rare, internal temperature should read between 120-125°F- we love this instant read thermometer).

Serve

Cut into individual lamb chops and serve warm.

The air fryer always outdoes itself with every recipe I've tried here. I love how it left the rack of lamb crispy and cooked on the outside, and tender on the inside.

This was such a great recipe. I'm adding it to my Christmas menu.

I'm in love with parmesan mustard crust in this lamb recipe. It's so darn good.
