Sweet and nutty pecan snowball cookies (Russian tea cakes or Mexican wedding cookies) are little melt-in-your-mouth balls of buttery shortbread with nuts.

Pecan Snowball Cookies

butter,

Cream the butter and sugar together using a stand mixer or hand mixer on medium speed until light and fluffy, about 2 minutes.

Add vanilla and beat on medium until incorporated. Gradually add the flour and beat on low speed until combined. Add pecans and beat until incorporated. Turn the mixer to high speed and beat for 2 minutes until dough becomes more breadcrumb like and less dry (You should be able to easily shape the dough into a ball using your hands).

Line two half sheet baking pans with parchment paper or a silicone baking mat. Scoop out a tablespoon of dough and roll into a 1-inch ball with your hands and place an inch apart on the baking sheet. Once the baking sheet is full, transfer to the refrigerator and chill for one hour.

Preheat oven to 350 F. Bake the cookies for 15-18 minutes, until they are golden brown on the bottom edges.

Allow cookies to cool on the baking sheet for 5 minutes, then roll them in a bowl of confectioners' sugar while still warm, until completely coated. Transfer the cookies to a wire cooling rack to cool completely. The sugar at this stage will melt and be slightly sticky. Roll them again in confectioners' sugar once completely cooled.

This snowball cookie recipe is a Christmas tradition and my favorite cookie! These melt-in-your-mouth buttery pecan shortbread cookies are baked to perfection and rolled in powdered sugar.

Roll the dough into one-inch balls using a 1-tablespoon scoop. Place on parchment-covered baking sheets a few inches apart. Bake for 8-10 minutes or until very lightly browned. Do not over-bake

Remove them from the oven and allow them to cool just enough to handle them. Pour 1 cup powdered sugar into a medium bowl. Gently roll the cookies in the powdered sugar. Use a fork to scoop under each cookie and gently shake to remove excess powdered sugar. Place on cooling racks. Once completely cooled, roll in the powdered sugar again.

It sounds delicious minus the Unwrapped Hershey Kiss, oops! Lol I’m going to try these with AP GF flour

I took the liberty and exchanged for a low carb version, using Lakanto powdered substitute, unsweetened coconut and almond flour.  They are wonderful!  Just thought others may want that option, nothing wrong with your recipe, classic!

this is one of those recipes that's been in my family since before i was born in 1970. my mom makes them every year and they're one of the first cookie to be totally eaten first. i also make them, but i use an eighth teaspoon of almond extract along with the vanilla and use finely chopped walnuts. Buttery Pecan Snowball Cookies

Buttery Pecan Snowball Cookies are beautiful, delicate and full of rich, buttery pecan flavor. Dusted in powdered sugar, they are such a great holiday treat and one of the easiest cookies you can make. Your cookie platter will not be complete without these melt-in-your-mouth cookies!

Easy Buttery Pecan Snowball Cookies (Mexican Wedding Cookies)

butter

powdered/confectioner’s/10x sugar

tsp vanilla extract

flour ((sifted))

powdered/confectioner’s/10x sugar (or as needed for coating the cookies)

Place a rack in the center of the oven and preheat oven to 350℉. Prep and gather all ingredients.

Chop the nuts by pulsing them in a food processor if you have not purchased them pre-chopped. The nuts need to be chopped finely and should be in very small pieces for nutty bits throughout the cookies.

Lightly grease a cookie sheet or sheet pan with butter. Alternatively, line it with parchment paper or a silicone baking mat.

Place the butter and sugar in a mixing bowl and cream them together using a paddle attachment until they are well-combined. (You can also use a hand blender.)

Add the vanilla extract, then mix in the flour and salt and blend well. Next, stir in the chopped nuts on low until incorporated, scraping down the sides of the bowl as needed.

Transfer the batter to a bowl and chill it in the refrigerator, covered with plastic wrap, for at least two hours and up to 12 hours.

When ready to bake, remove the batter from the refrigerator. Scoop and shape the cookie dough into small round balls (about 1” diameter each), pressing the dough together in your hands. The dough is quite crumbly so you will need to press the dough into balls to hold a round shape instead of just rolling them between your palms as in forming a meatball. Place the formed balls onto the greased or parchment-lined sheet pan or cookie sheet about ½” apart. As there is no baking soda or powder in the batter, the cookies will not expand or rise while baking, so they can be placed close to each other on the pan.

Spread out 1 to 2 cups powdered sugar on a sheet pan so that is it ready to be used to coat the hot cookies.

Transfer the pan of raw cookies to the middle rack in a 350℉ preheated oven for about 15 minutes or until they are lightly browned.

Roll cookies in powdered sugar: As soon as the cookies are removed from the oven, carefully pour them into the powdered sugar in the sheet pan and shake the pan back and forth so that they become coated in the sugar. Use a spoon or a spatula to help this process along. The cookies are very hot, so be careful if you try to use your hands for this! Be sure that the cookies get coated completely in the powdered sugar. Add more sugar as needed. Transfer the sugar-coated cookies back to the baking sheet.

Allow cookies to cool completely, then roll them again in powdered sugar before serving or storing. Remove excess powdered sugar, then store cookies in a cookie tin. They will stay fresh for about one week at room temperature, if they are around that long!

These Pecan Snowball Cookies have just 7 ingredients that can be found in most pantries and the perfect nutty flavor for the holidays.

Preheat the oven to 375 degrees F. Line a cookie sheet with parchment paper.

In a large bowl, add the butter and vanilla extract. Using a hand mixer, beat on medium speed until creamy.

Add the flour, pecans, sugar, and salt to the bowl. Beat until the flour is well combined and a dough forms. Scrape down the sides of the bowl and work in any remaining bits.

Cover the bowl with plastic wrap and chill the dough in the fridge for 30 minutes or until it’s workable.

Using a 1 tablespoon cookie scoop, scoop cookie dough and roll into balls.

Place on the parchment paper lined cookie sheet about 1 inch apart.

Place in the preheated oven and bake for 15 to 18 minutes until the top of the cookie is dull and pale in color. It shouldn’t be brown though.

Let the cookies cool on the cookie sheet for 5 minutes before transferring to a wire rack or paper towel to continue to cool until they can be handled.

While they’re still warm, roll in a small bowl of powdered sugar until completely coated.

Place back on the wire rack or paper towel to cool completely.

Once the cookies are cooled completely, roll again in the bowl of powdered sugar until completely coated.

Store in an airtight container at room temperature.
