These Peach Crumble Bars use the same buttery crumb mixture for the crust and topping and are filled with an easy peach filling!

Peach Crumble Bars

(375 grams) all-purpose flour

(100 grams) brown sugar

(100 grams) granulated sugar

baking powder

cinnamon

nutmeg

salt

(230 grams) cold butter (, cubed)

(800 grams) chopped peaches

(27 grams) cornstarch

lemon juice

Preheat oven to 350°F. Line a 9x13-inch pan with parchment paper or aluminum foil, leaving some overhang for easy removal, and set aside.

In a large mixing bowl, whisk together the flour, brown sugar, granulated sugar, baking powder, cinnamon, nutmeg, and salt.

Add the cold cubed butter and cut it in with a pastry cutter until the mixture is crumbly and starts to come together.

Add the egg and stir it in until fully combined (you may also use the pastry cutter to help blend it in).

Press half of the mixture in the prepared baking pan and place the bowl with the other half in the refrigerator.

Bake the crust at 350°F for 15 minutes, then set aside to cool for 5 minutes before adding the peach filling.

For the crumb crust and topping:

Combine the chopped peaches, sugar, cornstarch, lemon juice, and cinnamon in a large bowl. Mix until the peaches are fully coated.

Spoon the peach filling on top of the baked crust, using a slotted spoon to leave as much excess juice as possible in the bowl. Spread it around into one even layer.

Remove the remaining crumb mixture from the refrigerator and sprinkle it on top of the peach filling.

Bake at 350°F for 40-50 minutes or until the top is set and lightly browned and the peach filling is bubbling around the edges.

Remove from the oven and transfer to a wire rack to cool completely. Once cooled, lift the bars out of the pan using the overhang from the parchment paper or foil, slice into bars, and enjoy!

Peach Pie Bars

vanilla extract

peach pie filling (21 ounce)

Tablespoons milk

Preheat oven to 350 degrees F. Line a 13x9 baking dish with parchment paper, set aside.

In large mixing bowl, beat butter with sugar, flour, and vanilla. Mixture will resemble crumbs.

Remove 1 cup of the crumbs, and pour the remaining crumbs into the prepared 13x9 baking dish. Press them down firmly, and evenly, with palm of hand or bottom of cup.

In a small bowl, mix peach pie filling with cinnamon, break up the peach slices slightly. Pour over crust in pan.

Sprinkle the remaining 1 cup of crumbs over the top of the pie filling.

Bake for about 30 minutes until edges are lightly browned. Remove from oven and cool while making the glaze.

For the glaze, whisk together the powdered sugar, cinnamon, and milk. Drizzle over the warm pie bars and allow to cool completely. Then chill bars for at least 2 hours before serving.

How can I use the recipe using fresh peaches instead of pie filling?

These were wonderful. So easy to do. My husband has severe food allergies so I need to convert recipes for his foods. I used the plant based butter and the dough came out rather oily because the 'butter' is not made from milk fat more like margarine. However, added about another 1/4 cup of flour to make more crumbly texture and these came out delicious. Super sweet but great. Thank you for such an simple recipe. Also A lot easier than making his other favorite, turnovers. That's a win for me!!!

The crust was very sweet and needs a hint of salt to offset it. Next time I will try using salted instead of unsalted butter. Or add a little salt to the crust. Otherwise very tasty.
