soy sauce

tbsp maple syrup ((or honey if that's fine with you))

tbsp vinegar ((malt

½ thumb ginger, fresh ((chopped or grated, dried is fine too))

garlic ((chopped, dried is fine too))

water

peanuts ((roasted))

cilantro/coriander, fresh ((for garnish))

lime ((for garnish))

Get the pasta cooking away.

Rinse, then chop or rip the salad, peel and grate the carrots and chuck in large bowl.

Mix the peanut butter, soy sauce, honey and vinegar together well in a small bowl.

Add the ginger and garlic.

Add a spot of water to thin the sauce (just a little!) and stir well.

Roughly chop the peanuts. Then roast them on medium heat until lightly brown. No oil necessary!

Drain the pasta and throw in with salad.

Add the sauce, mix up and voilà! Serve with lime and coriander/cilantro.

Ingredients for 2 servings:
* Small Salad Mix, eg.: Carrot, red cabbage, iceberg
* 200g pasta (ideally whole grain for high fiber)
* Peanuts
 
Dressing:
* 2 tbsp honey
* 2 tbsp soy sauce
* 2 tbsp white vinegar
* 2 big tbsp peanut butter
* 1 small tbsp garlic (or one fresh garlic clove)
* 1 small tbsp ginger (or fresh)
* A little bit of water
 
Decoration:
* Coriander (optional)
* Lime (optional)
 
Directions:
* Cook spaghetti
* When done, mix with the salad
* Put all the ingredients for the dressing in one bowl, stir until creamy. Add a little water
* Top the dressing with the noodle salad mix. Add peanuts
* Add lime and coriander
* Done
