BLT and Potato Chip Lobster Rolls with Peach Salsa.

lobster tails OR 1-2 whole lobsters (if you are daring)

butter (divided)

olive oil based mayo (or 2 tablespoons plain greek yogurt)

lemon juice

sweet thai chili sauce

chipotle chili adobo

basil (chopped)

New England style split top hot dog buns or brioche buns

leafs butter lettuce

bacon

cherry tomatoes (halved)

chives + potato chips (for topping)

peaches (chopped)

Jalapeño (seeds removed + chopped)

Bring a large pot of salted water to a boil. Once boiling, add the lobster and boil until the lobster shells turn bright red, about 5 minutes (but this will depend on the size of your lobster). Once the tails turn red, remove them from the water. Allow to cool before removing the meat from the shells.

Meanwhile, add 2 tablespoons butter to a heavy-bottomed sauce pan and melt over medium heat until just browned. Butter will melt, foam, and froth, and then begin to brown along the bottom. Whisk the browned butter bits off of the bottom of the pan and set aside to cool.

Add the mayo, lemon juice, sweet thai chili sauce, chipotle chili + a pinch of salt and pepper to a medium sized bowl. Stir in the cooled brown butter and basil, whisk until smooth and combined.

Once the lobster is cool enough to handle, remove the meat from the shells and dice. Add the lobster meat to the mayo mixture and toss well.

Add the remaining butter to a skillet and melt over medium heat. Add the hot dog buns and toast on both sides until lightly golden.

Fill the buns with one slice of lettuce and 1-2 pieces bacon. Fill with the lobster mixture. Top with potato chips, chives, tomatoes and the peach salsa (recipe below). EAT!

In a bowl combine the peaches, grilled corn, jalapeño, basil and lemon juice. Toss well and serve over or beside the lobster rolls.

Peach Salsa

The peaches were delicious in this salsa. I like that peach salsa is a little less acidic than a regular tomato salsa. Not only is it really good as an appetizer with tortilla chips, it's also really good as a topping for fish or pork; who would have thought? ;)

Peach Salsa Recipe

lb tomatoes (diced)

bell pepper (4 oz, seeded and finely diced)

jalapenos (seeded and finely diced)

onion (finely diced)

lbs peaches (diced)

cilantro (chopped)

Tbsp lime juice

salt (or

tsp black pepper

Chop tomatoes and transfer them to a large bowl.

Finely chop seeded bell pepper and jalapeños. Finely chop onion and transfer all your veggies to the bowl.

Dice the peaches. I liked the slightly larger dice for peaches to give them more of the center stage in this salsa. No need to peel them. You won't notice the peels and the color is prettier with the peel on. Transfer peaches to your bowl.

Add 1/2 bunch chopped cilantro, 2 Tbsp lime juice, 1 1/2 tsp salt and 1/4 tsp pepper. Add more salt and pepper to taste if desired. Fold everything together until well mixed and enjoy!

Grilled Pineapple Salsa

fresh pineapple, peeled, cored, and chopped into 1" pieces

Extra-virgin olive oil,

jalapeño, minced

Best when fresh. Leftovers will keep in a sealed container in the refrigerator for up to 3 days. Not freezer friendly.

Chipotle Peach Salsa

Dice the peaches into small pieces (peeling is not necessary). Finely dice the onion, mince the garlic, grate the ginger, mince the chipotle peppers, roughly chop the cilantro, and squeeze the juice from the lime.

Add the peaches, onion, garlic, and ginger to a bowl. Add one of the minced chipotle peppers, 1 Tbsp lime juice, and 1/4 tsp salt to begin with. Stir the ingredients to combine. Taste the salsa and adjust the salt, lime, or chipotle to your liking (I used 2 chipotle peppers, 2 Tbsp lime juice, and ½ tsp salt total).

Serve immediately or refrigerate until ready to eat.

Chipotle Fish Tacos with Peach Salsa

x six-inch tortillas (corn-flour mix) Grilled

Lime and cilantro

Optional garnishes: grilled scallions, avocado, chipotle mayo, pickled onions

tablespoon adobo sauce

tablespoon olive oil

coriander

cumin

teaspoon kosher salt

black pepper

diced, just-ripe peaches (about 3-4 peaches)

lime juice,

tsp sugar

Make the marinade

In a food processor, blend all the marinade ingredients into a fine paste. Rub fish (or portos or tofu) generously with marinade and let marinate at least 20 minutes, or overnight in the fridge. (You could also freeze fish in the marinade in a ziplock bag and save for later or take it camping with you).

Make the Peach Salsa: 

Very gently, rub the peaches with a towel to remove fuzz, keeping the skin intact. Dice and place in medium bowl. Half and seed the habanero, and mince it as small as possible. Sprinkle only 1 teaspoon of habanero, over the peaches (about 1/3 of the habanero). You can always add more, so start conservatively. Add the rest of the ingredients, and gently fold them together. Obviously you want to spread the habanero evenly through the salsa, but at the same time, try not to over mix. Refrigerate.

Grill: Preheat grill to med-high, and grease the grates well. Place fish using a thin metal spatula.  After a few minutes and grill marks appear, turn over. After 2-3 minutes, move to a cooler spot, or turn heat down to medium-low, cover grill and finish cooking until its cooked to your desired done-ness. You could also finish in the oven. Give fish a good squeeze of lime, and taste for salt, adding if necessary.

Give the tortillas a quick sear on the grill.

Assemble and Serve

Either assemble the tacos by placing the fish in the tortillas and topping with peach salsa. Feel free to add avocado, chipotle mayo or grilled scallions. Skewer to keep closed. Or serve family style on a platter with stacked tortillas wrapped up in a towel, extra lime and cilantro.

I used strips of Halibut and pan seared…very flavorful! Served with the peach salsa, Mexican Slaw, and Cilantro lime rice.

This is a great recipe. I prepared it using cod which is what we had available. After marinating the fish, I pan seared it briefly since we aren't able to grill it. The peach salsa was fabulous. I used jalapenos which is again what we had available, plus my husband is not a fan of overly spicy food. We did use avacados on our tacos. Do try these--a wonderful summer supper!

To make the peach salsa combine all ingredients in a bowl, cover and refrigerate for at least 2 hours before serving.

Brush both sides of the salmon fillets with olive oil, sprinkle with the ground cumin and some salt and pepper.Pre-heat the grill to medium heat and brush the cooking grates with oil.Lay the salmon skin side up (flesh side down) on the grill.  Depending on the thickness of the salmon, grill for 3-4 minutes on each side or until done. Serve immediately topped with some peach salsa.

IF YOU DON'T HAVE A GRILL: This is also wonderful pan-fried. Just follow the same instructions of heating the pan over medium-high heat, adding a little oil, and frying each side for 3-4 minutes.
