Ricetta della pastiera classica napoletana.

500 grammi di farina

250 grammi di burro

cucchiaino e mezzo di estratto di fiori d'arancio

Buccia grattata di 1 limone

200 grammi di zucchero

uova intere

pizzico di cannella

550 grammi di grano cotto

grammi di ricotta di pecora

250 grammi di zucchero

grammi di canditi

tuorli

una fialetta e mezza di fiori d'arancio

un pizzico di cannella

220 ml di latte

La buccia grattata di 1 limone

Preparare la frolla mescolando in una ciotola (con le mani o con l'impastatrice) tutti gli ingredienti avendo cura di spezzettare il burro quando è ancora freddo. Una volta pronta metterla in frigorifero e lasciarla compattare fin quando il resto non sarà pronto.

Bollire il grano cotto nel latte aggiungendo la buccia grattata di 1 limone e mescolare per bene fin quando il composto non risulta ben denso. Versarlo in una ciotola in alluminio o in una ciotola in ceramica e lasciarlo riposare/intiepidire.

Mescolare per bene la ricotta scolata, i canditi, lo zucchero, i fiori d'arancio, la cannella e i quattro tuorli fino a formare una crema densa e corposa.

Accendere il forno a 200°C. Tirare fuori la frolla dal frigorifero e stenderla ad un'altezza di circa 1.5 cm foderando la teglia in modo da arrivare fino al bordo. Mescolare composto alla ricotta e composto al grano e versare tutto sulla frolla stesa. Dalla frolla rimasta ricavare delle strisce e posizionarle sulla superficie della pastiera sigillandole per bene ai bordi.

Infornare per circa 1 ora e mezza a 180° (la pastiera è cotta quando è scura [non bruciata] in superficie!) quindi spegnere il forno e lasciare la teglia all'interno per farla raffreddare.

Tirarla fuori una volta fredda e possibilmente aspettare 24 ore prima di mangiarla.

Traditional Pastiera Napoletana Recipe for Easter

plain flour

unsalted butter

orange blossom extract

lemon

sugar

eggs

cinnamon

whole wheat berries

ricotta cheese

candied peels

oz orange flower water

220 ml of milk

In a food processor combine the dry ingredients and pulse a few times. 

Add the cut-up butter and pulse until the mixture resembles coarse ground meal. 

Add the slightly beaten eggs and pulse until the dough starts coming together. 

On a lightly floured wooden board, turn out the dough and form into a smooth ball.

Start making the filling by boiling the cooked wheat in milk together with the grated zest of 1 lemon; mix thoroughly until the mixture is very thick. Pour into a glass bowl and let it cool for a couple of hours.

After two hours, mix the drained ricotta cheese, candied peels, sugar, orange blossom, cinnamon and four egg yolks until a thick cream will form.

Roll out the dough to fit your pie plate. The thickness should be about 1/8 of an inch. Carefully fold over and fit into your pie pan and make sure you cover also the edges. Put aside some crust.

Decorate the surface with strips of dough and brush tops of dough strips with milk.

Bake for about 1 hour and a half at 180° (your pastiera will be cooked when it will be dark [unburned] on the surface!). 

Turn off the oven and leave to cool in the pan. 

Take it out when cold and if wait 24 hours before eating.
