When there&#039;s not much in the fridge and you have chickpeas and pasta handy in the pantry, you can have Pasta with Chickpeas in Tomato Sauce ready in 30 minutes. Delicious, comforting and healthy!

Pasta with Chickpeas in Tomato Sauce

olive oil

paprika

onion (finely diced)

garlic (minced)

oz canned chickpeas ((3 1/2 cups) drained and rinsed)

tomato passata ((tomato purée))

water (can be replaced with vegetable or chicken stock)

bay leaf

pasta (about 1/2 lb, any medium length pasta

salt and pepper (to taste)

parsley

Parmigiano cheese

In a large sauce pan heat olive oil, stir in paprika and cook until fragrant (about 30 seconds). Add onion and sauté until soft. Toss in minced garlic and cook a minute longer.

Add chickpeas and stir to coat in the onion-garlic mixture. Pour in the tomato passata, water or stock and bay leaf. Bring to a boil, then lower to a simmer and cook, stirring occasionally, for 20 minutes. Add salt and pepper to taste.

Ten minutes before the sauce is ready, bring a large pot of salted water to a boil. Cook pasta until al dente.

Drain and add to the chickpea tomato sauce. Stir to coat in the sauce. Add a ladle or two of pasta cooking water to thin out the sauce, as needed. Remove the bay leaf and discard.

Drizzle lightly with olive oil,  sprinkle with fresh chopped parsley (optional) and serve with plenty of grated Parmigiano cheese.

ONE-POT PASTA E CECI (PASTA WITH CHICKPEAS)

(960 ml) vegetable broth, plus more if needed

Tbsp olive oil,

carrots, diced

celery rib, diced

onion,

potato,

garlic, diced

rosemary,

fine salt, according

black pepper

Warm the olive oil in a large pot over medium heat. Once the oil is shimmering, add the diced onion, carrot, celery, and rosemary. Cook, stirring often, until the onion has softened and is turning translucent, about 5 minutes. Then add the garlic, and stir for 30 seconds.

Add the chickpeas, the cubed potato, and a good pinch of salt and pepper. Cook stirring frequently, about 1 minute. 

Then add vegetable broth, raise the heat and bring the mixture to a boil, then cover the pot, reduce heat and cook for 10 minutes.

Then turn the heat off, remove the rosemary.

Scoop out about 1 and 1/2 cup of the chickpeas and some broth to a blender, puree until smooth and return it to the pot. Alternatively, you might use a stick blender, or you can simply smash part of the chickpeas with a potato masher. However, be careful, the liquid is still hot

Turn the heat on, bring to a light boil, and add the dried pasta.

Reduce the heat and cook gently, stirring often, until the pasta is tender but still firm to the bite. If the soup seems too thick, gradually add water or broth and thin to desired consistency (note: the longer it sits on the stove, the thicker it will get).

Season with salt and pepper according to your taste (if you use broth, it&#x27;s important to adjust the seasoning at the end and not at the beginning, as you never really know how salty the broth is).

Serve with an extra drizzle of olive oil, freshly ground black pepper, and grated parmesan cheese if you don&#x27;t keep it vegan. Enjoy!

For the garnish: Grated Parmesan or Pecorino Romano cheese

Peel and small dice the onion. Mince the garlic. Chop the kale into bite-sized pieces.

In a large pot or Dutch oven, heat the olive oil over medium high heat. Add the onion and saute for 5 to 6 minutes until the onions are just translucent. Add the garlic and tomato paste and saute for 1 minute.

Add the vegetable broth, tomatoes and juices, chopped basil, drained and rinsed chickpeas, oregano, thyme, red pepper flakes, Parmesan rind (or grated Parmesan) and kosher salt. Bring it to a simmer, then cook 10 minutes on medium low.

Add the pasta and kale and cook until pasta is just al dente, about 8 to 10 minutes.

Taste and add fresh ground black pepper and more kosher salt to taste. Remove the Parmesan rind. If desired, garnish with torn basil leaves and Parmesan cheese shavings. The soup will continue to thicken as it cools.

In a large pot, over medium heat, warm the butter and olive oil. Stir in the onion and carrot; sauté until soft, about 5 minutes. Add in the garlic and cook for 1 minute more. Season with salt and pepper to taste.

Add the tomato paste and mix to combine.

Add in the oregano, thyme, chickpeas, pasta, and veggie broth; stir to combine.

Bring the pot to a boil, then reduce heat and simmer gently for 10 minutes until the pasta is al dente, stirring occasionally so it doesn’t stick.

Taste and add more salt and pepper if necessary.

Mix in the Parmesan cheese.

Ladle into bowls and sprinkle a little more Parmesan on top.

Place olive oil in large pot or Dutch oven. Add onions, carrots and celery and season with salt and ground black pepper. Turn heat to medium and saute the veggies for a couple of minutes.

Add the garlic, bay leaves, rosemary and oregano.

Continue to saute the veggies until they are almost soft, about five minutes. Don&#39;t let them brown.

Stir in the tomato paste and tomato puree and mix. Add paprika or red pepper flakes. Mix and bring the sauce to a boil. Lower heat and simmer five minutes.

Stir in the drained chickpeas, along with four cups mushroom stock (or water). Mix well and bring back to a boil. Add salt to taste.

Add the pasta and mix it in. Bring to a boil and let the pasta simmer in the broth until al dente (it should take about the same time as it would if you cooked the pasta separately). Stir a few times to make sure the pasta doesn&#39;t stick to the bottom, and add more water if needed.

Once the pasta has cooked, turn off the heat. The sauce will continue to thicken as it stands. Serve hot or warm with a drizzle of extra virgin olive oil and some vegan parmesan.

Hi Vaishali,love the recipes. I don't think 1 needs to be repeated in 2, here though. Also I think it should read of evoo, not or evoo. Not sure what evoo is. thanks keep the recipes coming. Very topical, I was looking at the bottle of chickpeas and wondering if I could find a tomato based sauce for them. DO you do any without onions and garlic? DO you have a good substitute for onions?
