25-Minute Homemade Pasta Carbonara

Preheat the oven to 400 (200 C) degrees and line a large tray with paper towels.

Arrange the bacon on a rimmed baking sheet. Bake for 15-20 minutes, flipping the pieces halfway through, until the bacon is deeply colored and crisp. Transfer to the tray to absorb excess fat. Chop the bacon into small pieces.

Whisk the egg yolks, whole egg, Parmesan and Pecorino cheeses, ¼ teaspoon salt and black pepper in a large mixing bowl. If you have a large pasta serving bowl, use that to mix and serve.

Bring 4-5 quarts of water to a boil in a large saucepan or pot and add 1 tablespoon salt. Add the pasta and cook according to package directions until al dente (usually about 10 minutes.) Scoop out 3/4 cup of the cooking water before draining the pasta.

Whisk ½ cup of the hot water into into the egg yolk mixture — this tempers the eggs so they won&#39;t scramble.

Immediately dump the hot pasta into the bowl, then toss it all together quickly and thoroughly, using tongs or two spoons. You can add more water if the sauce seems dry. Sprinkle the bacon and parsley over the pasta and toss to combine. Serve right away, with additional grated cheese on the side.

Pasta Carbonara

(16 oz) spaghetti

eggs

Parmesan cheese

tsp Garlic Powder

tsps salt

tbsps finely chopped fresh parsley

step 1

Cook spaghetti as directed on package for al dente pasta. Drain well, reserving 1/3 cup of cooking water; keep warm.Test Kitchen Tip: Keep pasta and reserved cooking water as warm as possible. This will help to temper the eggs, and make a smooth, creamy sauce.

Meanwhile, mix eggs, cheese, garlic powder and salt in medium bowl with wire whisk until well blended. Set aside.

Heat oil in large skillet on medium heat. Add bacon; cook 3 to 5 minutes or until bacon is crispy. Add spaghetti and toss to mix well.

Remove skillet from heat and whisk in egg mixture; stirring constantly until eggs thicken. Gradually stir in reserved warm cooking water. Garnish with parsley and additional Parmesan cheese, if desired.

Pasta Carbonara with Ricotta Cheese

water

lb. pasta (spaghetti, linguine, fettuccine)

ricotta cheese (whole fat; not skim)

Parmigiana Reggiano cheese (, fresh, grated)

salt

black pepper

tomato (, diced (as garnish); optional)

basil ((as garnish))

Shred fresh Parmigiana Reggiano cheese; set aside

Dice tomatoes (optional); set aside

Lightly beat eggs; set aside

Prep

Boil

Bring large stockpot of water to boil; add pasta; cook approximately 8-9 minutes per pound of of pasta;  while this is cooking, make ricotta mixture

Combine

In a large bowl, combine Ricotta, Parmigiana-Reggiano cheese, eggs, salt and pepper

Temper Eggs

Add 2 tablespoons of the warm pasta water to the egg/cheese mixture; combine well

Transfer

Using tongs, transfer pasta directly from boiling pot to a large skillet (on medium heat)

Pour Parmesan/Ricotta mixture to skillet; combine well by tossing with tongs

Garnish

Once pasta is well-coated with cheese mixture, plate, garnish with fresh diced tomatoes and fresh basil; garnish with additional Parmesan if desired
