Keto peanut butter chicken is a Thai-inspired dish of perfectly tender chicken cooked in a creamy peanut butter curry sauce.

Keto Peanut Butter Chicken

Boneless (Skinless Chicken thighs,

Soy Sauce (divided)

Red bell pepper (diced)

Garlic (finely minced)

ginger

Onion (finely minced)

Red curry paste

Chicken broth

Combine the ground cumin and coriander in a small bowl, mixing together well.

Heat a large skillet over medium high heat.

Add the cubed chicken thighs to the skillet and sprinkle 1 teaspoon of spice mix and 1.5 tablespoons of soy sauce over the chicken.

Cook chicken for 5 minutes then add the finely minced garlic and diced red bell pepper continue to stir and cook for 5 more minutes, or until the chicken is cooked through. Remove from pan and set aside.

Return  the skillet to the stove top continuing to heat over medium heat.

Add the natural peanut butter, red curry paste, remaining 1 teaspoon of spice mix, 1.5 tablespoons of soy sauce, and chicken stock to the pan and stir together.

Add the chicken, onion, and bell pepper to the sauce and continue to cook for 5-10 minutes. Until the sauce thickens and coats the chicken well.

Remove from the heat and add the lime juice and chopped cilantro. Stir it into the dish and serve immediately.

Peanut Butter Curry

red onion (small, diced)

spinach (or chopped fresh herbs)

lime (juiced)

curry powder

tbsp garam masala

paprika

crushed tomatoes (15 oz)

chickpeas (15 oz, drained and rinsed)

coconut milk (15 oz)

In a pan over medium heat, add the red onion and a tablespoon of water or olive oil. Saute until fragrant, approximately 3 minutes.

Add the garlic and ginger along with the curry spices and bell pepper. Saute for a couple of more minutes, until the spices are toasted.

Add the peanut butter, crushed tomatoes and chickpeas, and stir, until the peanut butter is melted and the spices have mixed with the crushed tomatoes. Add in the coconut milk and stir.

Finish with a handful of fresh herbs or spinach and a squeeze of lime. Enjoy with rice or naan, as desired.

I love anything with sweet potatoes and my kids love anything with peanut butter, so this dish is what we call a win-win. Their bowls are definitely more rice-heavy than mine, but I’m okay with that. It’s all about balance.

Vegan Sweet Potato Peanut Butter Curry

(23 g) coconut oil

onion

garlic (minced)

(45-60 g) Thai red curry paste

potatoes

tomatoes

(235 ml) low-sodium vegetable broth

salt (divided)

black pepper

(65 g) smooth organic natural peanut butter

(120 ml) lite coconut milk

(2 g) chopped cilantro

lime

(474 g) cooked jasmine rice (or rice of choice)

(36 g) chopped peanuts (for garnish)

Heat the coconut oil in a pot or large skillet over medium heat. Add the onion and sauté for 5 to 6 minutes until soft and translucent. Add the garlic and red curry paste and stir until fully incorporated with the onions.

Add the sweet potatoes, tomatoes, vegetable broth, 1 teaspoon of salt, and pepper. Increase the heat to high and bring to a boil and then reduce the heat to medium-low. Cover and simmer for 20 to 30 minutes until the sweet potatoes are fork tender.

Meanwhile, in a small cup or bowl, whisk together the peanut butter, coconut milk, and remaining 1 of teaspoon of salt. Pour into the skillet with the sweet potatoes and stir to combine.

Remove from the heat. Add the cilantro and lime juice. Serve with the cooked rice and garnish with the chopped peanuts.
