Pasta Fagioli (Pasta and Beans) is a great tasting, hearty, vegetarian Italian pasta and bean soup, perfect for the cold, super quick and freezer friendly.

Pasta Fagioli (Pasta and Beans)

olive oil

onion

garlic (chopped)

celery (chopped)

carrot (finely chopped)

15 oz can cannellini beans

tomato sauce tomatoes

bay leaf

tbsp basil

tbsp parsley

oregano

water

kosher salt and pepper

parmesan cheese for topping (optional

In a deep pot, saute onion and garlic in olive oil over medium heat.

Blend the cup of beans with one can water in electric blender until almost smooth.

Add blended beans to pan then add the can of tomato sauce, celery, carrots, chicken broth, basil, bay leaf, parsley, oregano, salt and pepper.

Add 1 cup water and bring to a boil. Simmer, covered for 20 minutes stirring occasionally.

Add pasta and cook uncovered until pasta is al dente, according to pasta directions.

Ladle soup into bowls and top with grated cheese (extra).

I like pureeing the beans to get my picky kid to eat this, but if you prefer your beans whole, you can skip that step.

Pasta E Fagioli Soup {Olive Garden Copycat Recipe}

Tbsp olive oil, (divided)

lb beef

carrots ((about 2 medium))

celery ((about 3 stalks))

garlic, (minced (1 Tbsp))

tomato sauce

14.5 chicken broth

water, (then more as desired)

(15 oz) can diced tomatoes

sugar

basil

thyme

marjoram

Salt and black pepper

dry ditalini pasta

(15 oz) can dark red kidney beans, drained and rinsed

shredded Romano or Parmesan cheese (, for serving)

Heat 1 Tbsp olive oil in a large pot over medium high heat, crumble in ground beef and cook, stirring occasionally until cooked through. 

Drain fat from beef then transfer beef to a plate, set aside.&nbsp;Heat remaining 1 Tbsp olive oil in same pot.&nbsp;

Add onions, carrots, and celery and saute over medium-high heat until tender about 6 minutes, add garlic and saute 1 minute longer.&nbsp;

Add chicken broth, tomato sauce, water, canned tomatoes, sugar, basil, oregano, thyme, marjoram and cooked beef then season with salt and pepper to taste.&nbsp;

Bring to a boil then reduce heat to medium-low, cover with lid and allow to simmer, stirring occasionally, until veggies are soft, about 15 - 20 minutes.&nbsp;

Meanwhile prepare ditalani pasta according to directions on package, cooking to al dente.

Add cooked and drained pasta to soup* along with kidney beans and great northern beans. Thin with a little more broth or water if desired.&nbsp;

Allow to cook 1 minute longer. Stir in parsley, serve warm with grated Romano or Parmesan cheese.

Are you an absolute sucker for Olive Garden’s soup, salad, and breadsticks? Well, I fully admit that it’s my favorite thing about this popular Italian chain. Unlimited bowls of delicious soup with soft breadsticks and delicious, fresh crunchy salad? You can’t go wrong. My go-to favorite soup to order has always been the Pasta Fagioli, so I like to have a copycat Pasta Fagioli recipe in my back pocket whenever I have a soup craving and I can't make it to the restaurant chain!

How to Make It:

Heat a large dutch oven or a stockpot over medium heat.
Add in the ground beef, onion, minced garlic, carrots, and celery, seasoned with salt and pepper, and cook until no longer pink (about 5 minutes). Drain the grease into a can.
Add in the kidney beans, white beans, tomato sauce, diced tomatoes, chicken broth, oregano, and thyme leaves into the pot. Stir to combine.
Once the liquid starts to boil, add in the pasta.
Reduce the heat and cook for 10 minutes, or until the pasta is done.
Serve with chopped parsley and grated parmesan, if desired.

Turn the Instant Pot to Saute mode and heat olive oil. Add carrots, celery, and garlic. Saute for a minute.

Add potatoes, tomato sauce, cannellini beans, pasta, parsley, crushed red pepper, and vegetable broth. Mix well.

Close Instant Pot with pressure valve to sealing. Cook on Pressure Cook/Manual(Hi) for 4 mins followed by Quick Release. Add salt and pepper to taste. Stir in baby spinach and enjoy hot!

Press the "sauté" button on an electric pressure cooker and preheat on high heat. Once the insert is hot, add the olive oil and onion. Cook, stirring frequently, until the onion is softened.

Add the garlic, tomatoes, pasta, beans, thyme, chili, broth, the cheese rind, and 1 1/2 teaspoons salt. Stir together.

Close and secure the lid of the pressure cooker and cook on high for 7 minutes, with a quick release when it's finished.

Stir in the kale (it will wilt) and heavy cream if using. Taste and season with more salt if you like.

Serve in bowls, drizzled with extra-virgin olive oil and grated Parmesan cheese to taste.

Weeknight Pasta Fagioli

Heat 1 tsp of olive oil in instant pot and place on saute setting. Then add turkey,onions,  carrots, celery and Italian seasonings and saute until ground turkey is browned. About 10 min.

Add crushed tomatoes and chicken broth. Place on lid and seal vent on pressure cooker. Change setting to &#8220;Manual&#8221; and cook on high for 15 min. If using slow cooker, cook for 3-4 hours on high.

Slow release pressure cooker for 10 min. Once done cooking, remove lid and add beans to soup. Let sit for 5 min. Then serve.

If blending, add mixture to blender and blend until smooth.

celery ribs, (thinly sliced)

tomato paste

Salt and Freshly ground black pepper

(15 ounces) diced tomatoes

(8 ounces) tomato sauce

ditalini pasta, (or any other small shaped pasta)

Parmesan, (for garnish)

Freshly chopped parsley, (for garnish)

Heat 1 tablespoon olive oil in a Dutch oven or a large deep pot set over medium heat.

Add sausage and cook, breaking up with a wooden spoon; cook for about 5 minutes, or until cooked through.

Transfer cooked sausage to a plate and set aside.

Heat remaining tablespoon of olive oil in the same pot.

Stir in the onions, celery, and carrots; cook for 5 minutes.

Add garlic and cook for 20 seconds, or until fragrant.

Stir in the tomato paste.

Season with salt and pepper.

Add in beans, diced tomatoes, tomato sauce, and chicken broth.

Stir in the sugar, rosemary, basil, oregano, thyme, and previously cooked sausage; increase heat and bring to a boil.

Once boiling, stir in the pasta and reduce heat to medium.

Cook for 8 minutes, or until pasta is al dente.

Taste soup for seasonings and adjust accordingly.

Remove from heat.

Ladle into soup bowls and garnish with freshly grated parmesan and parsley.

Add the olive oil, onions, carrots, celery, garlic, salt and pepper.  Sauce over medium-high heat uncovered until the vegetables are tender (approximately 5-7 minutes).

Then add in the chicken broth, tomato sauce, diced tomatoes, canned beans, Italian seasoning and thyme.

Bring to a boil, then reduce heat to medium-low, cover with a lid and allow to simmer until all the veggies are soft (approximately 10-12 minutes).

Then stir in the uncooked pasta and cook uncovered for 9-12 minutes until the pasta is cooked to the tenderness that you desire.

Stir in the fresh parsley and serve warm topped with the parmesan cheese.  Enjoy!
