Pastrami maken is geen snel klusje. Het vlees moet namelijk een dag of vijf zouten. Maar verder is pastrami niet moeilijk om te maken, en het resultaat is heerlijk. Heb je toevallig een rookoven staan, dan is dit een briljant excuus om die eens goed te gebruiken!

Pastrami

water

zout

37,5 gram pekelzout

150 gram witte suiker

45 gram bruine basterdsuiker

ml honing

el pekelkruiden voor vlees*

tenen knoflook (geperst)

kg runderborst (brisket)

gemalen koriander

el versgemalen zwarte peper

el mild (!) gerookte paprikapoeder

Maak eerst het pekelwater. Vul een grote soeppan met 1,5 liter water en voeg de zout en pekelzout, suiker en bruine suiker, honing, pekelkruiden en knoflook eraan toe. Breng het water aan de kook, terwijl je goed in de pan blijft roeren om alles op te laten lossen.  Haal het water direct van het gas op het moment dat het kookt.

Giet 1,5 liter koud water in een grote kom, en giet het pekelwater erbij. Zet het in de koelkast zodat het helemaal af kan koelen. Neem een grote kom, want het vlees moet er ook nog bij.

Snijd zoveel mogelijk vet van het stuk runderborst. Leg het vervolgens in de kom met het pekelwater. Zorg dat het geheel onder water ligt, en zet het in de koelkast.

Laat het vlees 5 dagen zouten in de koelkast. Draai het dagelijks om, en roer het pekelwater even door. Zorg ervoor dat het vlees niet tegen de randen van de kom ligt.

Als het vlees klaar is met zouten kan het in de oven. Daarvoor moet je het eerst nog insmeren met de ‘rub’ van koriander, peper en paprikapoeder. Giet het pekelwater weg, en leg het stuk runderborst op een braadpan met rooster. Smeer het aan beide kanten in met de kruidenrub en laat het twee uur staan, zodat de smaken er goed in kunnen trekken.

Verwarm de oven op 150 graden Celsius. Dek het vlees goed af met aluminiumfolie, en zet het ongeveer 3 à 4 uur in de oven. Een goede manier om te kijken of het vlees klaar is, is door te meten: het moet van binnen 95 graden Celsius zijn.

Als je pastrami uit de oven komt, is hij eindelijk klaar om te eten! Snijd het vlees in zo dun mogelijke plakken om het te serveren. Je kunt het ongeveer een week bewaren in de koelkast, als je het goed in plastic verpakt.Wil je lekker veel pastrami maken? Je kunt de ingrediënten uit dit recept makkelijk verdubbelen. Bedenk dan nog wel eens dat het maar een week houdbaar is.

Easy Pastrami Sandwich Recipe

½ lb pastrami (sliced)

coleslaw

Swiss cheese

Dijon mustard

Toast the bread on a large skillet or grill pan.

Spread mustard on top of the bread. Set aside.

In a large skillet over medium heat, add pastrami and cook for 2-3 minutes each side or until heated through.

Spread mustard evenly on top of one piece of the bread.

Add pastrami and chees.

Add coleslaw on top, and then top with another piece of bread. Repeat with the rest of the bread and fillings.

Cut the sandwiches in half. Serve and enjoy!

grapeseed oil

onion (, thinly sliced)

350 grams/ 12 oz white cabbage

(300 milliliters) cider vinegar

(85 ml) water

salt

tsp sugar

tsp caraway seeds (, optional (Note 2))

tbsp onion (, finely minced)

tbsp dill pickle/gherkin (, finely minced)

mayonnaise

sour cream ((can sub more mayo))

2.5 tbsp sriracha, spicy ketchup

horseradish ((jar),

Worcestershire sauce

tsp sweet paprika

Mix ingredients, refrigerate 20 minutes+ (keeps 2 weeks).

Russian Dressing:

Dissolve sugar and salt in vinegar.

Heat oil in a large pot over medium heat. Add onion and cook for 2 minutes to soften, don't let it brown.

Add cabbage, vinegar, water and caraway seeds, give it a toss.

Cover, cook on low for 15 minutes, mixing once at 10 minutes.

Transfer to container (including liquid), cool until just warm. Keeps 2 weeks in the fridge.

Quick Sauerkraut:

Thinly slice still cold pastrami (Note 1). Place in a container with a couple of tablespoons of pastrami liquid (reserved from cooking, see pastrami recipe).

Microwave to warm through (or use other method of choice etc cover with foil and place in oven).

Prepare Pastrami:

Preheat grill/broiler to medium high with shelf about 25cm/10" from heat source.

Toast bread. Spread with butter, then 1 tbsp Russian Dressing on each piece.

Pick up pastrami and let excess juices drip away, then place on bread.

Do same for sauerkraut, pile onto pastrami, then top with cheese.

Also place cheese on other slice of bread (ie with just Russian Dressing).

Place under grill until cheese is just melted. Sandwich together and devour while hot!

Assemble Reuben:

French Dip Sandwiches are easier to make than you think. Be sure to try the au jus dipping sauce to go with them.

French Dip Pastrami Sandwich Recipe

lb sliced pastrami beef deli meat

hoagie rolls

provolone cheese mozzarella cheese (shredded)

lb mushrooms,

Salt & Black Pepper (to taste)

Beef Broth

Saute Mushrooms until golden and soft. Sprinkle with garlic salt and pepper to taste. Remove mushrooms from pan and set aside. In the same skillet (without cleaning it), add 1 1/2 cups beef broth and boil for a few minutes to reduce slightly. Season broth to taste (you want it to be flavorful for use as a dip) then remove from heat - this broth is your &quot;au jus&quot; dipping sauce.

Heat a large pan over medium heat. Add a small pat of butter and when butter is done sizzling, Saute the cut side of the rolls just until golden. Divide the pastrami meat evenly among the four sandwiches. Top with cheese and mushrooms.

Bake at 450 for 4-5 minutes or until cheese melts and meat is hot.

Serve each sandwich with an individual ramekin of AuJus – Dip with every bite.
